I was skeptical, but my MIL made a cocount cream pie relacing the eggs with silken tofu.  The flavor was wonderful.  The color was off (stark white compared to the eggy yellow), but the flavor was spot on- at least for someone who hasn't had much exposure to eggs in 2 1/2 years, lol!
