Instant Pot!

I've been playing with variations on the chili lime chicken.  I've used breast meat and thighs. I squeezed the lime over the chicken, added some True Lime with garlic and cilantro, garlic powder, and Newman's peach salsa.  Tonight, it was 2 breasts, and I cut each into 3 uniform pieces.  5 minutes, QR.  shred the chicken.  Served with yellow rice I'd made.  I have 2 pots, so did the rice earlier.  Brown rice, turmeric, some Goya season salt, dash of EVOO.  2 cups brown rice, 2.5 cups water, 23 mins, QR. It was a little moist, but we were not eating right away, and I favor slightly sticky rice.  It was all very yummy!

I'm going to do a lemon garlic chicken pasta tonight....but not in the pot.....

Its arriving today!  Now I have to start finding some recipes that work for the whole family.  I know people make cheesecakes and mac and cheese in it but I am paranoid about dairy with DD. I have a dishwasher so I guess it wouldn't  be an issue...I have never put any dairy  in my crockpot.  I know its irrational....

I cannot spend my whole day reading here and on FB about different recipes.  I have lots to do  ;D

I think the Chili Lime Chicken is a good starting point - it's easy, and delicious.  :thumbsup:

MaryM- that's probably a smart idea.  Since you haven't used it yet, I will give you a heads up.  So when it's done cooking, one option is to release the pressure by moving the valve...so hot steam and sometimes whatever you are cooking (if pot too full...think pasta water) spray out of the valve and potentially all over your kitchen.  DH tried to double a batch of chili once and I've definitely sprayed pasta water all over.

Yes, I would avoid dairy for DD as well.  Aerosolizing potential, and I don't put the top in the dishwasher.

Mary - dairy doesn't really do well in the pot anyway (except yogurt) :)  sorry Becca - na na
a lot of recipes call for you to add the dairy at the end
food from the pot is really HOT - so let it cool before serving

chili lime chicken is great
butter chicken is great - I add jalepeno and serano peppers to it
you can cook a whole chicken

I have seen many people post about Mongolian Beef, and a beef and broccoli recipe, but I have not made them.  I think I found them heavy on sugar(but looked yummy) and my kids would not eat it, so...

It has arrived!  I did the water test!  Oh boy!

I never thought about the lid and cleaning - definitely no dairy in my IP!

I am looking forward to trying it out.

I just made shredded chicken for tacos later on!

I used boneless skinless breast, 2 tbs taco mix, a dash of cayenne, some paprika and the juice of one orange and 1 1/2 limes.  I sautéed garlic and onions first!  Very yummy.  Hope everyone likes it tonight.
