Think of it as a pancake with bacon and maple syrup in a cupcake.

OK, I found this on Facebook. I must find a recipe for this! Great brunch idea.

Bacony Pancake Cupcakes – about 25 min start to finish and 12 muffins



1 Bisquick box pancake batter with 2 tsp. of baking soda added (makes them FLUFFY!)

Chopped chives

Baked crispy bacon (some for muffins and some for topping)

Maple syrup

Cream cheese frosting



Make the Bisquick pancake batter as directed on the box yet add the baking soda. When mixed, add some chopped chives (maybe 1-2 Tbsp.?). Add a small amount of maple syrup to the batter too. I didn’t measure. Finally, you can add some of the crispy bacon to the batter as well.



Set up a muffin tin with liners (you will only need on tin of 12) and pour in your batter.



Cook at 350 degrees for 15 minutes (or until a toothpick comes out clean).



While they are cooking, take the cream cheese frosting and place in a bowl and mix with syrup. Mix to taste. (you can also use a mascarpone cheese with powdered sugar for the frosting and then add syrup yet it is just easier to buy the cream cheese stuff J)



When muffins are done, frost and sprinkle with bacon. Serve warm or cold. If you want to make the muffins beforehand, don’t frost until the day you want to eat them and you can reheat them in the microwave for 15-20 seconds before frosting J

oooo, I just sent this to my niece. She loves making cupcakes and eating bacon (not usually together). Maybe we'll make these for easter breakfast...without the chives so the kids will eat them.

Mmmm, I knew this was the place to bring it!   

@Stinky, do you think you could make a cornbread recipe too? I'll bet it would be good! Maybe not the cream cheese frosting but some kind of maple syrup glaze? Just a thought.

I'm going to try that with our homemade pancake recipe!

I've made these before, but put some very very crispy chopped up bacon in the cupcake batter. Served 'em for brunch. This below isn't the blogger I got the recipe from, I found it somewhere else about 2 years ago...but it's the same recipe.
