The only thing is that I worry about ds arriving at school with egg protein on his hands. If he has anything with egg or nuts I try to remember a wipe so that he can get those proteins off.

Love this little appliance!  I put spinach on my sandwiches - the boys like Canadian bacon or sausage patty.
We do a lot of b'fast burritos
When I make pancakes/waffles/crepes we always make extra and freeze them for weekdays

With school starting tomorrow and me working away from home with a long commute for the first time in years, I want to make some freezer breakfast meals that DS can nuke.  I want to do this today.  I should have been looking ahead at recipes.  I did have DH freeze some muffins he made two weeks ago, but I think we've gone through them.

Breakfast Bowls
I don't think this will work for DS (a vegetarian verson I mean), because I don't think he will sit and eat breakfast.  I know I won't.  But it's good to remember this anyway. What I assume is that I can make these into burritos, since this is a normal burrito for us (though I never add potatoes to them)

I generally just eat dinner leftovers for breakfast, but do make a lot of egg mcmuffin sandwiches for DH and DSD.  I wrap them in foil and stick them in the fridge, then they throw them in the oven at 350 when they get up and they are ready to go in 20 minutes to a half hour. 

I cook my eggs for them in a muffin top/whoopie pie pan - just spray with non stick, crack the eggs in, season, and bake in the oven until done.  I usually puncture the yolk with a knife so that they will spread just a bit so that the resulting egg patty is more flat.

I mix them up and make non-traditional ones depending upon what is on hand.  Last week we had seared steak, caramelized onions and provolone cheese on the egg mcmuffins.  This week is leftover corned beef and swiss.  Next week is either going to be pizza, with pepperoni, sauce, and mozzarella, or chicken and spinach with pesto and parm/mozzarella.

This is not a real recipe, but we really like the pumpkin muffins that are made with spice cake mix and canned pumpkin.

That is all that is in it.  Mix a box of safe spice cake mix with a can of pumpkin puree.  I use the stand mixer - it is very thick and sticky.  I cook as mini muffins - 15 minutes at 350.  Spray the pan with non-stick well.

As requested:

Pancake Muffins


2 cups any Pancake Mix (I use Bisquick Heart Healthy)
2/3 cup of milk or any milk substitute (I’ve used coconut and almond milk)
2 eggs
½ cup maple syrup
mix ins

•   Preheat oven 350 degrees
•   Mix ingredients & fill cupcake liners 2/3 full
•   Top with about 1 tbs mix ins & pat lightly
•   Bake 14 – 15 min, until toothpick comes out clean

I no longer do this topping method. 

I divide the batter in bowls and actually mix the ingredients in.  Fruits and nut ingredients, I will toss with flour so they don’t sink to the bottom.  Apples I coated in cinnamon sugar instead.

Mix in ideas

Sausage or bacon or pancetta & cheese
Chocolate chips
Berries
Apples with cinnamon sugar
Bananas
Nuts
Cranberries
Pears with spices
