Ok, so I am a lazy cook...and I want easy clean up.  I have been finding some sheet pan recipes to make my life easier.  I made this the other day and like it well enough to make it again.

There are a couple in here that I would like to try.

The very first thing I thought of: Texas Sheet Cake (without pecans for you), but I clearly wasn’t going in the right direction. It, however, is the very best thing I know that can be cooked in a sheet pan!

Dessert recipes are good too...I try not to bake very often these days since my self control with food is lacking, but it's always good to have delicious recipes on hand for when you need them.

I’ve never done entire meals on a sheet pan, just roasted veggies in various combinations.  As discussed in your other mention of the beef and broccoli, I find cooking times for meat vs veggies don’t always match up.  I think chicken thighs diced would withstand the longer cooking time required to roast veggies.  The whole concept doesn’t work for my kids, who don’t mix foods together, lol, but I love the idea of easy cleanup and combining flavors.

This looks good:  I’d sub cauliflower for potatoes...
