Meals on the go

Looking for new ideas:

What sort of meals do you like to make when on the go, travelling, or otherwise without a full kitchen?   Think road trips, staying in a hotel, picking up stuff from a random grocery store in a foreign country (no time to call companies), etc.

To get the thread started, here are some things we make whilst on the go and without a kitchen (not including items that are fully pre-made at home before we leave, of which we bring plenty):

- instant oatmeal (from home) made with heated water from the tap or in a microwave
- instant or regular rice made in a microwave, plus add-ins like chickpeas and cut up vegetables
- sushi, made with aforementioned microwave rice
- wraps - only if we can find a brand guaranteed to be safe, which is impossible these days even at home
- plain salad
- instant broth (from home) with whatever we can find to add to it: chickpeas, veggies, etc.  Not exactly a good soup.

Spoiler (click to show/hide)We're headed to Seattle in a week and I'm just too burnt out with food stuff to think of what to bring/make and I'd really like something more than oatmeal, rice and veggies.  I'll stock up on Chipotle as much as I can whilst there as we don't have one on the island so it's a real treat for me.

So meat free for you cancels my kids favorite - frozen meatloaf slices.  But you could:

Seasoned baked tofu slices to make into a sandwich or add to salad or just to munch.

Bring canned beans and add to microwaved broccoli, cauliflower, etc... veggie rice or noodles, corn, chopped fresh peppers...add some quinoa for texture and flavor (there are some microwave quinoa cups)

Tuna

any bean salad....mixture of different beans and chickpeas, corn, crisp chopped veggies and vinaigrette type salad dressing.

I love fresh baby spinach with different fruits, berries, and seeds. 

Macabre:
A lot of what we have done has wound up in this thread. It's typically easier to take tortillas, because they are so easy to pack (and typically not a safety concern for our allergens). DS has taken Nutella. He is vegetarian.
