Iron Chef-ing this week. Trying to NOT go shopping...
We have frozen stuff, we also have:
eggplant (in garden)
chard (in garden)
squash-- acorn, spaghetti, zucchini and delicata (in garden)
basil (in garden)
bell peppers (in garden)
a sweet onion, half a bag of baby carrots,
some Polish sausages
Greek yogurt, some goat cheese,
and olive oil.
I also have some things like dry lentils and brown rice. DH really can't eat rice, and I have no cooktop, so I can use either the microwave or the oven. Or, I suppose, my crockpot or electric skillet.
But pasta is out, unless it's baked.
What to do... what to do...
My plan--
Dinner = frozen green beans, Polish sausage done in electric skillet (with squash? Maybe not-- the family is complaining about the squash). We'll eat some whole wheat flatbread with it.

Tomorrow...
Lentil soup with remaining sausage and baby carrots, done in the crockpot.
Cut polish sausage into rounds - but make them thick. Place in a bowl with cubed onion, acorn squash, eggplant and bell peppers. If you have potatoes, cube up a couple of those. Drizzle with olive oil. Bake @ 400 for 30-40 minutes, stirring occasionally until everything caramelizes. I'm planning to do something like this with kielbasa later this week.
Sounds more like Chopped with a basket of mystery ingredients!

Well.
Still living without my cooktop.
I have just a bit of Polish Sausage... delicata squash, and a few carrots.
Of course, I also have flatbread and other sandwish fixings, which is what I think we're having for dinner.
