I'm not a fan of cabbage. I don't like coleslaw. but I loaded all the cabbage in there and it was good.

I made this as a quick an easy thing on a day when I knew I'd be tired. I didn't think much of it but it was really good. Dd's friend ended up eating dinner with us and everyone loved it.

INGREDIENTS


2 ropes kielbasa smoked sausage sliced (I used just one kilbasa)
1 pound baby potatoes washed and cut in half
1 cup chicken broth or water
1 teaspoon garlic powder
½ teaspoon sea salt
½ teaspoon ground black pepper
½ teaspoon smoked paprika
1 pound fresh green beans washed and trimmed
2 tablespoons butter optional

INSTRUCTIONS
add sliced kielbasa to the Instant Pot
Add cut potatoes, chicken broth, and half of the seasoning
Place green beans on top, add remainder of the seasonings, and place lid on pot, and make sure valve is on sealing position
Pressure cook for 3 minutes on high pressure, and do a quick release or gradual quick release when pot beeps. When pin drops, remove lid, add butter if desired, and stir everything together before serving

I put in less salt and less smoked paprika because that's such a strong flavor, but it's definitely important.

I've cut back on cured meats over the years, but I do still cook it from time to time.

I've been cutting back on beef slowly over time, for health, environmental, and lately for cost reasons.

I've made these lentil tacos twice now. Last night dh said "I don't even miss the meat" and I said "I think these can just be our go-to tacos now and we won't have tacos with meat anymore" and he said that would be fine.

1 Tbsp olive oil
1 cup finely chopped onion
1 garlic clove, minced
2 1/4 cups chicken broth or vegetable broth
1 cup green or brown lentils, rinsed
2 tsp chili powder
2 tsp cumin
1 tsp oregano

1 cup salsa
For serving the tacos–12 taco shells, 1 1/2 cups shredded lettuce, 1 cup chopped tomato, 3/4 cup shredded cheddar, 12 Tbsp sour cream
 

Instructions
T--urn your Instant Pot to the saute setting. When the display says HOT add in the olive oil and swirl it around. Add in the onion. Saute for about 4 minutes. Then add in the garlic and saute for 20 seconds.
--Pour in the broth and scrape the bottom of the pot. Turn off the saute setting. Sprinkle in the lentils, chili powder, cumin and oregano.
--Cover the Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 12 minutes.
--When the time is up let the pot sit for 5-10 minutes and then move the valve to venting. Remove the lid.
--Mash the lentils lightly and stir in the salsa.
--Spoon about ¼ cup into each taco shell and top with lettuce, tomatoes, cheese and sour cream.

I tried making steel cut oats in the IP. Every time it burns.

I used this recipe.  But doubled both.

2 cups oats
6 cups water

It doesn’t even come to pressure before burning.

I do one cup steel cut oats to 3 1/8 water, cook for 14 minutes. Perfect every time.

Do you stir it first?

You don’t mean set it to cook at pressure for 14 minutes? That seems extreme.
