French toast for ds.  he has state testing, so we have to feed them on these days, or so the note says, lol.  Cuz, we never feed them otherwise, you know.  I do try to be sure he has something more hearty with fat and protein.  so, French toast, cooked in butter.  Yum.

I should try french toast. I bet I could make it so it could be eaten on the go.

Today--hard boiled egg and Nutrigrain bar. We had to be at school by 6:30 and I really had to shower. So the Nutrigrain bar. :-)

I bet you could find a baked French Toast recipe to make in muffin cups, in the paper liners.  grab and go.  I slice it into sticks and ds dips it in maple syrup.  But that is a bit messy.  or, do a plain French toast, no cinnamon or vanilla, and put a slice of cheese and tomato in it for a sandwich.

Crepes for ds this am.  I actually enjoyed one for myself as well.  Still had standardized testing today.  Two more days of science next week.

My breakfast today. Scrambled Egg beaters with Mexican cheese blend, topped with Newman's black bean salsa.  I discovered that salsa this week and have pretty much had a whole jar by myself!  It is yummy and only 20 calories for 2T.

It looks so huge in the photo, but it is a sandwich plate.  I like a high protein breakfast.  Holds my hunger off well for the morning.

I always do some sort of baked oatmeal...since it's just me I'll do up a 8x8 pan and then cut up into 6 pieces and freeze. I'll have 3-5 different varieties in the freezer at any given time. Or I'll do them in muffin tins.  Blueberry/maple, strawberry, chocolate chip (just a few minis!), banana coconut, pumpkin, apple.

Easy breezy - take out the night before and put in a container and grab on the way out the door for work. Nuke at work. Sometimes I'll add a little milk, but usually it's "as is" and very moist, high fiber, low fat, yumminess.

A few Banquet turkey breakfast sausages and a leftover slice of cheese pizza we had in the freezer.  And, had it late, so more if my brunch.
