Passed a Pecan Challenge!!!

Just have to share our good news --- both of my kids had a food challenge today to pecans and passed.  !!!!!

Now I have to figure out how to use pecans in their diets --- they weren't happy with the taste of the raw pecans during the challenge.  Anyone have a recipe  --- I'm wondering about roasting them or glazing them somehow?

BTW, we obtained our peanut-free pecans from Tierra Farms.  I also ordered walnuts and almonds from them to have on hand for future challenges, hopefully happening soon.

Which brings me to the question:  Can I freeze tree nuts for the future?  Not sure how long they last.

 :happydance: That is awesome!! I know that raw pecans are not good tasting. I'm not sure how to fix that though-I rarely ate them alone before we had kids. Mostly in dishes. They do freeze but seal them very well or they'll get freezer burned easily.

Or toast them and put them on salads.

I'm thinking pecan pie has eggs . . . ?  Does it?  Wonder if there is a milk and egg free pecan pie recipe out there in the universe.

What about spiced pecans, barbecued pecans or candied pecans?  You should be able to find recipes that are milk free for all those.  Pralines?  I'm guessing those have milk, but might be worth checking out recipes to see if you can make substitutions.

Wow, how fantastic that both kids passed a food challenge, let alone to the same food.  That'll make things easier!  :thumbsup:

I like candied pecans in my salad.  Also, there are vegan pecan pie recipes, so they wouldn't use egg.

Candied pecans! 

Pecans in chicken salad if you have a safe recipe.

Our family finds pecans sweet. And the last batch from Tierra Farms was especially so.

We have a Brussels sprouts recipe with pecans and cranberries.

Crushed pecans in acorn squash with maple syrup and a melted butter sub.

We eat a lot of pecans. DS will just snack on them if I let  him.
Me: Sesame, shellfish, chamomile, sage
DS: Peanuts

Mac, how do you store your pecans?  Freezing them is okay, I hope?  We have three large tubs of tree nuts.  How long do they last without freezing?

Obviously I don't store tree nuts, but my mom does.  She keeps them in the freezer and they are fine.  I think frozen they last about a year.

They will go rancid without freezing. Not sure how fast but I think a matter of weeks.
