YUM! I changed a few things, just a bit. Added a splash of red wine vinegar to the lemon juice and dijon, and a couple T of EVOO. And a clove of crushed garlic. Cut back on the red onion. I chopped 1/2 a red onion, and it was a LOT of onion for a salad, so I only used that, and actually tossed a little of it away. Otherwise I stayed pretty true. I use 3 color quinoa from Trader Joes. I am leaving the feta on the side, because someone else is bringing a orzo pesto salad, with feta. Did not want to overdo the feta theme. But I got a crumbled garlic and herb feta and folks can add it on top if they choose. I may have some for dinner, and use that for myself.
