Stuffed jalapeno poppers.  Seems it needs some seasonings, but the basic premise looks yummy, and along the lines of something McC recenly posted.

Looks yummy. If you do those in poblanos they won't be too hot for most, would be larger (so one for a meal), and would be called rellenos (rather than poppers).

I will try!

It seems to me sweet potato would be good with that combination--either inside or as a side.

Another with chiles and adobo sauce.  Needs a big side salad or some veggies with it, IMO.  But still looks tastey.

Let me know how it turns out!  I bet it could also make a good appetizer, done in little mini muffin cups and with the dressing as a dip!

That looks really good like a quinoa falafel. The sauce is an easy enough fix I can leave the dairy out. I'd have to figure out a different binder than egg more for making it vegan than for allergies.
