Low Sodium ideas

I am having friends for dinner Sunday.  One has a history of CHF, so is supposed to be a low sodium diet (he doesn't follow his doctor's orders, but I refuse to serve him something that can kill him).  I have done a few low sodium dinners when he has been over, and want to do something different from the few I have already done.  So I am looking for inspiration.  Any good ideas?  There will be about 7 of us.

You could do the pressure cooker chili lime chicken - the entire batch only has a teaspoon of salt. You could probably use even less.  Set up a build your own burrito/bowl bar with the chicken, tortillas, cilantro lime rice, salsa, veggies, sour cream, etc. I don't think anyone would miss the salt with all the other flavors.

DS - peanut, tree nut, milk, eggs, corn, soy, several meds, many environmentals. Finally back on Xolair!
DD - mystery anaphylaxis, shellfish.
DH - banana/avocado, aspirin.  Asthma.
Me - peanut, tree nut, shellfish, banana/avocado/latex,  some meds.

I look low (not no) sodium all the time. I just cook whatever I normally would, but substitute other vivid seasonings for salt.

I sometimes will cook lower salt for DH's parents - one of the things that I think helps is trying to think of lower carb ideas - a lot of carby foods tend to be a bit bland and need more salt.  I can reduce the salt in my roast chicken pretty low without really sacrificing much (I use several other spices) but that is all messed up if I serve it with mashed potatoes that tend to need a good bit of salt to taste 'right'.

I've never tasted it, but I don't add much salt or any when I make quiche (and I don't always use salty meats in it either) and people say I make good quiche.  That could be a nice option with a salad and maybe some fresh fruit?

Funny you mentioned quiche.  That was what I served to about half this group just last week.  I actually just got home from the grocery store.  I will start with veggies and (homemade, salt-free) dip during the activity.  Then dinner will be a fennel/coriander rubbed pork loin and chimichurri, carrots in  ginger butter and honey, garlic bread (I bought a baguette and will make low salt garlic butter), and avocado citrus salad with homemade dressing.  Dessert will be a bundt cake.
