Easy entree using apples, carrots, or sweet potatoes & vegetarian?

I'm hosting a meal for Rosh Hashana, and I'm looking to make something new.  I'd like to make a vegetarian entree using apples, carrots, and/or sweet potatoes because sweet foods are traditional for the Jewish New Year.  Does anyone have any easy suggestions?

I think you could actually do something roasted with all those veggies plus some herbs. Add a vidalia?

I don't have one -- but there are recipes for apple/onion tarts

You could make a vegetarian tzimmes using all of the above.  I don't have any recipes handy, but you can just google it.  That is traditionally more of a side dish though.

That's what I was thinking, GN.  I googled and came up with tzimmes, which is like throwing everything together.  My kids don't like tzimmes and it's not really an entree. 

I think I'd like to make shish kabobs.  Rosh Hashana is early this year, so it's warm and we can use the BBQ.  Vegetable shish kabobs with sweet pineapple cooked on them sound fun for Rosh Hashana.  Now I need to figure out what to put with it.  It doesn't need to have carrots, apple, or sweet potato, though I'd prefer it.  What's vegetarian and goes with shish kabob?  ???

I've come up with a menu, yeah!  We'll have:  salad, portabello mushrooms, orzo, and shish kabobs of vegetables and pineapple.

I was going to suggest a honey glaze on your kebobs, but it sounds like you've already got it covered.
