I found this to be a good document regarding wheat allergy.  It also addresses other reactions to wheat, such as gluten intolerance, wheat protein isolate, and Coeliac.  However, it also mentioned that processed items labelled 'gluten-free' may not actually be safe for people with wheat allergy, which is somewhat concerning, though completely understandable.
