making elderberry iced tea right now - need an immune boost for sure!

made pot roast this week - really good

want to do yogurt again - may do that when the tea is done

oh but I pulled some pork out of freezer so I may do that - we didn' tlike the last two batches of this pork so not sure if it's the meat or if I didn't cook it long enough

my kitten is crazied.....keeps bringing me her pipe cleaner to throw for her - and she's dunked it in the water dish so now we are wet.

Hibiscus drink in the pot tonight

the elderberry tea recipe needs work - it was a little = um thick - like opaque - but totally drinkable....by me at least  :)

also did chicken breast - like the chili lime recipe - except I just threw in what I had on hand and they were very good - have tons of shredded tasty chicken for burritos and quesadillas   YUM

pack of frozen Costco  hot dogs - I was able to break them up and separate them a bit

3 mins - QR

brought to the pool in a corningware type casserole with lid -

still HOT HOT when we ate them

2 cups rice
2 cups water
manual high 23 mins, quick release. 

Perfect!

Also, I borrowed the book 'Vegan Under Pressure' from the library and am excited to try a few new recipes.  It is so nice to cook something. In the IP and not heat up the house like the stove and oven do.

made yogurt yesterday - it's straining now....

this batch looks good!  We get milk delivery and often have too much milk but it's the minimum for delivery so making yogurt is helpful  :)

going to look for a hibiscus iced tea recipe - or make one up

3lbs country style pork ribs - marinated in hawaian salt,  soy, ginger, garlic, red pepper and brown sugar
1 cup or so water
on trivet - 28 mins

very yummy

I chopped them up and turned them into a giant pot of pork fried rice   - added eggs, carrots, celery, onions and green onions, and soy - forgot the sesame oil

yummo!

That sounds really good! 

I used the timing for the chili lime chicken, but seasoned it with teriyaki flavors and had that with brown rice over the weekend.  Would have been better if marinated, but was very good and used the juice it generated with the rice.  Fried rice would have been a great idea.

so I browned ground beef on saute
added some chopped garlic, hot pepper flakes and salt
a box of rigatoni
a jar (hangs head in shame of red sauce)
a jar of water - poured down the side
set it for 5 mins

hope it's good

Way too much meat
but it was cooked ok and so easy

a few of the noodles were chewy - but I think more time turns them mushy and I don't like that

if I had to do over again I would start with 1/2 pound of meat, and add a can of diced tomatoes and more water - so a jar and a half of water

the sauce I make is very bright tasting - almost raw - it's also more watery than jarred sauce - I wonder how it would work if I use my own sauce
