I had my first cheesecake fail. I have no idea what happened.
I did everything the way I always do, but when I took the top off, I could see right away it was a total fail. It poofed way up, cracked, then deflated, leaving the crust exposed and soggy. I made it for a work event on Friday, and really won't have an opportunity to try another one. I *could* go out now and pick up more ingredients, but I'm dog-tired and not feeling it. I think I'll just hit a bakery on the way to work Friday AM and pick something up there.
I do have some condensed milk in the oven right now for Dulce de Leche, which I was planning to top the cheesecake with. I guess I can still do that.
ETA: This project was clearly not meant to be. I just took my Dulce de Leche out to stir it, and it was totally scorched. WTH? I make it the same way, in the same pan, all the time. I think I'll just retreat to the sofa with a cup of tea and watch some TV.
