So, I took the plunge and have purchased an Instant Pot.  Onr reason was that I was needing a new slow cooker, and this can do that, but also can do just about anything I make in the slow cooker, faster. 

I opened it last night and did the test run recommended, and then made rice for dd.  It came out sticky, but I wanted it to.  She asked if I could make sticky rice, and yes, I can!  Today, on a whim, I went to the store to get the BOGO baby back ribs and tried those.  Very good.  They cook in 23 minutes(I had a very full pot), but there is added time for the pot to heat, then decrease pressure.  So, it was maybe 45 minutes of total time in the pot.  There was time I took to prep them too, because we like a rub.  Then, they need a quick sear om the grill or in the oven, to caramelize some sauce or brown them up.  So, it was not exactly no time at all, but they are falling off the bone, and tasty and a lot faster than 4 hours in a smoker. 

I also made black beans this afternoon, starting with a pound bag of dry beans.  This would be quicker had I soaked them overnight.  However, I was able to do a quick soak method with the pot, that happened right in the pot, by heating them, then letting them sit for an hour.  Then, I rinsed them, and proceeded to actually cook them in  15 minutes.  I actually did 13 minutes, because I hoped they would remain a bit intact.  They are very good, but I would use less water next time.  More of a thick soup, but still good.  I was able to saute my onions and garlic and peppers in the pot, before cooking as well.  This cannot be done with a crock pot. 

Lastly, I made rice again, lol.  I wanted to try to make fluffy, not sticky, rice.  Dh prefers it fluffy, and separated.  He actually is in bed, with a bad tummy, so I figured he might like some plain rice later.  How ironic he felt off this afternoon when I was going crazy cooking all this great food!  The kids wont eat it either. 

All in all, I would say it was a success!  I shopped, prepped and cooked the ribs, beans and rice from 12-6, with minimal cleanup, and all in one pot.  One hour was just with the beans sitting there, and I was not working my butt off.  Some time was waiting for cycles to run.

I made French dips in mine today. I have done a cheesecake which was amazing, corn, chuck roast, baked potatoes, chicken with potatoes, salsa chicken, and macaroni and cheese, which is ds favorite, and hey it cooks in 4 minutes. I just love it!!

I already had an electric pressure cooker but the sale on prime day was enough to make me buy the instant pot as well. I liked the yogurt function and that the inner pot is stainless steel. I've used it a lot already and even had BOTH of my electric PC's going at the same time. If you're on FB be sure to join the Instant Pot Community group. Lots of great tips and recipes there.

I was told the only thing I am missing is the yogurt function.  I have made yogurt, and it is easy enough without a special pot, bot for the expense if making it, it is just as easy for me to buy it, since I like the Greek yogurt.  By the time I strained mine, it was not all that much and at a high cost, since I used organic milk, and also time consuming to strain, and clean up.  I just buy it.

I called DS yesterday to ask him if the pressure cooker we bought him a few years ago was by any chance the Instant Pot, and he confirmed it was.  He's never used the slow cooker function, only the rice and pressure cooker.  I asked him about sauteeing, and he said it's difficult because the bottom is curved and it requires more oil than usual?

I have to say I'm intrigued - I would have loved to have dinner ready faster last night!

So, I bought an instant pot a little while ago. I have major issues with eating and actually getting food in, no motivation to cook, no desire to eat blahblahblah... In my quest to find a way to actually get food cooked and eaten I decided to invest in the instant pot. Anyway. I used it once so far, the meal was fine -- some kind of pot roast recipe. Today I'm cleaning my kitchen and moved the instant pot aside so I could wipe down the counters and the stove top... I must have accidentally hit the knob and turned the burner on....I smelled burning plastic... Yeah... the instant pot. The bottom melted off (or onto the element coil). Oh no, no, no... What a stupid, expensive, bad bad mistake! I have the windows and the door to the balcony wide open, kitchen and bathroom fans on...  I can't believe I did that.

Should I replace it? It's still on sale on Amazon. It was nice the one time I used it, easy to use and convenient. My slow cooker has been limping lately so I bought the IP to replace that too, because I actually use my slow cooker a lot. But ugh, spending the money a second time... On the other hand I need to do something so I actually eat, which I otherwise don't really do. I planned on using the grain cooker and yogurt maker features too.

Those of you that have one, would you replace right away if you were in my shoes?

I also bought two new attachments for my stand mixer as part of the same 'plan' to start eating real food again... at least those should be safe from being melted on the stove top. One would hope anyway...

Oh no, that is a bummer, Ciel!  I really like using mine.  I made a great beef and barley soup/stew this weekend.  I also made some beef stock from some marrow bones they had at the grocery store.  I am using it more than my stove top of late.  My dd commented that it is like a new toy for me.  It really is, lol. 

I would watch for a sale price, since they do always go on sale.

Simple thing, but they come out great!  Hard boiled eggs.  5 minutes HP, then 5 NR, then 5 mins. in ice bath.  They slide right out of the shells.

Mine arrives in a week.  I bought mine mostly for rice and am interested to see any vegan recipes you may have tried. I really want to try making vegetable stock from scratch. Other wish list items I want to try: baked beans and retried beans.

Beans come out great, and no need to pre soak.  However, it is easy enough to set them in the pot before bed and cook the next day.

I broke my crock pot and bought a new one.  the new ones are HORRIBLE!!!  I like to cook low and slow especially when I'm at work all day.  this new one is literally burning stuff while on low after 3-4 hours!! 
it boils liquid while on warm. 
So, I see the instant pot can also be used as a slow cooker.  has anyone tried it? 

My grandma used to make beans for my dad with a pressure pot that went on the stove.  when i slept over I would wake up to the steam noise coming out of the pot.  (nice memory)

Preheat to sautée.  Chop 2 carrots, 2 stalks celery, 1 onion and 4 cloves of garlic.  When the pot is hot, sautee the carrots, celery and onions for about 5 minutes, then add garlic.  Add 1 lb. of baby potatoes (halved), 1 can of kidney beans (drained), and a 14.5 oz. can of chopped tomatoes with their juice, and 1 cup of chicken broth.  Then add 6 skin on chicken thighs or legs. The recipe calls for salt, pepper, and oregano, but I don't use salt, and DH hates oregano, so I just used a sprinkle of poultry seasoning.  Stir gently.

Cool on high pressure for 10 minutes, using a natural release. Remove chicken from the pot, shred from the bones, then return to the pot along with 1 TBSP. Balsamic vinegar and 2 TBSPS. Choppped parsley.

This produced a little more liquid than I expected, so I just removed it with a slotted spoon. Liquid would be great for dipping bread or poring over rice.

did my first hard boiled eggs today = 2 mins and then NPR - just ate one it was perfect

first rice pudding today = Yum!  (we had way too much milk)

just pulled out pork and chicken to make butter chicken and pulled pork - that should cover a few dinners and lunches to make this terrible GO BACK TO WORK week better.....

Mine arrived yesterday and I am already super confused... But I plan to experiment with it this weekend. 

Is there a master website of Instant Pot recipes for those of us who have to follow recipes and directions? I can rarely spontaneously create a recipe until I have tried it three or four times.  I need instructions and directions to follow... At least to get me started.  Almost all the recipes in the book that came in the box use meat, which we don't eat.

There are vegan IP recipes if you google, as well as two vegetarian IP FB groups. I have not found te FB groupsnhelpful. I can do vegan but am looking for vegetarian recipes.  I want to see if there are enough things for me to cook to invest in one.

We tried two types of rice this weekend.  The rice:water ratio in the book was waaaayyyyy off for wild rice and we ended up with mush.  We then cooked sushi rice with the rice:water ratio on the bag and had PERFECT rice.  It is a keeper, for rice cooking alone.  We make sushi rice at least three times a week (for all uses, rarely ever sushi).  Woohoo! Goodbye old nasty burnt rice cooker...

I think I read somewhere that they really only recommend it for white rice?  I'd like to cook brown basmati rice in it.  It takes so darned long on the stove.

I've done brown rice.  Any rice I do seems to come out sticky, which is fine for me and dd, but dh likes fluffy rice.  I have not figured that out.  Maybe pot in pot?

I think if you use the water:rice ration on the bag you can cook any type of rice.  If the rice setting itself doesn't work, manual should.  (The cookbook actually suggests manual mode for brown rice.)

We love sticky rice too, which is why we converted to sushi rice.  Maybe try less water for fluffy rice?

Gn, brown basmati turns out perfect! The jasmine was a little sticky, but basmati, perfection! I do 1 cup of rice to 1.25 cups water on high pressure for 22 minutes then quick release. I sometimes throw a little chicken bouillon in the water too.

Okay question--when it takes longer to cook something in the IP than without one, what is the advantage to using thr IP? I can cook hard boiled eggs in less time than the IP takes and with less fiddling. I do not have a problem peeling warm eggs that aren't too fresh.

Also in another thread stinky mentioned cooking a frittata that takes me 20 minutes to do from scratch (chopping veggies, sautéing then popping under the broiler--one pan).

So what's the advantage there? (With the frittata, Stinky already had some precooked veggies and I believe was able to just plop everything in the IP and leave it alone for half an hour--so the advantage there might be not having to fiddle with anything.)

But if it takes longer and is as much or more work, what advantage is it to use the IP (for a specific dish, not in general)?

Not everything takes longer.  I just baked a cheesecake in 1/2 hour  :happydance:, and right now I have a broccoli-leek soup going that will only take 6 minutes of cooking time. 

For me a major advantage is that I don't have a double oven, so I can have one thing going in the Instant Pot, while something else is going on the stove.  Very helpful on Sundays when I'm trying to cook ahead for the week and make the best use of my time. 

I'll let y'all know how the cheesecake turns out, once it has chilled and set.  The texture looks perfect.

I thought the whole hard cooked egg thing was silly until I did it

It was quicker and foolproof

add water, put eggs in

set to 2 mins manual

until you remember to take them out....

eggs perfect!

I really want to try the pot in pot method - I see so many people posting about rice failures that I've just been doing it in my rice cooker

I want to do a whole chicken today....we lost power for a while....so not sure of the rest of the day

Mac, some are faster, some are better tasting, and a lot of it is not having to watch it, stir, add ingredients. Just throw it in and done.

Well, the cheesecake would have been terrific, had I not, er, dropped it in the kitchen sink!  :rant: :banghead:  :tongue:

I was removing it from the cooling rack to place in the fridge, when my sleeve caught on the spring-thingy, and released the darned cake.  It just plopped right into the kitchen sink. 

I did taste a spoonful, and it was dreamy.  I'm always going to use Greek Yogurt from now on.  Perfect flavor, and the texture was to die for.

DS is going to be very disappointed when he gets home. :hiding:

as for not stirring and adjusting and babysitting......yeah that's really cool I like it EXCEPT that you can't adjust as you go - I cook differently - a little of this, a little of that, oh there's an orange here.....I'll add the juice...oh it's too salty - throw in some potatoes..and you can't do that in the pot - but I think I just need to think about it a little more and season accordingly - also there is no evaporation so you do need to season more than you would because nothing reduces.

basically 6 mins per pound plus 2 mins  (rinsed and seasoned - I didn't brown the skin - or broil it afterward - just took the skin off once is was done)

it was so good!  and I put butter and cheese on the spaghetti  squash and it was so good with the chicken

I put the squash in when the chicken came out - after - I also dropped something....the pot when it was filled with the great broth from the chicken....but it landed on my garbage and only a little spilled out - yay

poured the broth off to save - rinsed the pot - did the squash for 6 mins

already did about 15 eggs > bringing them in for the boys in the office

as for not stirring and adjusting and babysitting......yeah that's really cool I like it EXCEPT that you can't adjust as you go - I cook differently - a little of this, a little of that, oh there's an orange here.....I'll add the juice...oh it's too salty - throw in some potatoes..and you can't do that in the pot - but I think I just need to think about it a little more and season accordingly - also there is no evaporation so you do need to season more than you would because nothing reduces.

Thank you, Stinky. What everyone has been saying makes this sound really great. But I didn't think it sounded right for me. And now I know not to waste my money. I still think it sounds great for most people, but if I can't season as I go, and nothing reduces, it does not fit my cooking style in the slightest.

Kind of like how I have friends who rave about Blue Apron, and it sounds very good, but not for me.  Food is my creative outlet. I don't want to follow someone else's recipe, or let them pick my ingredients.

yeah....I've been reading a lot and using it....

and some of my meals are good.....but they would be better if I had stood there and done my thing...

for you Hedge - I'd say if you do pot roast, ribs, pulled pork - those traditional low and slow things - you can do them in the IP much faster and the meat turns out great

even the whole chicken that I did last night - it was an organic chicken and very $$ - so I was hoping it would be good and it was....DH was really commenting about how moist every bite was -   I bought 2 at Costco and seasoned/prepped the other one and popped it into the freezer - it will be ready to go whenever I need it.  :)

DH makes his own broth and had read on one of his paleo sites just how much less time it takes...for $60 this works for me.  The kids and I don't like to smell the beef broth when he does it in the crock pot.  He has only done the water test so far, but will make broth once every 4-6 weeks.

Duplicate cheesecake is cooling. This one seemed a little runny when I took it out, soon put it back in for 3 minutes. I don't know if you're supposed to use it that way, but I tried it and it seems OK. I'll let y'all know tomorrow.

another dinner win!

I did 5 mins and the pasta was a little soft - just a little
I think that's b/c the sauce was frozen so it took longer to come to pressure and thus increased the cook time on the noodles...

also - should have added more salt - I heavily salt the water when I boil pasta

The texture is light and super-creamy.  I would prefer a crisper crust; I wonder if baking the crust for a few minutes in a conventional oven would help that.  The Greek yogurt is delicious and makes for a light, in sweet cheesecake.  It is totally delicious.  :)

3 packs of Costco chicken breasts
1 packet of trader joes taco seasoning
cup and half of chicken broth - (from my whole chicken the other day)
put spices on chicken - broth in bottom - chicken on trivet

10 mins
15 NPR

in two batches I put the breasts in my kitchen aid - to shred them
added in some of the juice from the bottom - and lime juice

served with taco shells, avacodo, chopped onions and tomatoes and hot sauce

it was really good - and it will make more dinners/lunches

thinking of mixing with cream cheese and green chiles to make enchiladas

Trying a frozen salmon fillet, rather large, a generous two portions sized single piece.  After some googling, tried 4 mins. then QR.  Not done.  added 2 mins and ran it again, QR.  Still felt a bit of frozen crunch in the center when I used my instant thermometer.  Doing another 2 minutes.  Will let you know how it turns out.  I do not like overdone salmon, but do want it cooked through. 

It is finally done after the last round.  So, it was a total of 8 minutes, but if I had not interrupted it the two times, maybe it would not need a full 8 minutes from the get-go.  If I do it again, I will start with 6 minutes, and 5 mins NPR.

anyway- My pork is the best that I have ever made!  DS just asked for seconds....on his pork snack - on English muffin with melted provolone

I added a cap and half of hickory - liquid smoke -

now cooking red beans in the pork liquid in the IP - I hope the salt in the liquid doesn't make them hard

I love a dish of pork, red beans, and greens with an egg on top!   Need to send DH to store to get greens!

and chick peas  - still craving hummus - not buying dry though - maybe next time

Stinky, I usually bake or grill salmon, also. This was a piece I had in the freezer and I decided I wanted it tonight...let dh have some leftover pork we had.  It was not over done and no albumin.  It surpassed my expectations in terms of texture.  If I had fresh piece, I'd just bake it or grill it.

OMG, I seriously fell in love with my Instant Pot all over again tonight. I was craving my Grandma's chicken, but was seriously not digging the thought of waiting 2 hours for it to cook.

I seasoned and browned the chicken, cut up the veggies, dumped them in the Pot with 1 1/4 cups of water.  Cooked on high for 15 minutes, NPR for 15 and voila! Grandma's chicken. Served over egg noodles with roasted cauliflower.  And I had the time to make PC's cookies.  :-)

Confession: My Instant Pot has only been used to make rice.  That's it.  :hiding:  I have no inspiration to try anything else, but I really want to try beans.  Alas, all the dried beans and lentils I can find here (even the local farmers) have warning for wheat, which I'm avoiding right now due to multiple mystery reactions.

The IP beeps and the instruction book doesn't include any instructions on how to turn off the beep.

It was fab. i seasoned it with garlic and pepper, and browned it on Sautee for 5 mins.  Then I removed the turkey and sautéed diced carrots, celery and onion.  I added in some garlic and poultry seasoning, 2 cups of turkey broth (had some in the freezer).  Put the turkey back in, cooked for 35 minutes on high pressure.  Did NPR for 5 minutes, then released the pressure.

I let the turkey rest while I made the gravy. I like an au jus pan gravy, so I just poured the liquid and veggies off, skimmed the fat, then used my immersion blender.  The gravy was delish.

Another Instant Pot success.  :)

I did pot roast the other day. I read someones advice to cut the chuck roast I to strips, so did that, then added carrots and potatoes, a can of beef broth and a slow cooker packet of tavern pot roast seasoning (can't remember brand, maybe Campbell's, but its a liquid) amnd cooked high pressure for 45 minutes, NPR. It was so good, the falling apart roast that I could never get in my crock pot.

I leave the skin on and take it off after cooking, so that probably helps keep it from getting dry.  I just loosen it and rub some seasoning under the skin and some on top.

chicken soup last night

made broth or bone broth whatever - over the weekend with two chickens carcasses - celery, onion, coriander seeds, salt, pepper and bay leaf, parsley and cilantro stems - cooked it for 120 mins - got like 10 cups of beautiful broth

put that in the pot -  diced 3 large chix breasts (raw)
added more celery, salt, pepper, bay leaf, a little Italian seasoning
cooked for 7 mins manual

then quick release and added a bag of wide egg noodles, fresh cilantro, juice of one lemon - and put it on Saute until the noodles were cooked

I plan to keep the Pot busy today; DS is coming home and I want to have some Chili Lime Chicken on hand for the week, and if I can find a small turkey breast I want to make one of those as well.  And of course, a cheesecake.  Which reminds me, I need to order a second ring so I have one just for sweet things.  I'd better do it now before I forget.  :dunce:

Our popcorn maker died two weeks ago and I saw online that you could make popcorn in the IP.  We tried three times and it didn't turn out vey well - too many kernels and the popcorn was a touch chewy.  We opted to use a paper bag in the microwave and had better results. 

Just posting here in case anyone else wants to try making popcorn in their IP - not worth it.  Microwave is better and faster. 

Otherwise, we're still only using our IP to make rice. You guys must think I'm crazy.

I've always done corned beef in a pressure cooker.  I could've sworn I only did 45 min in my stovetop cooker, but all the recipes I find are for 60-90min.  Last night, I did one with 3c water, 2.5lb corned beef, 70min high pressure.  natural pressure release.  Put in potatoes, cabbage, onions after straining liquid and removing beef.  I only strain because i hate getting bits of bay leave and coriander in my veggies.  3min high pressure, then instant release.

Thanks...I have read that the stovetop ones do it more quickly.  Need to remember to soak it tonight.  I like to get some of the salt out of it.  I think I will roast or saute the cabbage.  I prefer it to boiled.  But, will boil the potatoes and carrots and onions.  Wow, only 3 mins for the veggies?

I am going to whip up some mac and cheese for my neighbor, because I don't have time to do anything time consuming, but she just had surgery on her shoulder, is miserable and one-armed for weeks.  I will top it with crumbs and bake it, but the prep in the IP is a snap, and makes the noodles a perfect al dente before baking.  They kept a good texture last time I did it that way.  It will make feeding her 13yo teens easier for a couple of days.

Instant Pot was great for the corned beef.  I got a red, 3.5 pounds, maybe more, and did 85 minutes manual, NPR, because I was waiting for family to be home.  It was so tender, and still sliced nicely.  I wish I did 2 because there is not much leftover.

Ok, unimpressed with our corned beef and cabbage meal.  First problem, DH bought New England gray corned beef instead of the red (my mother definitely rolled over in her grave over this).  Second problem, in order to cook the cabbage, the corned beef had to come out, so I felt like the meat was dry and the cabbage was over cooked.  Potatoes were fine.  DH started taking notes on what to do for next year and I said maybe I should just do it on the stove.

I cleaned mine by cooking a lemon this weekend
and then made pulled pork - kind of a mix up - I had left over liquid from my last Asian pork - and left over dry rub from my last ribs - so I used both of them and it turned out yummy - DS and I had pork quesadillas and DH had his with rice

I want to make hummus from dried chick peas......and more yogurt but I'm waiting for my milk delivery

Hezz, I only did the corned beef in the pot, and roasted my cabbage.  I prefer the cabbage to be roasted or sauteed, so I avoid the fat from the corned beef.  If we wanted, I had ladled some of the broth over the beef on the platter, so it was there to add a bit to our veggies if we wanted.

Mary, I did not use liquid smoke.  I do have a McCormick Southwest seasoning blend that is a little smokey, or you can get smoked paprika and it's a subtle addition.  I've never used liquid smoke.

Cooked a whole chicken the other night.  Not as good as roasted in the oven, but I seriously didn't have time for that.  This cut the cooking time by half.  And, it freed up my oven for other things.   :thumbsup:

We are planning a trip to Hawaii this autumn.  Instead of paying DOUBLE for a room with a full kitchen I figure I can get a new Instant Pot with two liners delivered to the hotel for under $200, ship it back home or to a friend/relative afterwards, and save us two thousand dollars USD on vacation.  Bingo! 

Now, to experiment more with IP recipes.  Chilli is on the menu this week. I may try Spanish rice too.  Or mushroom risotto!  My brain just clicked on to realize we can use the IP in so many ways.

Now, a question - brown rice.  Has anyone figured this out? I have tried cooking brown long grain rice three different ways and it never really works out.  It is always either too watery or crunchy.

I made a yummy, healthier version of baked potato soup, or really, a simple potato soup.  I am so bored of my bland diet, and it seemed like a way to make a baked potato more filling by adding a bunch of chicken stock to it. 

I diced and threw into the IP:

3 large russet potatoes
1/2 a large sweet onion
4 stalks of celery
few cloves of crushed garlic
few T. of bacon crumbles(just enough for flavor) Some smoky seasoning would help, if not into bacon
covered in chicken stock, enough to cook everything and not have potatoes scorch
A generous splash of half and half to the whole pot after pureeing

I did it on the soup setting.  I think I bumped it up to 12 minutes, because I need to be sure my veggies are all cooked very soft on my current diet.  You could do less time, if you like them a bit more firm.  I pureed the whole thing and adjusted salt as needed.  I have eaten it with a dollop of plain Greek yogurt, and with a light sprinkle of cheddar cheese.  I think it would be just like chowder in flavor if I tossed a can of clams in it, but not sure how my tummy will tolerate clams?  But, the ingredients are the same, minus all the cream. 

I have half of this in the freezer, and have had at least 4 meals of it, and dh has had a meal of it, and I think I have more than enough for lunch today.  So, it stretches the potatoes quite a ways, meaning less carbs than if I had the potato straight up.  So, I would say there were 12 small servings in the batch, maybe 8 generous bowls.

One of the few perks of being on e medically prescribed low fiber diet.  Ice cream is another...well, it was, after 6 days full fasting.  Now I have had to scale back...

So, I dumped a can of chopped clams in the rest of the soup today.  Now it is clam chowdah!  I had to thicken it a bit with some flour and water.  And now there is another full serving left, lol.

So the short story is we have 2 instant pots, 2 different models...decided to keep one for the summer swim meets because have to feed the coaches and officials as the host team.  Broke out the instant pot today to wash it, do the water test and then hard boil some eggs which I must say came out perfectly.  Have to teach myself how to use it in case we are cooking anything in it next weekend for the swim meet.

I bought the cheap store brand eggs for DH to hard boil in the instant pot for the last swim meet and they cracked...he's never had an eggland's best egg crack during the process...anyone run into this?

I've had some crack...the worst was Easter, and I'd bought the cheap store brand eggs to color.  Usually, one out of 6 might crack. One did today, and it oozed out of the shell, but stayed intact.  It was fine to eat.

I had my first cheesecake fail.  I have no idea what happened. 

I did everything the way I always do, but when I took the top off, I could see right away it was a total fail.  It poofed way up, cracked, then deflated, leaving the crust exposed and soggy.  I made it for a work event on Friday, and really won't have an opportunity to try another one.  I *could* go out now and pick up more ingredients, but I'm dog-tired and not feeling it.  I think I'll just hit a bakery on the way to work Friday AM and pick something up there.   :disappointed:

I do have some condensed milk in the oven right now for Dulce de Leche, which I was planning to top the cheesecake with.  I guess I can still do that.

ETA:  This project was clearly not meant to be.  I just took my Dulce de Leche out to stir it, and it was totally scorched.  WTH?  I make it the same way, in the same pan, all the time.  I think I'll just retreat to the sofa with a cup of tea and watch some TV.  :dunce:

Yes...I love yogurt.  My IP is not a duo.  No yogurt setting.  I have made yogurt, well, labneh, which is yogurt, then strained until thick, more like cream cheese, than Greek yogurt, but not as stiff as cream cheese.  I've just done the regular way, before IP.

We used the instant pot on the pool deck the other day...threw in 2 packages of frozen meatballs, 2 cans of diced tomatoes, some onions and we had frozen some leftover tomatoes from the previous swim meet and threw those in also.  Served as meatball sandwiches with grilled onions and peppers on rolls/or in bowls for the coaches lunch.

want to do yogurt again - may do that when the tea is done

oh but I pulled some pork out of freezer so I may do that - we didn' tlike the last two batches of this pork so not sure if it's the meat or if I didn't cook it long enough

my kitten is crazied.....keeps bringing me her pipe cleaner to throw for her - and she's dunked it in the water dish so now we are wet.

Hibiscus drink in the pot tonight

the elderberry tea recipe needs work - it was a little = um thick - like opaque - but totally drinkable....by me at least  :)

also did chicken breast - like the chili lime recipe - except I just threw in what I had on hand and they were very good - have tons of shredded tasty chicken for burritos and quesadillas   YUM

Also, I borrowed the book 'Vegan Under Pressure' from the library and am excited to try a few new recipes.  It is so nice to cook something. In the IP and not heat up the house like the stove and oven do.

made yogurt yesterday - it's straining now....

this batch looks good!  We get milk delivery and often have too much milk but it's the minimum for delivery so making yogurt is helpful  :)

going to look for a hibiscus iced tea recipe - or make one up

on trivet - 28 mins

very yummy

I chopped them up and turned them into a giant pot of pork fried rice   - added eggs, carrots, celery, onions and green onions, and soy - forgot the sesame oil

I used the timing for the chili lime chicken, but seasoned it with teriyaki flavors and had that with brown rice over the weekend.  Would have been better if marinated, but was very good and used the juice it generated with the rice.  Fried rice would have been a great idea.

added some chopped garlic, hot pepper flakes and salt
a box of rigatoni
a jar (hangs head in shame of red sauce)
a jar of water - poured down the side
set it for 5 mins

Way too much meat
but it was cooked ok and so easy

a few of the noodles were chewy - but I think more time turns them mushy and I don't like that

if I had to do over again I would start with 1/2 pound of meat, and add a can of diced tomatoes and more water - so a jar and a half of water

the sauce I make is very bright tasting - almost raw - it's also more watery than jarred sauce - I wonder how it would work if I use my own sauce

I've been playing with variations on the chili lime chicken.  I've used breast meat and thighs. I squeezed the lime over the chicken, added some True Lime with garlic and cilantro, garlic powder, and Newman's peach salsa.  Tonight, it was 2 breasts, and I cut each into 3 uniform pieces.  5 minutes, QR.  shred the chicken.  Served with yellow rice I'd made.  I have 2 pots, so did the rice earlier.  Brown rice, turmeric, some Goya season salt, dash of EVOO.  2 cups brown rice, 2.5 cups water, 23 mins, QR. It was a little moist, but we were not eating right away, and I favor slightly sticky rice.  It was all very yummy!

Its arriving today!  Now I have to start finding some recipes that work for the whole family.  I know people make cheesecakes and mac and cheese in it but I am paranoid about dairy with DD. I have a dishwasher so I guess it wouldn't  be an issue...I have never put any dairy  in my crockpot.  I know its irrational....

I cannot spend my whole day reading here and on FB about different recipes.  I have lots to do  ;D

MaryM- that's probably a smart idea.  Since you haven't used it yet, I will give you a heads up.  So when it's done cooking, one option is to release the pressure by moving the valve...so hot steam and sometimes whatever you are cooking (if pot too full...think pasta water) spray out of the valve and potentially all over your kitchen.  DH tried to double a batch of chili once and I've definitely sprayed pasta water all over.

a lot of recipes call for you to add the dairy at the end
food from the pot is really HOT - so let it cool before serving

chili lime chicken is great
butter chicken is great - I add jalepeno and serano peppers to it
you can cook a whole chicken

I have seen many people post about Mongolian Beef, and a beef and broccoli recipe, but I have not made them.  I think I found them heavy on sugar(but looked yummy) and my kids would not eat it, so...

I just made shredded chicken for tacos later on!

I used boneless skinless breast, 2 tbs taco mix, a dash of cayenne, some paprika and the juice of one orange and 1 1/2 limes.  I sautéed garlic and onions first!  Very yummy.  Hope everyone likes it tonight.

I did a variation on the chili lime chicken yesterday for tacos and it got rave reviews all around.  I cheated a bit by using some taco seasoning, and squeezed some lime juice, and added various other seasonings.

My IP is getting a work out today.  I made rice to have on hand.  I know brown is better but we eat all prefer white jasmine rice and its comes out great in the IP.  Right now I am making stock with chicken bones/parts I have and later on I plan to make some more of the shredded chicken we like for tacos!  I have a few oranges and limes I need to use.  On Monday I made my first pulled pork in it.  DS said it takes just like the slow cooker one I make!

Wow, I'm curious about this chili lime chicken!

So--I'm thinking of getting one of these, but not sure I really need it or would find it that handy. For one thing, if I make, say a bean dish in the IP, then I still need rice, so I still need my rice cooker, right? This is multiple appliances in one, but not all at the same time. So how do you guys deal with that?

Do you use this instead of a slow cooker for crock pot recipes? Are there things you'd normally make on the stove-top or in the oven that you do in the IP instead, or do you have all new recipes for this (which isn't a bad thing.) This past week, I made carbonara, meatloaf, sweet and sour chicken, and bean tamale pie. Not sure I'd do any of that in the instant pot. But I guess crock pot recipes would be done in it and things like pulled pork could be done much faster. I'm just trying to figure out how helpful it would really be.

My sis sent me an Amazon gift card out of the blue. She racked up some points at work somehow and send me and my other sis $100 gift cards! She's nicer than I am, lol.

This is the recipe.  I would think that there is a way to do this is a crock pot.  DH makes chili, broth, hard boiled eggs, chili lime chicken and beef stew.  I have cooked oatmeal and mac and cheese on a pool deck with it.

I bet I can do mashed potatoes in it...any one try it yet?  Have I already asked this?

you can use a pyrex (older is better) or corning ware bowls - or any stainless bowls too (some isn't food grade though)

so you could put chicken in the bottom with some liquid and then prop a corning ware bowl on top of the chicken using the trivet or just laying it on top with your rice and water

I have a rice maker that DH and DS actually know how to use so we still do rice in that

I’ll cook my rice in the IP.  I have an extra pot.  If I am doing both parts of a meal in the IP, I’ll do the rice first, then the other dish, or vice versa.  I’ve never owned a rice cooker.  I used to do it on the stove.

I want to try doing the rice with something else, but need to find something where the timing is all matched up.  I thought maybe I could do meatloaf and rice together, but we don’t typically have rice with meatloaf.  I’ve yet to do a meatloaf in the IP.

I’m not sure it replaces a good rice cooker.  I always have some sticking.  Not much, but need to soak the pot and scrub it after rice.  But dd and I like the sticky rice texture from the IP.

I use my IP most often for broth/stock, soup, Mac and cheese but I’m trying to avoid that, lol.  I make hard boiled eggs in it, quick meats, if I’ve not planned ahead well enough, like the chili lime chicken, or pork tenderloin like a pulled pork.  I’ve quicky used it to sauté taco meat.

It takes 25 min to cook rice on the stove top. So easy. You boil water (2:1  water:rice), add rice, stir exactly one time, cover, turn on low, come back in 20 minutes.

yeah.....mine is super quick too - and also bright like my chili so I don't think I am going to try it in the IP
prob wont do chili in it again either

my sauce recipe is OLD.....

olive oil
diced onions - cook until translucent (they are optional - but not for me)
diced garlic - add and cook for less than a minute
red pepper flakes - just a pinch if they are fresh
add the water/juice from the tomatoe cans to stop the garlic from cooking
tomatoes - diced, whole, crushed - whatever I have on hand
lots of salt, lots of pepper
bring up to heat then stir and add
tons of chopped parsley and basil
bada bing bada boom it's sauce!

Has anyone tried to make meatballs and jarred sauce in their pot?  I have tried two times and it will not come to pressure.  I should make homemade sauce but we are busy, so sometimes doctored jar sauce is it.  I thought the sauce was too thick so I added water to the top once and to the bottom before the sauce the second time but same result - pot got hot and timer went down but no pressure when I released....I was cooking ahead so I just put the sauce in the crock pot.

I did it this summer on the pool deck for a swim meet and it worked fine.  I feel like it took a long time to come up temp because the meatballs were frozen.  I winged it so no idea what I did...should have taken notes so I know for this summer.

Thanks for the tip. I think I'd like to get one for ds, but don't really want to buy him anything that he has to pack up and take to CA. I wish I could buy now and have it delivered in February! I also have no idea what his living arrangements will be and what he'll need. And his company provides three meals a day ( ~) )so he won't be cooking much anyway.

juice of an orange
bag of berries - minus a small handful
2 tablespoons of maple syrup
zest of orange

1 minute - pressure cook - 7 min NPR

add 1/2 - 1 cup sugar
pinch of salt
put on saute
add in resevered berries
stir

that's it

dont know if it's good or not....but I'm sure its fine

I cooked my potatoes in it, then put them through the ricer, back into the pot, mixed in the stuff and turned it on keep warm.  Worked out great.  Not my favorite recipe, but good enough.

Okay y’all, since it’s Black Friday: if your house cold we’re vegetarian, do you think you’d get much use out of yours? I think a year ago the consensus was no.

I don’t see this as a good option for cooking hard boiled eggs, based on what I’ve read here.

I’m not sure what I’d use it for besides yogurt. I joined a vegetarian up group on FB last year, but the recipes were mostlyfor Indian food, which DS doesn’t like and I don’t much either these days.

DH loves it for hardboiled eggs...you don't have to babysit them.  What about making your own veggie broth instead of buying already made and soups?

Have you googled instant pot vegetarian recipes yet?  I've never cooked dry beans before, but it must be quicker. 

I have to say that maybe it didn't take any less time to cook the potatoes because the pot has to come up to temperature, but I didn't have to babysit it in case of a boil-over so in that respect I was able to do other things out of the kitchen.

I'm terrible with sizes. I need to go look at pots I have to see what 5 quarts vs 6 quarts vs 8 quarts looks like. I have a crock pot that is often too big. But 5 quart is maybe too small for us, but good for ds.

Just checked my crock pot, which often seems way too big for what I want to make, and it's 6 quarts. I can't imagine cooking rice for dinner in a 6 quart pot.

I have a 5.5 quart regular pot that I use for chili and most soups. Then i have an 8 quart pot that I rarely use, but I have one or two recipes that are a little too much for the 5.5 quart. So I think 5 quart would be fine. I think I'm going to order the one from walmart. I can always return it.

Yeah, eggs seem to take as much time if not more, and you have to do more than I do—if you can’t preprogrammthe IP (I’m assuming you can). I do hard boiled eggs as an easy breakfast we can take with us in the morning.  I put them on, come back upstairs to get ready, then take them off the stove after so many minutes and peel them. If I peel them right away (which I do in the morning), I don’t have a problem peeling them 90% of the time. I’m not seeing an advantage there.

Except DH wouldn’t tell me that I’m doing it wrong. He does with eggs every damn time if he is awake and downstairs.

A number of the egg recipes I see have some cool time on high pressure and some on low pressure. I assume you can program that in the beginning so you don’t have to be there babysitting the eggs midway through?

Beans :hiding: we don’t actually eat them very often, because of my digestive system. 

Yeah, I had googled vegetarian recipes and had joined a FB group. Most of the recipes were bean-dependent—or in the case the FB group, Indian. We’ve gone off of Indian.

With everything with my car yesterday, I did not do any shopping online.  I think I will do further research.

I certainly would not buy an IP only for making HB eggs!  It’s just a nice perk.  It runs the 4. Minute cycle, stops, and automatically goes to the warm cycle, which has a timer.  The pressure slowly goes down naturally at this point.  I try to catch it at 4-5 minutes and do an ice bath with the eggs, but they’ve been fine if I forget them for 10 mins or so.

I use it to save time.  The things so sometimes do in it for time saving or low mess, are not necessarily the ideal method for that food.  For example, a whole chicken would be best spatchcocked on the grill.  I throw it in the IP, carve it up, and we have tasty chicken in about 30 minutes, and I’ve got the bones back in for stock that night.  It was great for Mac and cheese when I was sick. Took minutes, and dh loved it too.  Was easy for me to eat.  Kids don’t like it, funny enough. 

But, I’m not convinced it’s all as time saving as promoted, but easy, don’t need to tend the pot, less to clean, and for me, makes good rice, because I never had a rice cooker.  If money is tight, McC, you might not want it.  You guys seem to enjoy freshly prepared meals, and your dh enjoys the process, much like a Hedgie.  I’m not sure the IP satisfies that process, where you adjust seasonings as you go, sauté, add ingredients at various times, etc...

I have another question, when googling, we keep finding parts, like sealing rings.

I assume it comes with all necessary parts to use it. Though things like the cake pan you might need to buy if you want.

But do the sealing rings wear out a lot?

I’m still using my original, but I did buy another to use for cheesecake. The ring holds food odors and some people have said they ended up with a cheesecake that tasted like pot roast 😳😂. I haven’t been using mine much lately, mostly because I haven’t cooked much lately. I did make a pot roast tonight and it it is worth it for that alone. The cheesecake is amazing and the Mac and cheese is good and so fast.

Mine does not have specific buttons or settings for cake, sterilize, yogurt.  I’ve got the Lux. 

I’m not familiar with the 10 in one for $229, SL.  I don’t think whatever difference you are getting for that high price is worth it.

I got my Instant Pot last night. This morning I did the steam thing and then did some hard boiled eggs. I guess you just look online for everything--I was expecting more from the users manual. It has an egg button, but had no instructions about putting the eggs on the rack, adding water, etc. So I had to look online. Some of the instructions said to use the manual button, one said use the steam function. I used the Egg button. It's a little confusing.

I got the 5 qt and I'm a little worried because no one seems to get that one. In fact it's a Lux model and under FAQs on the IP website it says the lux model comes in 3, 6, and 8 quart. It doesn't even mention the 5 quart. It's like the 5 quart is the forgotten step-sister. I wonder if I'll have trouble adjusting recipes to the size. The size looks pretty good, but it says not to fill it too full, so we'll see.

Where do you set up your pot? It's on my counter and the steam is going right onto my cabinets. I turned it so the steam button is away from the cabinet, but then I can't see the display. I suppose I could put it on the island, but it seems in the way there. What do you guys do?

Yeah, storing it is the other thing. I don't have a pantry. I can fit it in my pot cabinet, but then it's hard to get other stuff out. I have a tea cart in the dining room. I'm just going to store it there for now. I have a cabinet where it could go if I can figure out where to put some other stuff. I usually don't buy something until I know where it's going to live.

I made more eggs so dh can make egg salad. One cracked in the pot. It's still mostly together in an egg shape, but kind of weird. I set it aside and he can decide if he wants it.

Off to find a recipe for dinner tomorrow. (Having leftovers tonight.)

For the chili lime chicken, it doesn't look like it has any liquid added, but I thought the IP manual says to always add some liquid when pressure cooking (and that sauce like bbq sauce or marinara doesn't really count--you need water.) So...no liquid?

We also use ours on the island and store it when not in use.  My sister had a ton of beets from her winter CSA so DH made beet salad...took him 3 rounds in the IP to get them all cooked.

Bensmom, with the chili lime chicken, I rinse chicken, and in this case, I don’t dry it.  Then you’ve got the lime juice.  The chicken releases juices, and it seems to work out to be enough liquids to come to pressure.  There is then a nice amount of liquid to put it back into, and keeps it moist.

Don’t worry about the cracked egg that looks mostly ok.  Those are fine for egg salad or eating.

My steel cut oats didn't really work right. How do you guys do it? I looked up recipes and used 1 cup of oats and 2.5 cups of water (I saw ratios of 1 cup oats to 2-3 cups water) and cooked for 10 minutes. It was really watery and I had to put it back on for 5 or 6 more minutes. I've seen recipes for cooking for only 5 minutes. What works? After the 2nd round of cooking, it was fine, but I'd like to find the right formula.

I made the chili lime chicken everyone talks about. It was good. A little salty even though I used less salt than the recipe calls for. DH and I are still trying to figure out if the IP is worth it. I could have made the chicken on the stove or in the crock pot. There are times when I'm making something for dinner that takes a long time and I don't realize how early I have to start cooking and then we eat late, so it's nice that things cook fast, but for the most part, I'm able to spend time cooking I'll have to fool around with more recipes and see. I have some recipes (nothing I can think of offhand at the moment) that seem to take a lot of pots and dishes. It would be interesting to see if they could be modified for the IP and made easier.

Lots of people order the colored rings on amazon, red for savory, blue for sweet.  We never had an issue of it imparting flavor into a savory item.  We haven't used the IP for anything sweet yet.

I read that you can get the smell out by putting 2 cups of vinegar in the IP and steaming for 2 minutes. Now my house smells like vinegar and my sealing ring still smells like chili lime chicken.  :-/  At least I can no longer smell it from halfway across the room.

I'm going to give this thing til July. If I don't think it's useful by then, I'll ship to to ds in CA, who by then will have a place to live that he's going to stay at for more than 5 months.

Perfect IP chicken tonight, not over cooked!  I had a 6 pound organic Nature’s Promise whole chicken, rinsed, put on trivet in IP, breast up.  Tight fit.  Heavily seasoned, inside and out.  About 3/4c broth in bottom, it was just what was in my fridge.  Poultry setting, 22 minutes, and 10 NPR.  Might have been 15, we were watching something, and I released it after show was over, but in that range.  It was perfect.  Moist, but not over cooked.

Yes, just do manual setting for the desired time.  A smaller chicken would need a bit less time.6 pounds is about the max that fits in my pot, and on a shorter trivet than the one that came with the pot.

I’ll let you know how mine comes out.  I oiled and seasoned the outside and under the skin. Seared it, removed it and sautéed some mirepoix.  Put the trivet in, put the chicken in breast side up, poured in some broth, poultry setting for 25, NPR (which should be done in a few minutes).  Oh, and I stuffed the cavity with some onion and herbs.

Chicken is a smash hit.  Ridiculously tender- it split in half when I took it out, which made it very easy to carve. Great flavor, and the broth!   Very easy clean up as well. 

If you want crisper skin, you could put it under the broiler for a few minutes.  We didn’t think it was necessary.

Since we do not eat the skin, for the most part, we don’t mind that it’s not crisp.  But, for a dinner party or guests, I’d grill or roast, for presentation.  I saved the broth from the IP.  I’ve got  2 full cups in the fridge, with a 1/4 fat cap I’ll just pull off.  I’ll cook some bones I’ve got in the freezer and make soup for dinner tomorrow.  This is after a second dinner tonight for 3 of us...Ds chose leftover pizza.

The ribs were good! This definitely goes in the plus column for the Instant Pot. I've made ribs once or maybe twice in the past 20 years. Now I can make them and know they'll be good. Not that I'll make them often, but it'll be an option.

I put 1 cup of water and 1/2 cup apple cider vinegar in the pot. Rubbed the ribs with a dry rub of brown sugar, paprika, salt and pepper, put the little trivet thing in the pot and the ribs on top of that (I cut the rack of ribs in half, but you probably don't have to--just curl it around the pot) and cooked for 25 minutes, did 10 min NPR and then moved the ribs to a foil covered baking sheet and slathered in bbq sauce and stuck them in the over for a little while. I had the oven on 450 from roasting potatoes, so I put them in on that, but then ended up broiling them for a few minutes.

My pot is only 5 quarts, which no one seems to have. The ribs fit, but I wonder if the 6qt pots are taller. I couldn't stand the ribs straight up or they would have been right at the top of the pot, so I had them slouch a bit as then circled the edge. If anyone gets  chance, measure the inside pot of your 6 quart and let me know the height and diameter.

We might try a whole chicken next. I don't cook whole chickens. When we have them dh, deals with them. So maybe he'll make one Sunday. I have to say though, I'm not a fan of really moist chicken. I like mine dried out just a bit. I want my chicken meat firm, not mushy and there's a fine line between moist and juicy vs chicken meat that doesn't seem cooked enough to me. I'll have to find a small enough chicken to fit in the pot. If becca fit 6 lbs, I can probably fit 5. the trivet that came with my pot is pretty short.

Just looked at this and it looks like the 6 quart pot is taller, but not wider than the 5 quart. So, not any larger to put on the counter, which is good. But taller, so hard to fit in a cabinet, but I'm not storing mine in a cabinet right now anyway.

I'm planning on trying brown rice tonight, but I'm not sure it would be any easier or any faster than in my rice cooker. I think it can take about 40 minutes in the rice cooker, but I'm not sure. Could be more, could be less. From what I'm reading, to cook it in the IP, you set it for 20-25 minutes, then let it release for 10. Add another 10-15 for it to come up to pressure and it's the same or longer in the IP. Guess I'll try it just to see, but I'm not seeing this as a time saver.

Not everything is a big time saver.  But easier that stove top cooking, because you set it and don’t have watch and stir.  Doesn’t splatter on stove.  I wouldn’t think it improves upon a rice cooker for rice, but it can cook rice well, and it can do lots of other things.  I’ve never had a rice cooker, but when staying with friends in Honolulu, it sure seemed easy to use one.

Yeah, I've never cooked rice on the stove in my life. With a rice cooker (ours is really old and has literally one switch--on/off), you put rice in, cover with water, put the lid on and turn it on. When it's done, it keeps it warm. I thought it would cook faster in the IP--sometimes I forget to start the rice, which isn't so bad when it's white rice, but we're going to eat more brown rice. I need rice for a dish later in the week as well as tonight, so I might make some in the IP and some in the rice cooker and see which finishes first.

I did a brown rice experiment. I cooked rice in the rice cooker and in the IP. The took almost exactly the same amount of time, lol. I set a stopwatch when I started them.

Rice cooker:
--1 1/2 scoops of rice
--water to cover about about an inch over rice
--turned it on and waited. It clicked off at about 39 minutes.

Instant pot:
--1 1/2 scoops rice
--1 1/2 scoops water
--set manual to 22 minutes
--when the rice cooker clicked off, the IP was 9 minutes into NPR, so I just released the rest of the pressure at that point (plan was to go 10 minutes)

The rice cooker rice is fluffier. The IP rice is chewier. Both are fine.

Rice cooker wins out because I store leftover rice in the fridge right in the rice cooker pot with its lid. I reheat it by adding a little water and sticking it back in the rice cooker and turning it on--takes about 5 minutes.

It was funny how close in time they were--pretty much exactly the same time. When the rice cooker clicks off, I let it sit until we're ready to eat, but even if we're ready right away, I try to let it sit a minute or two. In that time I could wait for the NPR to reach 10 minutes and release the remaining pressure.

I'm not sure if one would cook faster than the other if I made more rice, but I doubt it would make much difference.

I think part of the attraction to an IP is that it can do the work of a few different things (rice cooker, slow cooker, etc.) Definitely good for people with limited storage space.

Today I'm trying it out in slow-cooker mode. I hadn't actually planned to do this--I was just going to use my slow cooker. But I figured I'd give it a try. I'm making pepper steak. The recipe says to brown the beef first, which I've never done--I just throw it into the crockpot--but since the meat was partially frozen and since the IP has a saute function, I used that. So that was nice. Now we'll see how it all comes out. I often feel my crock pot, which is 6 quarts, it too big for some things. My 5-qt IP seems a better size for this.

We'll probably do a chicken this weekend, so it might be a challenge to find a small enough one. That could be a disadvantage of the smaller pot. I don't think I'd get rid of my crock pot and definitely not the rice cooker. I know you can do pot-in-pot stuff, but it really seems like there would be times when I want a meal in the IP and need rice and can't figure all that out. My crockpot is stored in the basement since I don't use it that much. Rice cooker in a cabinet, and so far, IP on the tea cart in the dining room (after I moved the ice cream maker back to the basement for the winter.)

The IP worked great in slow cooker mode. Very convenient--better size for most of my stuff, saute function is nice and I like that I can see how long something has cooked or warmed. The only weird thing is that I couldn't change the temp (like from medium to high) unless I turned it off and reset the temp and time. I'll have to check the manual to see if I'm just not doing it right.

Made a whole chicken last night. I'll preface this by saying that we very rarely cook a whole chicken. DH makes one maybe once a year. I think it's hard to get it to be flavorful, so I don't typically love them. So this chicken turned out about as well flavor-wise as dh would make in the oven. I think I could get it to be better, because I forgot to rub stuff under the skin until after I put it on the pot, so I didn't really get under there well. I also seared the breast side on saute function, but I don't think that really did anything. The chicken was falling apart when I took it out. So I'd call it a success because it was good as far as whole chickens go, and it was faster. It was a 5.77 lb chicken and it fit in my 5qt pot. I'll probably use the rest of the meat to make chicken salad.

I also made another pot of steel cut oats. A 1:2.5 ratio of oats to water, cooked for 10 minutes worked great.

I'd like to try beans, but all my bean recipes have a bunch of other stuff, so I'm not sure how to do that. I'll have to look up IP bean recipes to figure it out.

You could change the flavor profile very easily - I used a roasted tomatillo and mango salsa - It was the only tomatio one around - I was afraid it would be too sweet but it wasn't

Bensmom, I don't have an instant pot, but cook a whole chicken at least once a month, usually in the crockpot.

The rub I use, which I also use for turkey/bone in turkey breasts:
2 tsp salt
2 tsp paprika
1 tsp onion powder
1 tsp garlic powder
1 tsp ground thyme
1 tsp white pepper
1/2 tsp cayenne pepper
1/2 tsp black pepper (or so, I just guess with fresh from the grinder)

I usually do a really big chicken so that I can use leftovers (7.5-8 pounds) so for a smaller chicken I would use less.  I rub inside and out, and a loosen the breast skin and put a little under that.  I put a whole or half onion in the cavity, depending on what will fit.  You can reduce the salt to a teaspoon if you want - there is some difference, but I am a pretty good taster.  It isn't too spicy for my kids, but I have reduced the cayenne a bit for other people.

I use this so much that I just buy bulk spices at the Amish grocery now and keep a big batch.

Thanks. I did use a similar rub on the skin, and seared it (or tried to sear it), but then forgot to put more under the skin. I think I'm going to leave whole chickens to DH.

I'm looking at pasta recipes now. I'll probably make some kind of basic pasta with jar sauce and either ground beef or sausage. I'm thinking if this works, the IP could be a big win on this rather than using a pot for meat and sauce and another for boiling water and cooking pasta.

I would divide the mins on the box of pasta by 2 and subtract 1

I like the infused flavor of the pasta, but overall it's overcooked and homogenous - not sure that's the right word

I liked it and so did the family. I used more sauce than usual--a jar and a half based on a combination of recipes. Loved the cleanup. Just put a cover on the pot and put it in the fridge. No washing a big spaghetti pot and a sauce pot and a colander. And it was about 30 minutes from start to finish--cook the meat, then put the pasta, sauce, and water in and let it go. I set it for 6 minutes for penne (box said to cook 12-13 minutes) and it was good. On my gas stove, it takes forever to boil a big pot of water.

Usually, for just basic spaghetti with meat sauce, I serve the spaghetti and sauce separately. But it was fine all together. And I have some other recipes where it all gets mixed together anyway. Some with a cream sauce. I'd have to figure out if those would work and how to do it.

The one we did for a swim meet this summer had you cook the pasta and then add the cheese to the pasta and stir as it melted.  We found the simplest/least number ingredients possible.  It was fine, but I'm not a mac and cheese eater.

There are lots of recipes, but you basically do the pasta(about 1/2 the time on the box, and as Hezz, said, add the cheese and some milk after, and stir it in.  You can eat is creamy, right from the pot, or them, if you like, put it into a casserole and top with bread crumbs and butter and bake till the top is crunchy.  Most recipes say to use cram, or evaporated milk, but I have used the 1% or 2% milk i have on hand and it works.  It is lighter too.  I think I use less cheese than many recipes too.  Some are very decadent. 

I think I started with this basic recipe, but tweak it by using regular milk, and less cheese.

Hmm, the evaporated milk trick sounds interesting. The recipe I have that I really like does have that bechamel sauce he talks about, so if just using evaporated milk could replace that, that would be so much easier.

ok, so seemed like the pot had trouble sealing so I should have shortened the time a little bit. 

I used a pound of pasta, 1 green pepper, 1 red pepper, 1 zucchini, 28 oz can of crushed tomatoes, 28 oz water...somewhere in there I forgot to double the spices (probably could have tripled them) so was bland and pasta was a little over cooked, but I would make this again.  Will be super easy to reheat for the kid's dinner tomorrow...just throw some extra parmesan on and it will be fine.

I had an IP fail last night. I didn't have high hopes honestly. It was a chicken teryaki recipe that didn't really seem like it had been properly modified for the IP or for brown rice, even though it gave instructions. So I had mushy carrots and peppers and the broccoli pretty much just disintegrated. And the proportions were way off. I doubled the rice, but not the sauce and it was still way too saucy. I had to make extra rice to mix in with it.

I think I'm going to try mac and cheese tonight, even though I should probably cook something foolproof after last night's dinner.

I need to start writing down recipes. I've just been looking stuff up online and getting the basic measurements and time, but then I can't remember and have to look it up again--like with steel cut oats.

Later in the week (or next week depending on how we're doing with leftovers) I'm going to try a lentil and brown rice recipe.

I'm also planning a creamy chicken and orzo dish that I make in a pot, but might try to adapt for the instant pot because I'm really loving this not boiling a big pot of water thing.

BTW, I decided to buy two more IP’s. One for each of my daughter-in-laws.

One I think will love being able to make yogurt, as well as the convenience of making a quick and healthy dinner after work. The other will either love it or hate it. But both are getting the gift receipt with it.

So DH gave me an Instant Pot. It was a total surprise. It’s a rectangular 6 quart 8-in-1.

But looking into this, it doesn’t pressure cook. It’s a pretty basic model but not a true Instant Pot it seems. I think we will need to return it.

I did 1.5x the recipe because it says it serves four and we have four with ds home and he eats a lot. We had plenty left. It might have been enough, but I like having leftovers. I squeezed some lime in at the end because I had one. I added some cheese and then just put the rest on the table to sprinkle on top, rather than put it on top in the pot. Nice healthy meatless meal.

Edit to add: I don't buy taco seasoning--way too salty. I used 2Tbsp chili powder and 1 1/2 tsp cumin. I also cut back on the salt--less than a teaspoon even though I 1 1/2ed the recipe. I started cutting back on salt when ds had high blood pressure and I really notice it now when I eat salty food. It's amazing how fast you can adjust to less salt.

When I make stew I tend to put what I want in. I’m planning to try a beef stew in the pressure cooker (not slow cooker option). Are there any veggies that do not work in it? None of the recipes I’ve found have much variety of veggies that we like.

I have another question.

I plan to make Rice Pudding. I found a recipe that asks for medium-grain rice. It gives substitution for the coconut milk using whole milk.

How different will it be if I use basmati, which is a long-grain?

What about 2% instead of whole milk? (I never pay attention to how much fat in milk when baking. But I’ve never made a de ent rice pudding either.)

I bought some Arborio. And I had half & half cream so used it. (Suggested in the recipe.) The taste and smell is delicious. The rice is a little firmer than I expected.  It’s currently cooling and hopefully thickening in fridge. The recipe is from The Essential Instant Pot Cookbook.

Tomorrow I’m making stew. Kind of my usual way....have a recipe in front of me and kinda-sorta pay attention to it. Seems the important rules are; not to much or to little liquid, Don’t fill over 2/3, frozen peas and corn at the end.

I’m also making french stick bread.

My sister and her husband are coming for dinner and he likes simple meals. He loves when I make baked beans.

The rice was a bit to firm, and there was not enough pudding for the amount or rice. Not a complete failure. But not a success.

The stew, on the other hand....that was a failure.

I stayed below the 2/3 line, but, got a BURN message. I assumed I hadn’t scraped enough off the bottom after browning the beef. I dumped everything out, scrubbed the pot, put it all back in and started again. Got the same message. Dumped it all into a pot and cooked it on the stove. At dinner 2 hours late.

I think there wasn’t enough liquid. I put in extra veggies, but didn’t increase the liquid.

ok wait - stew means the meat is cut up small - hmmm ok

I'm thinking more like a pot roast - with veggies

as for Burn - I've never gotten that but I've read a million posts about it and it's not just the amount of liquid - but the thickness -  tomato sauce actually acts like a solid liquid when it heats - think of the big bubbles you'll get in a saucepan - you really need thin liquid for it to work.  At least on the bottom.

Researching Instant Pots again - is there any reason to get the yogurt function?  Would I use that function to cook other foods?  I get once you have IP yogurt, you won't go back but I can't get the majority of my family to eat yogurt unless it glows in the dark.

I was thinking of making yogurt with it, but when I saw how much work was involved, I changed my mind.  ~)  That said, you can also proof bread using the yogurt function.  I don't know what else you can do with it.

Sooo....

I made IP Mac and Cheese today, using the recipe posted a few pages back.  It is delicious, but...  It foamed up way too much, and when I did the quick release specified in the recipe, it sprayed foam all over the place.  I used my 6 quart pot, and 16 ozs. of macaroni, 4 cups liquid.  I also had to drain off some of the liquid when it was done.  I'm wondering if next time I shouldn't do 3 minutes on high pressure, followed by 5 minutes NPR and then release the rest of the pressure, instead of 4 minutes on high pressure, followed by QPR?   Anyone have any advice?

I didn't have evaporated milk, so I used Fairlife 2%.  It is absolutely delicious, but I think I'd add a little more hot sauce next time.  And maybe a drop of smoked paprika.

I have no desire or intention of making yogurt. Mine doesn't have that function.

I sprayed pasta water all over too. So instead of doing a real quick release, I just released it a little and let it come out more slowly. I like the dishtowel idea too. GN,  you can clean the valve--remove it completely and clean it.

I think if you adjust the water a bit, you’ll reduce that issue.  It’s happened to me, too, but I release it more gradually and it’s better.  I don’t drain off the water, if it’s just a bit.  It seems to absorb along with the milk and cheeses.

I’ve got chili in mine now.  It smelled like the beans might be scorching a bit, as it came to pressure after adding them, so, I’m trying the last bit of time on the slow cook feature.

I had some Great Northern Beans hanging around, and yesterday I saw some flanken (think short ribs, but kosher) on sale so I grabbed it.  I decided to make a mock Navy Bean soup using the flanken instead of bacon. I used smoked paprika to get the smokey flavor of ham or bacon. No real recipe, just tossed it together.  It came out great.  :)   I think tomorrow I’ll try to pick up some escarole to add in to make a more complete meal.

I’ll have lots of soup for my freezer.  :thumbsup:

I am going to LOVE this thing come summer.

I’m making potato salad.

Peel and cut potatoes. Put in pot with one cup water, place eggs on top.

5 min on high pressure, quick release.

Eggs are sitting it water cooking right now, so hopefully they are firm enough. Potatoes are perfect.

I do not have a steamer rack. I just used the trivet the IP came with. Some potato fell through, but seems fine.

No steamed up kitchen. No pouring of boiling water if you have an actual steamer...which I plan to get.

Made spaghetti squash tonight, which I then tossed with sautéed tomatoes and mushrooms, and sprinkled with some parmiagano reggiano.  Delish, and the squash came out perfect. Sometimes when I oven roast it is comes out a bit undercooked.

I made stir fry beef and broccoli and it was really good and I wouldn't normally make it because the beef always comes out tough. So a win for the instant pot. The only thing I'd do differently is add the broccoli and then add the cornstarch to thicken. I got it thickened, but then it got watery after adding the broccoli. I used low sodium soy sauce and it actually could have used a bit of salt. I used "stir fry" beef from the store, so it was already cut up. Easy-peasy. Used my rice cooker to make rice and microwaved frozen broccoli. So not one-pot, but the beef came out perfect.

Had some chili lime chicken I’d made, with some peach salsa as well on the making of it.  I decided I wanted hot food, so used it to whip up a chicken chili.  I’ve used a diced onion, 2 large garlic cloves, drained petite diced tomatoes, no salt added, a can of white beans, about 2t tsp ancho chili powder, some cumin, ground oregano, Goya seasoning, 1/2 cup uncooked white rice, and 2 cans water(14 oz can from the tomatoes).

I decided to do manual for 3 minutes, and NPR, so the rice cooks as it releases naturally.  All of these ingredients are 0 points on the new WW Freestyle, except for the rice and a dab of EVOO I used.  1/2 c cooked rice is 3 points.  I’ll have to see how many servings this yields, but probably about 2 points for a serving.  I might add some sweet corn, and spinach, also zero points.

It’s yummy!  I had cilantro, and we put some on top.  I did add some frozen corn and chopped spinach, doing a high pressure for 0.  There was a bit of sticking after that, but not scorched.  I’d just add those with everything else next time, unless I had fresh spinach.  Dh just had a second bowl.

it's very watery - it just has a nice a fruit flavor - and I think would be great with VODKA!!!!  :)

you could make lime water ice cubes for Vodka tonics!  oh boy!

you could make lime water ice cubes for Vodka tonics!  oh boy!

I made another rice pudding. Next time I’m going to make it closer to serving. The pudding seems to get absorbed.

I have never had spaghetti squash before. I picked up a small one.

7 minutes on steam, then QR. Instructions were that if it wasn’t soft enough steam again for 1 or 2 minutes. Having never had this squash, I wasn’t sure but it seemed soft enough. Turned out a bit al dente. But I enjoyed it.

We got a spiral ham. I threw the bone in the instant pot with split peas and onions and carrots and made a quick soup for lunch yesterday. Soooo good. I only made split pea soup for the first time last year. Never thought I'd like it since I'm not a huge fan of peas, but I LOVE it.

I was thinking about you while cooking it. :)

Definitely interested. Do we have a separate thread for spaghetti squash? This time, I just heated up some stewed tomatoes to put on it. But I think even just melted butter would have been good.

I put 1 1/2 cups water into IP. Placed trivet in. Cut spaggetti squash in half and spooned out seeds. Stood the two half’s on trivet, open side up.

I was thinking the IP and microwave are sometimes similar times. But I find things come out dryer from the microwave.

I almost had an instant pot fail last night. I was making carbonara and had pasta and chicken in the IP, but it wasn't coming up to pressure. And there was steam coming out around the edges of the lid. Finally after around 20-30 minutes, I tried releasing pressure to open the lid and look, but there was no pressure to release. I opened the lid and looked at the sealing ring and it wasn't seated right. But the pasta was cooked, so we just ate it. (The chicken had been mostly cooked when I sauteed it, and after steaming for a half hour, it was definitely done.) So lesson learned--make sure the sealing ring is on properly and steam coming out is not right.  :crazy:

I am making a beef stew. Not exactly following a recipe.

I browned the meat in a pan on the stove, then put it into the pot and put it in the fridge all day. I peeled and cut veggies, put them in a separate bowl in water in the fridge for the day. Drained them, put in IP with meat and onions (which I fried with bacon) added spices and lots of beef liquid (totally blanking out on the word, lol) and half can stewed tomatoes.

Not just waiting for it to NR. Then I might add some frozen veggies.

Smells good.

Sorry if this is old news to everyone, but I’m still new at this. I get excited easily.

We like bread pudding for desert. Usually I make it in the microwave, but I’ve been trying to find a recipe to make it in the IP. But every recipe I see, I know won’t work because you cannot bring to pressure without liquid. But today....I found a recipe.

Pour 11/2 - 2 cups water into bottoms of pan. Place trivet, then pan with bread pudding onto trivet.

I’ve seen it for things like potatoes and meat loaf. Just can’t believe none of the bread pudding or apple crisp recipes I saw actually added that instruction.

I have some silicone pans that will work great...as long as they fit in the pot.

So, if my chicken only takes 6-7 minutes, the rice doesn’t have enough time, right?  It seems things either cook shorter or longer than rice cooks.  So, I’ve been hesitant to try it.

but I see people have cracking issues a lot

if they are cooked to your liking, but cracked (hahaha) then I'm guessing it the shell having micro cracks or just thinner

I don’t have low pressure on my Pot.  I do manual for 4 minutes, then 5 for NPR, then into ice bath.  I’ve found by shaving off that last minute (in the 555 method) eliminates the cracks for me.  When I’d do 5 minutes, often 1-2 would crack.

Investors had no cracking issues using 555.

But I do find the yolks are a bit discoloured so I tried 455 and it was better.

My mom used to make some kind of unstuffed cabbage, but I think it had some sweetness to it. I've never been able to find something quite like what she made. I have a stuffed pepper recipe that almost does it, but not quite. Of course I'm remembering this from my childhood, so who knows. She didn't make it when I was an adult.

This was dinner tonight.

I used 2 pounds meat instead of one, but otherwise basically followed the recipe. It was good, but not quite as flavourful as I would have liked. We decided it needs more tomato.

But, the cabbage and rice came out the perfect texture. (I used basmati rice...that’s what I had.)

Hmm, I might try to put together a few of these. I'm skeptical of adding the frozen veggies in the "dump" and cooking them for 20 minutes. That definitely doesn't work with broccoli. I'm not sure if it would work with other frozen veggies. Anyone know?

I liked the orange chicken more than I expected. I thought it was good. Dd thought it was "fine", but not really good enough to make again. DH isn't a huge fan of breast meat, so if I did make it again, I'd need to add thighs. He said it wasn't that flavorful, which is really just completely wrong. I don't know how he thought that. The leftovers are even better. I might see if I can find another orange chicken recipe to try that will just be a little different and try that. I liked that it's different than anything else I make. Too often new recipes are just similar to something else.

The red beans were good too, in that they're different. I use the same cajun spice mix on a chicken and pasta recipe, so when the beans were cooking, I though it would just taste like that, but it doesn't at all. The chicken recipe is a cream sauce and the beans are tomato based and it's just totally different. For the beans, I used chicken sausage that was "andouille style".

I made this orange chicken recipe last night.  It's different, but the flavor is good and we all liked it.  I reduced the garlic by about 1/3 since we're not super garlic fans and I forgot to add the orange zest before cooking, so I added it in with the slurry and it was fine that way.  Next time, I may brown the chicken in a skillet first because my IP couldn't seem to get any color on it.  I think some carmelization on the meat would have added just the hint of flavorfulness I felt this was missing.  Maybe I could even set the IP on the stove to get the sear to keep this one pot...

That looks good rebekahc. I might try that. I did like the one I made with orange marmelade and it's certainly easier! It had bbq sauce, which I thought was weird, but it ended up good.

becca, I think they turn out fine, but I like my chicken overcooked probably. But I do think the instant pot keeps it more tender than on the stove.

I made pasta in my IP last night. It counted down the time and beeped when done, but when I went to release the pressure, there was no pressure. The ring was seated properly. The pot must have thought it came up to pressure because it counted down, so I'm not sure what's going on. I'll have to try a test today and see what I can figure out. The pressure valve thingy seems fine. the knob was in the sealing position. If it hadn't come up to pressure, that would be one thing, but the fact that it thinks it did and counted down the time--that has me confused.

Mine did that to me a couple of weeks ago.  I messed around with it and I think the valve that pops up was a little stuck and never popped up.  I pushed it up and down several times to make sure it was free floating and cleaned everything really well.  So far, so good, but I'm keeping an eye that the button pops up now when I use my pot.

That looks good. I don't think I have poultry mode. I only ever use manual. It would help if they explained what these different modes do. I thought it was just a preset cook time, like eggs would be 5 minutes, but some of them do different things I think, like beans soak for a bit and then cook or something. But the manual doesn't tell you what's going on. I found a website somewhere that explained it, but not sure I book marked it. Anyway, does anyone know what the poultry setting might do that's different from manual 20 minutes?

I tried this tonight. I do not have a poultry setting so I just used high pressure. I browned the chicken on top of stove.

I read comments and someone mentioned adding pineapple at the end. I thought that sounded good so tried it. I don’t think it affected the chicken or the sauce...but I got to eat some pineapple.

The chicken was good. I did not like the sauce on my rice though. Had lots of rice so I threw it out and took some fresh.

This is in my pot right now. Used 2 pounds meat again. Added a can of spaghetti sauce as well as the canned tomatoes. Hoping I didn’t screw it up. The directions say to add ingredients, stir, then add canned tomatoes on top and do not stir. I added everything and stirred.

It’s still preheating...hope it pressurizes.  :crossed:

Made the honey mustard chicken a couple nights ago. Eh. I wouldn't make it again. So far from this list, the red beans are a winner and I liked the orange chicken, but dh would like it better with thighs.

I cooked the beans on the bean setting, and followed the directions for the rest (I made the low sugar version, eliminating the brown sugar and using tomato sauce instead of ketchup).  When I returned the ingredients to the Pot, after a few minutes I got an error message and it started beeping.  I think between the molasses and tomato sauce it was overheating, so I turned it into a Corningware casserole and put it in the oven.

Maybe it needed some water?

I made ribs yesterday in the IP, and they came out fine, but the pot was hissing the entire time. I stopped it twice and reset the sealing ring (it seemed slightly off, but I put it in all the way and then it seemed off again.) I was cooking 2 racks, thought it might be too crowded, so I took one out, reset the ring, washed everything--the valve, etc, and restarted and it still hissed. It did have pressure when it was done--there was pressure to release--but I don't know why it was hissing like that.

Hmmm, maybe it’s the little sealing ring/gasket on the pressure release valve?  I’ve pulled that off, cleaned it, and had a better seal there.  I’m guessing at some point, these seals need replacement.

tomato sauce if it's thick acts like a solid -  think of it in a pot how the pressure builds and there are big bubbles that erupt if you don't stir

it's too thick for the IP and burns on the bottom

you would need to thin it out or have something else on the bottom of the pot - I didn't read the recipe though

I wanted baked beans to go with hamburgers last night and decided to make some from scratch. They were good! Even though this recipe says they're less sweet than others, they were really sweet, so I'd cut the sugar/molasses/syrup next time. I made them ahead and then kept them on warm until dinner, so they really thickened up nicely. I had to cook them longer than the recipe says. The beans were too hard after an hour so I put them back under pressure for another 40 minutes. I didn't use bacon, so I didn't do any sauteeing before pressure cooking. I just threw the raw onions in with the beans and everything else.

    1 Tablespoon Worcestershire Sauce (secret ingredient, shhh)
    1 1/4 teaspoons Ground Mustard Seed
    1/2 teaspoon Sea Salt
    1/4 teaspoon Freshly Ground Black Pepper

Instructions

    Rinse and sort beans, removing any debris.
    Select the Sauté or Browning function on Pressure Cooker and allow to heat.
    Add bacon and onions to the Pressure Cooker cooking pot and cook until bacon begins to render, scraping brown bits from bottom of cooking pot. Add 1/4 cup of water and continue cooking until water has evaporated, bacon fat is rendered and onions are semi-soft.
    Add beans, water, Maple Syrup, Molasses, Ketchup, Brown Sugar, Worcestershire Sauce, Mustard, Pepper to the cooking pot and stir to combine.

    Lock on lid and close Pressure Valve.  Cook at High Pressure for 60 minutes.
    When Beep is heard, allow a 15 minute Natural Pressure Release and then open Pressure Valve to remove remaining Pressure.
    Discard any floating beans.

    Add the salt. Taste a couple of beans for tenderness and sweetness and add more Molasses, if a sweeter taste is desired.  If Beans are still hard, cook for another 15 minutes.
    Select the Sauté or Browning function and cook until desired consistency.

That looks good!  I love baked beans, but they are very sweet, so I never make them.  Again, I’d be the only one to eat this.  I don’t even think dh would do more than try them.  He’s not a big fan of sweet dishes.

I made this last night and it was really good. DH was home early and made biscuits for me. (I was going to make them, but he's the one makes them sometimes for breakfast. I've never made them in my life.)

Some reviews said it was watery, so I put in only 1 cup of chicken broth. After I mixed in the cream and let it simmer, it was still very watery, so I added a flour/water mixture and it thickened up. I also used just over a pound of chicken and it was too much compared to the veggies, though I didn't really measure the veggies, so I will next time. I added diced potatoes also. We ate it over biscuits.

So I cook a box of quinoa every couple weeks and then freeze it in 1/2 cup portions to scramble into my eggs or defrost and throw onto my salad.  I did it in the instant pot today.  It was nice not to babysit the stove. 

2 C quinoa
3 C water

Spray the instant pot liner with cooking spray.  Cook on High pressure for 1 minute and then let pressure release naturally for 15 minutes or so.  Came out great.

That does look good.  Penzy’s makes a great Greek seasoning blend.  I use so much of it for marinating chicken and for salad dressing.  I’ve used it to do chicken with it and lemon juice, like the chili lime chicken.

So I made the greek chicken tonight, everyone liked it.  Kids ate it over rice, I had mine without and DH had his over cauliflower.  If you double the recipe, you do not need to double the liquid...keeping it the same or going 1.5 times would be enough.

I made a meal with mine for pennies  :)

started out cleaning my freezer
found a few bags of bones and veggies
used the chicken carcasses and veg to make broth - then added left over rice - seasoned with lemon, parm and a pinch of penzy Italian Seasons  -   LUNCH! It was really good too

I mixed beef and pork bones to make a batch of darker broth

I did a chicken soup yesterday.  Normally, I’d do it from leftover bones, and add chicken I might have left from grilling or a rotisserie chicken, but I started from scratch with the whole bird yesterday.  It came out good.

Bensmom, me, too. The term bones broth makes me gag. I can’t believe I just typed it. Now that DS has an apartment, DH bought two containers of it and I told him I don’t want them in the house. I covered the containers with post it notes so I don’t have to read them. :hiding:

ladies - you can poach that whole chicken right in the pot - fill to cover 90% - I think the recipe says 5t salt - I add a bay leaf and peppercorns  - either 1 or 2 mins manual
- npr 15 mins or more.....

you have a whole poached chicken and broth ready to go!


then save the carcass in the freezer

btw - we didn't freeze my meat bone broth so I had to toss it - so much for being frugal - I tried

Usually whatever I make in the IP can sit for a while, so I don't usually worry about it too much, but if I'm trying to time something, I usually factor in about 10-15 minutes to come up to pressure and another 10 for natural release if that's needed.

^^ It was good, but the gravy was much thinner and more watery than in the crock.  This could also be because I use more vegetables, which produce more liquid in the IP.  I finished it on the stove top to let the liquid reduce a bit.

Opened my new Instant Pot Ultra 8 QT, did the water test and then made my annual pea soup lightning fast!  I can not believe how the ham bone cooked and that it only took 15 minutes to cook.  Yes, I know, everyone knows that, but seeing is believing!

Now to read the cookbooks I bought to learn how to use this beast!

I did a whole chicken in mine tonight and it was perfection.  I seared it on both sides first, then cooked 6 minutes per pound. Made a spice rub and stuffed it with onions and lemons.   The Gravy is amazing. 

At this rate I don’t care if my oven ever gets fixed, lol.

Hmm, my mom used to make a kind of stuffed cabbage that might be similar to this. Not sure. Maybe I'll try it. I don't like cabbage but dh does and I'd like the filling. I do have a stuffed pepper recipe that is like stuffed cabbage, but with peppers.

I followed his instructions to loosen the leaves. The first few were like peeling wet tissue. But after that, it worked great. Better than either freezing or putting in boiling water. Safer too. I dumped it into a strainer and finished getting my meat ready. By the time I was ready to use it, it was warm but not hot.

I made beef stroganoff in my IP a few weeks ago. I took things from various recipes, but the basic method worked really well. Saute the meat, add flour and broth and some other stuff (I used wine and worcestershire sauce) and cook under pressure. Then open the pot, add noodles and cook under pressure again. It really made it flavorful. Add sour cream at the end. I sauteed mushrooms first, then removed them and added some back at the end. I'm not a fan of mushrooms, but the flavoring from them is fine.

I had tried crock pot beef stroganoff once and it didn't taste great and it looked gross. The IP version was really good and dh liked it too.

I basically make the same recipe with pork, but in the crock pot. I just made it this week and thought about using the instant pot, but decided to just set it up in the crock pot and enjoy the aroma all day. Let us know how it turns out.

We loved it...I altered the recipe though, so it has some kick.

Used:
 6 chicken breasts
whole 7.5 oz can of chipotle peppers with sauce pureed in food processor
doubled the spices
half the salt

Also only cooked it for 10 minutes, we checked the chicken with an instant read thermometer and it was well over 165 so I think the time could be cut down more.  The sauce is thick so beware of scorching on the bottom.

DH has his over cauliflower rice, DS had rice, DD and I had it over quinoa

Just made a batch of iced tea.

5 tbs sugar
8 cups water

Stirred to dissolve

4 tea bags

4 minutes high pressure. QR

Added wedges of half lemon. And two trays ice.

One tea bag had burst, so I strained into a pitcher and added fresh lemon wedges. It’s sitting in fridge cooling, but the taste I had, it was actually the best homemade iced tea I’ve ever had.

DS’s and SO are tea drinkers, so I had them try a glass before they left. DS loves anything lemon, so he added lemon and loved it. SO, like me, thought it was a bit weak...though they would have left tea bags in longer because they also like tea bitter.

I’ve not heard of doing this in the IP, but does make sense, if you don’t want any fruit solids in the water.  I’d just infuse my water directly with a few macerated or muddled berries, sliced cucumbers, and slices of citrus and/or strawberries.  Whatever is handy.  A local pizza restaurant had a jug of strawberry/basil infused water.  It was yummy!

This was dinner tonight.

I used 2 pounds meat instead of one, but otherwise basically followed the recipe. It was good, but not quite as flavourful as I would have liked. We decided it needs more tomato.

But, the cabbage and rice came out the perfect texture. (I used basmati rice...that’s what I had.)

This is in my pot right now. Used 2 pounds meat again. Added a can of spaghetti sauce as well as the canned tomatoes. Hoping I didn’t screw it up. The directions say to add ingredients, stir, then add canned tomatoes on top and do not stir. I added everything and stirred.

It’s still preheating...hope it pressurizes.  :crossed:

Am I the only one that uses FAS as my recipe book?

Last week I made the Mac and Cheese recipe that Becca posted awhile back. I made it in the pot the day before my company came, then popped it in the oven to reheat and brown the top before serving. It was really supposed to be a side dish for the meat eaters and the main dish for my niece, but it was clearly the evening’s biggest hit.  :thumbsup:

2–3 teaspoons apple cider vinegar
1–2 cups chopped kale or spinach
chopped cilantro and sliced green onions, for garnish
cooked brown rice or quinoa (optional)

INSTRUCTIONS
PRESSURE COOKER:
Push the sauté/browning/meat button on your pressure cooker. Add oil to the inner pot.
Sauté onion and garlic for 3-5 minutes.
Add ground turkey and cook until brown, about 5-7 minutes. Use a wooden spoon to break up the meat while cooking.
Add spices (turmeric, cumin, chili powder, cayenne pepper, cinnamon, sea salt and pepper) and cook for an additional minute.
Add butternut squash chunks, veggie broth, tomatoes, coconut milk, lentils, tomato paste and apple cider vinegar to the pot.
Place the lid on the pressure cooker, lock lid and make sure the pressure release valve is closed.
Press cancel on the pressure cooker and then press the soup/stew button. The timer should be set to 15-20 minutes.
Once the timer reaches 0, the cooker will switch to keep warm. Carefully switch the pressure release valve to open (I use tongs for this). Once the steam is released, remove the lid and add in chopped kale or spinach. Give the chili a stir and let sit for a couple minutes to allow the greens to wilt.
Portion chili into bowls, top each bowl with fresh cilantro and green onions before serving. You can also serve the chili over brown rice if you’d like.
STOVE TOP:
Add oil to a large pot over medium heat. Add onion and garlic and sauté for 3-5 minutes.
Add ground turkey and cook until brown, about 5-7 minutes. Use a wooden spoon to break up the meat while cooking.
Add spices (turmeric, cumin, chili powder, cayenne pepper, cinnamon, sea salt and pepper) and cook for an additional minute.

Lol, sounds like you made a different recipe with those spice substitutions. I might try it your way. I don't like cinnamon with meat either. I'd just leave the cinnamon out I think. I'm ok with tumeric and since that counts as an Indian spice, dh would be happy. I don't let him cook Indian food because I can't stand the smell of curry and some other spices.

This isn’t an IP recipe, but I thought I’d post it because of the spice combination with cinnamon. The dates melt into the stew, and the spices are warm and layered, and there’s a little heat if you use the chili flakes. It’s not overly sweet.  The cookbook version also suggests serving with green olives. It’s one of my all time favorite recipes—reminds me of a lamb stew my mother used to make when I was a kid. Seems like a common Moroccan spice combo, might pair well with different meats as well.

Buttons, that looks amazing!  I’m always looking for good veggie things that I can make in quantity to freeze.  I think I’ll make that this weekend.

I made this today to have later in the week.  OMG, it is amazing. When I serve it I’ll wilt some spinach in and finish it with some grated lemon, serve over basmati rice. Thanks Buttons!

This made me laugh.

To me, cinnamon is for desert. When I eat anything with cinnamon for breakfast I feel like I should sneak it so my parents won’t see. Lol

Does anyone cook spaghetti in their IP?

Every time I try I get the BURN message. What am I doing wrong?

I broke pasta in half and dropped it in kind of criss-crossed. Added about 4 cups water, one cans spaghetti sauce and one can diced tomatoes. It was all (just) below the max fill line.

It never actually came to pressure, and got the BURN message. Opened it, stirred, added more water. Repeat.

It tasted fine, but what mess to clean up.

I am no help.

That "burn" message is why my Instant Pot is now collecting dust!  I used it for a year with great successes.  Now I can not figure out why it keeps turning on even though what is inside is not burned.  And yes, same thing, never gets up to pressure.  I was so frustrated.  It did not matter what I was cooking.  I had to keep tossing badly cooked stuff or finishing my dinner on the stove top.  Kind of defeats the purpose of one pot cooking!

You may need a new plastic ring. They can get a bit stretched and not seal.

The one time I tried red sauce and meatballs in the IP, it scorched on the bottom.  I’ve only done pasta for Mac and cheese, so not spaghetti shape, and it’s only 4-5 minutes.  My kids don’t eat saucy pasta, so there’s no pint in doing it in the pot.  We like it al dente, too, so better just on the stove.  Then, everyone has it how they like it, in terms of sauciness or mone(dd), or just meat and veggie(me).

I miss beef stew, but the only beef I can eat is ground beef. (Quality of beef doesn’t matter. And I do realize how weird this sounds, but a support group I’m in it appears this is very common.)

EDITED TO ADD:  I cooked the veggies the same as when I make with noodles. And I didn’t add water, all liquid I added was chicken broth. It was good, but flavour was not as strong as with noodles. Needs more seasoning added to veggies and/or chicken.

I made this as a quick an easy thing on a day when I knew I'd be tired. I didn't think much of it but it was really good. Dd's friend ended up eating dinner with us and everyone loved it.

INGREDIENTS


2 ropes kielbasa smoked sausage sliced (I used just one kilbasa)
1 pound baby potatoes washed and cut in half
1 cup chicken broth or water
1 teaspoon garlic powder
½ teaspoon sea salt
½ teaspoon ground black pepper
½ teaspoon smoked paprika
1 pound fresh green beans washed and trimmed
2 tablespoons butter optional

INSTRUCTIONS
add sliced kielbasa to the Instant Pot
Add cut potatoes, chicken broth, and half of the seasoning
Place green beans on top, add remainder of the seasonings, and place lid on pot, and make sure valve is on sealing position
Pressure cook for 3 minutes on high pressure, and do a quick release or gradual quick release when pot beeps. When pin drops, remove lid, add butter if desired, and stir everything together before serving

I put in less salt and less smoked paprika because that's such a strong flavor, but it's definitely important.

I've cut back on cured meats over the years, but I do still cook it from time to time.

I've been cutting back on beef slowly over time, for health, environmental, and lately for cost reasons.

I've made these lentil tacos twice now. Last night dh said "I don't even miss the meat" and I said "I think these can just be our go-to tacos now and we won't have tacos with meat anymore" and he said that would be fine.

1 Tbsp olive oil
1 cup finely chopped onion
1 garlic clove, minced
2 1/4 cups chicken broth or vegetable broth
1 cup green or brown lentils, rinsed
2 tsp chili powder
2 tsp cumin
1 tsp oregano

1 cup salsa
For serving the tacos–12 taco shells, 1 1/2 cups shredded lettuce, 1 cup chopped tomato, 3/4 cup shredded cheddar, 12 Tbsp sour cream
 

Instructions
T--urn your Instant Pot to the saute setting. When the display says HOT add in the olive oil and swirl it around. Add in the onion. Saute for about 4 minutes. Then add in the garlic and saute for 20 seconds.
--Pour in the broth and scrape the bottom of the pot. Turn off the saute setting. Sprinkle in the lentils, chili powder, cumin and oregano.
--Cover the Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 12 minutes.
--When the time is up let the pot sit for 5-10 minutes and then move the valve to venting. Remove the lid.
--Mash the lentils lightly and stir in the salsa.
--Spoon about ¼ cup into each taco shell and top with lettuce, tomatoes, cheese and sour cream.

I tried making steel cut oats in the IP. Every time it burns.

I used this recipe.  But doubled both.

2 cups oats
6 cups water

I do one cup steel cut oats to 3 1/8 water, cook for 14 minutes. Perfect every time.

You don’t mean set it to cook at pressure for 14 minutes? That seems extreme.
