So we made this one:

http://artofdessert.blogspot.com/2011/10/vegan-vanilla-cupcakes.html

In three 8" pans.  They fell just a bit.  Haven't done anything else to them yet.  Batter was yummilicious.  And I didn't have to worry about raw egg!!

That is the upside of egg-free baking.  I love it when we bake cookies at Christmas (plus the cream cheese-based dough I use is so yummy).

Very nice!  Do you do some sort of soft icing under the fondant?  Or just that on its own?

Nice!

My sister makes vegan cupcakes all the time and they are always so moist and delicious - I'll get her recipes and post them here when I get the chance.  Their flavor and texture is just like "regular" cake, IMO.  Not sure if that would change when made into a full-sized cake, though...

YES!!  And I've started making chocolate chip cookie dough truffles with it.  Scoop the dough into small balls, chill and then coat with your preferred chocolate.  They are a huge hit!!

Will have to keep this recipe in mind for a cake I need to make in February!  Cake looks great

this cookie recipe, make balls of dough (I like small pampered chef scoop for sizing), chill, melt chocolate of your choice, coat cookie dough balls with chocolate, chill and enjoy.  work in small batches.  Then when the bowl of chocolate was getting low and too thick to work with, I mixed in different things to make a bark with it (m&ms, pretzels, marshmallows, candy canes, etc)

This vegan vanilla cupcake recipe is wonderful!  I made them tonight.  DD and friends will be decorating them tomorrow like owls and cats.

We have to avoid dairy, wheat, eggs, treenuts, peanuts, and lentils and legumes.  So we rely on Cherrybrook Kitchens mixes...  our daughter loves making them .. her favourites are chocolate chip cookie mix, cake mix, and brownie mix.
