My sister sent me the food allergy mama's baking book.  Here's her gingerbread recipe:

1/2 c dairy free marg
1/2 c light brown sugar
1/2 c molasses
1/2 unsweetened applesauce
2 1/4 cu unbleached flour
1 tsp baking soad
1 tsp ginger
1 tsp cinnamon
1/8 tsp clove
1/8 tsp salt

cream marg, sugar, molasses and applesauce.  Combine dry ingredients in another bowl.  Add flour mixture to marg mixture until combined.  chill dough for at least 1 hour.   roll out dough, cut desired shapes and bake on parchment paper at 350 for 8-10 mins.

Here's her icing:
1 c confectioners sugar, sifted
1 tsp vanilla
1-2 Tbsp soy or rice milk
food coloring (optional)

This is the recipe I used, it was easy to work with and everyone loved it, including people who don't like gingerbread.


Ingredients:
1 cup white sugar
1 cup molasses
3/4 cup lard
1/2 cup hot water
2 eggs 6 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
1 1/2 teaspoons ground ginger

Directions:
1. In a large bowl, mix together the sugar, molasses, lard, and hot water until smooth. Stir in eggs. Combine the flour, baking soda, salt, cinnamon and ginger; stir into the batter to make a soft dough. Add more flour if needed. Cover the bowl and refrigerate dough for at least 1 hour, or until firm.
2. Preheat the oven to 350 degrees F (175 degrees C). Roll out the dough to 1/4 inch thickness on a floured surface. Cut into desired shapes using cookie cutters. Place cookies onto ungreased baking sheets.
3. Bake for 10 minutes in the preheated oven, or until cookies appear dry in the center.

I have a recipe that calls for butter.  Can you just substitute dairy free margarine for butter in a cookie recipe?

I'll post it if you want to give it a go...

1 C soft butter (sub dairy free marg?)
1 C sugar
1 C light molasses
5 C flour
2 tsp baking soda
3 tsp ginger
pinch of cloves
1/2 C cold tea
1 tsp vanilla

Cream butter and sugar.  Add molasses.  Add dry ingredients/alternate with adding tea.  Add vanilla.
Chill 4 hours, roll and cut.  Bake at 375 for 8-10 minutes.

Hopefully someone else has a better answer, but we've used graham crackers and made mini houses with them.
