This looks yummy. Have not made it. Typically, with these, I increase the veggies and decrease the quinoa to lower the carbs. So, I might use baby spinach or baby Kale, chopped, in a larger quantity than the 2 leves of Kale.

Looks amazing. May make tonight if my poblano is in good shape (I use them instead of bells. Also it fits.). I have a can of lime inagined refried black beans. That might shave off some time, but the texture will be different than if I mash a can of black beans.

A really light meal is a spaghetti squash dish I make with chopped tomatoes, feta, kalamata olives, and I’ll have to think what else.
Also: baked rellenos. Yum. We make them twice a month at least.

I dumped it out of the Instant Pot and am simmering it on the stove top. The quinoa was cooked through, and the sweet potatoes still hard. I think the tomatoes should have gone in at the end.
