Mine arrives in a week.  I bought mine mostly for rice and am interested to see any vegan recipes you may have tried. I really want to try making vegetable stock from scratch. Other wish list items I want to try: baked beans and retried beans.

Beans come out great, and no need to pre soak.  However, it is easy enough to set them in the pot before bed and cook the next day.

I broke my crock pot and bought a new one.  the new ones are HORRIBLE!!!  I like to cook low and slow especially when I'm at work all day.  this new one is literally burning stuff while on low after 3-4 hours!! 
it boils liquid while on warm. 
So, I see the instant pot can also be used as a slow cooker.  has anyone tried it? 

My grandma used to make beans for my dad with a pressure pot that went on the stove.  when i slept over I would wake up to the steam noise coming out of the pot.  (nice memory)

Preheat to sautée.  Chop 2 carrots, 2 stalks celery, 1 onion and 4 cloves of garlic.  When the pot is hot, sautee the carrots, celery and onions for about 5 minutes, then add garlic.  Add 1 lb. of baby potatoes (halved), 1 can of kidney beans (drained), and a 14.5 oz. can of chopped tomatoes with their juice, and 1 cup of chicken broth.  Then add 6 skin on chicken thighs or legs. The recipe calls for salt, pepper, and oregano, but I don't use salt, and DH hates oregano, so I just used a sprinkle of poultry seasoning.  Stir gently.

Cool on high pressure for 10 minutes, using a natural release. Remove chicken from the pot, shred from the bones, then return to the pot along with 1 TBSP. Balsamic vinegar and 2 TBSPS. Choppped parsley.

This produced a little more liquid than I expected, so I just removed it with a slotted spoon. Liquid would be great for dipping bread or poring over rice.

did my first hard boiled eggs today = 2 mins and then NPR - just ate one it was perfect

first rice pudding today = Yum!  (we had way too much milk)

just pulled out pork and chicken to make butter chicken and pulled pork - that should cover a few dinners and lunches to make this terrible GO BACK TO WORK week better.....
