I really will hav eto make those in a tiny size as a party app sometime.  They seem well suited to that with the sauce. 

I have had a quinoa/egg/kale breakfast scramble the last 2 days.  Yesterday had a bit of turkey sausage, and today, bacon.  a bit of sweet red pepper, onion and cheese too.  Friend gave me the idea.  it was yummy.  No recipe, just threw it together.

becca (or anyone) do you have any quinoa-fish combos? Like tuna or salmon, have to balance out the mercury content of tuna but I eat it in moderation.

I generally don't like fish.  I sometimes make fish tacos and have quinoa & beans as a complementary filling/side dish.

I imagine one could do a foil covered dish in the oven with fish, quinoa, water, and seasoning. (I'm thinking of a friend who would pair catfish fillets with yellow rice packets in the oven.)  Quinoa cooks in 15 minutes, but doesn't get mushy unless you really overcook it for a loooong time.  So it holds up well.

TT, I like to think of Quinoa as my rice.  I use it in moderation as the rice to other dishes.  Mind you, even if I have brown rice with a meal, I have only 1/2 cup. amd more of the stir fry (or Thai take out). 

So, use it as you might rice, with your usual cuisine. 

Otherwise, I like it in salads.  I dice any veggies, and make a dressing, and use 1/2 to 1 cup cooked quinoa in the salad.  That may give me 6 servings.  a couple of sides for dinner, and a whole meal for lunch for 2 days. 

I tend not to do recipes. 

So, with a piece of fish, I might have salmon, a veg, and a quinoa salad that goes with it, meaning the quinoa is mixed with loads of veggies and a dressing. 

But I am pretty low carb vs most folks.

This looks yummy.  Have not made it.  Typically, with these, I increase the veggies and decrease the quinoa to lower the carbs.  So, I might use baby spinach or baby Kale, chopped, in a larger quantity than the 2 leves of Kale.

Oh, I did not notice that.  I would just improvise with dried cranberries.  Dried cherries plump up very nicely in a salad as well.  I made a cous cous salad once with dried cherries.  It had a balsamic dressing and they got soft and juicy in it as it sat.  it was very good.

what was your recipe?

This one was easy and I think it'll be a base for many things. After making it, I don't think I needed to add broth 1/2 cup at a time and sit and stir. I was using a 4" deep non-stick large skillet --- next time - I'll add 2 cups of broth and let it simmer and not keep a constant stir. Then do the last 1/2 cups separately to keep control of how liquidy it gets.

I also used the new Swanson ZERO SALT chicken stock. It's a pretty good flavor/base.

I'm not even tasting the sage.  Anything that goes with chicken stock is fair game. Next time I might use thyme.
