Easter 2019 (and beyond)

It's almost that time again: Easter!  It's my favourite holiday for many reasons, all religious.  That aside, I also love the fun Easter food -- all unhealthy, but whatever.  The only issue is that my allergy list has expanded, and officially experienced anaphylaxis to wheat, so I need some help.  Do any of you have recipes for:

Easter cookies (empty tomb cookies)
Easter bread (a super buttery rich bread, sometimes with raisins)

That don't contain wheat, potato, or sorghum?  I can substitute fresh or mashed potato with sweet potato, and may be able to substitute sorghum with millet or something, but the wheat is the trickiest part since all-purpose gluten-free flour doesn't really translate well.  (I'm going to try it still, with xanthin gum.) 

Please use this thread to discuss all things Easter and food, not just my request.  What Easter foods/treats does everyone else enjoy?

Last year, we hosted a brunch.  This year we are leaving for vacation on Easter.  DS is sad that we won't have a 3-D bunny cake so I told him we could have it the weekend before.

We make this one, but cover it with mini marshmallows instead of coconut.

We also make "heathly peanut butter cup eggs" which I'm sure could be made with sunbutter...we have never added the rice krispie type cereal, but I think this recipe is the same, but will have to double check.

Bunny cake!  I haven't had one of those since I was a little girl, maybe 9 or 10 years old.  Ours always had coconut, and looked a bit different - but same idea.  It may have to happen this year if the Easter bread doesn't turn out.

My sister always make the flat kind with the face, ears and bow tie.  We prefer the 3-D look.

SC, those empty tomb/resurrection cookies are just meringues (basically egg whites and sugar).  The recipes usually call for nuts, but I think you can just leave them out - one of the preschools I worked for used to make them, but I doubt they included any nuts.  I've seen the cookies, but never eaten them due to my egg allergy.

DD - mystery anaphylaxis, shellfish.
DH - banana/avocado, aspirin.  Asthma.
Me - peanut, tree nut, shellfish, banana/avocado/latex,  some meds.

I’ve made meringue with aquafaba and used the shapes for decorating a gingerbread cake. Delicious and egg free!

The empty tomb cookies we made were different, with a marshmallow in the middle that puffed up and dissolved, in a pastry-like casing, but I'm intrigued by these (aquafaba) meringue ones.  Recipe?  I see a few online, but wonder what recipe actually works.  I'm so excited by this!

but added a little rose water and color because I was actually making a variation of  these cookies, and piped some of the meringue for the heart and candy cane shapes to decorate my cake.

I either got lucky, or they’re easy to make. The beating part took some time, but it really does stiffen up!
