Acorn Squash with Stuffing

2-3 Acorn squash (slice ends so they will sit flat and then slice in half, scoop seeds and place meat side down in a baking pan with 1/2 - 1 inch of water)
Bake at 350
(We had monsters - they took 1.5hrs, smaller ones may only need 30-45 minutes)

Stuffing
1/2 cup of mixed rice blend  (I used Lundberg)
1/2 cup of wild rice
(Both took 45-50 minutes to cook so I mixed them together and subbed 1/2 cup of water needed for veggie broth)

In another pan brown (I just boiled with a little veggie broth)
1 onion diced
3-4 cloves of garlic chopped
2 apples chopped
1/2 cup of raisins (I will add more next time, but my family adores raisins)
3-4 stalks of celery
1 portobella mushroom cap or 1/2 package of sliced mushrooms diced

Mix with cooked rice mixture.
Salt to taste
(I totally forgot spices - Em started screaming at this point)
1/4 tsp of sage
1/8 tsp of pepper, marjoram, thyme
1/2 cup of chopped parsley
(My recipe also called for 1/2 cup of pecans)

Flip over acorn squash about 15 minutes before they finish cooking and fill with stuffing mixture.  Cook for additional 15 minutes.  (We did have leftover stuffing mixture which I served at the table without baking - it disappeared quickly).

DH added a sprinkling of brown sugar to the boys mixtures - it was awesome without though.  And if you are looking to add meat to this meal, my MIL and I think crumbled sausage would be awesome.

DS1 was so so on it and Em was wary but loved when my MIL fed her as long as it had a raisin in every bite.  DS2 wants me to serve it to him for breakfast, lunch and dinner LOL  The adults really enjoyed it and I think I have found a versatile stuffing mixture that will satisfy all allergy needs :)

Butternut Squash and Apple Soup
(When I make vegan, I use vegetable broth and skip the chicken)

2 Butternut Squash
3-4 Granny Smith apples cubed (I have used a variety, most like tart to offset the sweet of the squash)
1-2 onions diced
Chicken (I buy bags of flash frozen so I use the same amount of meat my family will eat in one serving)
1 carton of broth (chicken or vegetable)
Pumpkin pie spices (or think in that direction)
Salt to taste

Preheat oven to 350  (I try to cook the squash earlier in the day because it is easier to handle cooled when scooping for the soup)
Half and scoop out the seeds of 2 butternut squashes (use a mallet to help me get the knife through)
Prick skin with fork
Place meat side down on a baking pan
Bake for 30-45 minutes

Brown onions and apples in oil (or butter) until onions are translucent
Add carton of broth and chicken
Allow chicken to cook through (I will add more water if needed to cover chicken, but not an abundance)
When squash is done, scoop out the meat and add to soup.
Using a stick blender or blender, achieve the consistency you are looking for (ours comes out like baby food mush).
Add spices.

Enjoy

Other recipes have you skip the roasting of the squash by peeling and adding to the water.  My SIL and I agree that the roasting adds something.

Autumn Stew

3 cups of water or broth
2 T soy sauce (I honestly forgot this but could see how it would add a good taste)
2 onions, chopped
2 red bell peppers, diced
4-8 garlic cloves, minced
1 pound squash (recipe called for kabocha, I used butternut)
1/2 package of chopped mushrooms or portobella mushroom cap chopped
1 15oz can of chopped tomatoes
2T Mexene seasoning (or 1.5tsp chili powder, 1/2 tsp cumin, 1/4tsp black pepper)
1 15oz can of kidney beans (if you like beans you can double it or add diced potatoes instead)
1 can of corn (recipe called for 1.5 cups of fresh or frozen)

Heat 1 cup of water/broth and soy sauce in a large pot, then add the onion, bell pepper and garlic and cook over medium heat until the onion is translucent and most of the water evaporates. 

Cut the squash in half and remove it's seeds, then peel and cut into 1/2 inch cubes (I will be honest that my knife skills stink and this was hard - next time I think I will micro cook it half the time to make peeling easier).  Add squash (and cubed potatoes if you use them), mushrooms and remaining water/broth to the onion mixture, along with the tomatoes in juice and the spices.  Cover and simmer until the squash is just tender when pierced with a fork (about 20 minutes).  Add the kidney beans and corn and heat.

I served it with quinoa (I subbed 1/2 of the water with remaining broth).  Could use rice or potatoes (if you don't use in the stew).  Chicken would taste good in this meal.

My MIL and I liked this one, as did the boys.  It was a little heavy on strangeness for Em (I should really switch seats with my MIL who can turn on the charm to get Em to eat).  DH liked it, but didn't care for the quinoa.  Honestly when made with the broth, the quinoa almost tasted like brown rice (DH doesn't care for rice unless it's in a pudding though).

Trying the squash soup.  On the stove now.  Just cubed and added the butternut to the water with the onions and apples.  it was already peeled and cut in large chunks, so I could not roast in in halves.  Also didn't want to dirty more dishes, hehe.

DH bought buttercup squash.

My intent was to boil the squash, then mash with butter, salt, and pepper.  Can buttercup squash be cooked this way?

I found some nice baking recipes with Apple, but that would be difficult for such a crowd, with all the other stuff cooking, plus I 'd have to buy more.

That's kabocha! I always throw chunks in rice to cook together. Most times I eat the skin as long as I lightly scrape the outside. It's very egg-yolk like.

Buttercup is just another type of hard winter squash --- so do with it like you would for acorn, butternut, kabocha, carnival, etc.

Slice it in half, scoop out the seeds, bake it upside down. Then stuff it and bake it right side up.

We use a kit of different stuffings. Apple is great. So are cranberries. Sunflower seeds, breadcrumb, raisins, mushrooms.

That really does sound good.  Most recipes I've found include apples and brown sugar.  But, that's not going to happen today.

We ended up buying a butternut squash, which will be done for tonight's dinner.  Then the buttercup will get cooked in the oven when there are only three of us.

Here's my favorite recipe--it's Mooswood's Comprehensively Stuffed Acorn Squash:

We adapt it for our allergens (so in this recipe, no sage, no celery, and pf walnuts, but we rarely have those).

There's another recipe for acorn squash with an apple and cottage cheese filling. 



Or what I mentioned above, I would balance out the fruit. So two of the three: apples, cranberries, raisins.  Plus sauteed onions or shallots, mushrooms, fennel (we use in place of celery), pf pecans or sunflower seeds, garlic, squash bits.

Buttercup squash will never happen again.  The apples I stuffed it with were good! but the squash.  Yuck!

The butternut squash we did for Thanksgiving was delicious.  Bit expensive though.  Next up, acorn squash.  I'm just going to boil and mash with butter and seasoning.

Oh duh--you cut it up first. I was imagining putting the whole acorn squash in, lol.


We eat a lot of squash in the fall--different varieties, whatever we find at the market. I love turban, spaghetti, acorn, butternut and all the different kinds we see at the farmers market whose names I don't know. I know roasting makes them sweeter, but that's all we've ever done, typically halved or in thirds. For making enchiladas I've also roasted butternut that I've cut out.

How does boiling it affect the flavor? Having it mashed up like potatoes sounds good. We do mashed sweet potatoes.

Mac, just like with most vegs, boiling them results in a blander flavor than roasting or other dry methods.  However, I have found boiling in chai tea makes butternut squash yummy--I would think almost any winter squash would taste good that way.

We roast all our squash. We either cut it in half (spaghetti squash) or in thirds, which we can do with acorn and turban. Or with acorn we cook two cut in half. And that gives us an extra one for lunch!  :)

I don't season before as I usually do something with it after. It'll take trial and error the first few times you cook it. You might go through a 15 minute cycle of pulling it out, seeing it it'll shred...or if it's still too crunchy...and then popping it back in. It should shred up easily.

My fav recipe after cooked...

I'll drain it, let it cool in a collander. It can be very watery.  Saute up some spinach in olive oil, season with sea salt and pepper.  Maybe a little garlic found it's way in too.  Then I'll put in the spaghetti squash to heat up, add a little more evoo and then more salt as needed.  Bacon. Add in some cooked chopped bacon (but last thing! else it will ALL taste like bacon!)  Then I'll toss while hot with some freshly shredded romano cheese.  However cheesy you like it!

I like this recipe b/c I can still taste the spaghetti squash :)

Acorn squash with stuffing.

Cut squash in half, scoop seeds, roast face down in a pan with 1/2 inch of water at 400 degrees for about 30 minutes.

Stuffing - cook 1 cup of wild rice mix with chicken broth.  Saute 1lb of bulk Italian sausage (can be omitted), one onion chopped, three celery stalks chopped, 1 apple chopped and handful of raisins.  Add wild rice mix.

Flip squash over after 30 minutes and fill with stuffing mix - cook for additional 10-15 minutes.

See my Moosewood recipes above.  But we have them lots and lots of ways.  Whatever we have on hand and strikes our fancy, we use. At Thanksgiving, we make sure and use cranberries inside.  Ours are all vegetarian.  :)

Smack squash in half with machete or butcher knife.

Scoop out seeds, toss with olive or coconut oil and smoked salt.  Spread on a flat baking sheet.  Roast at 300F for 10-20 minutes, stirring every five, remove as soon as they just begin to appear toasted.

Toss rest of beastly gourd into compost.

Harvest Pilaf Acorn Squash with Fall Greens
Serves six
Prep time: 1 hour

Ingredients
Two acorn squash, sliced in thirds lengthwise, seeds discarded
1/2 c. wheat berries (whole; adjust cooking time down if using cracked wheat)
1/4 c. wild rice (the real kind that takes 45 minutes to an hour to cook)
1 T. whole flax seed
Salt and pepper
1/4 t. ground ginger
Pinch of nutmeg
1 apple, cored, peeled, chopped coarsely
1/2 lemon (juice only)
1/2 orange (juice and 1 t. zest)
1/4 c. dried cranberries
1/4 c. butter
1 medium shallot, minced (will be anywhere from 2-4 T.)
1-2 t. maple syrup, to taste

Side dish
1 lb. spinach, chard, or kale
Butter, salt, pepper, tarragon

Instructions
1. Preheat oven to 350F.

2. Combine grains, seeds, salt and spices in 1 3/4 c. water in a small saucepan. Bring to a boil, then simmer 45 minutes to 1 hour until grains are soft and plump. Water will not be completely absorbed.

3. Sprinkle squash sections with salt and pepper and bake open side up in a wide dish until tender, about 50 minutes.

4. Peel and core one apple, then dice coarsely. Put diced apple in a bowl with juices of half a lemon and half an orange, and water just to cover. Microwave for two minutes to soften apples.

5. Meanwhile, mince garlic and sauté in 1 T. butter 3-4 minutes until golden. Remove to mixing bowl and stir in the orange zest. Put remaining butter and the maple syrup in the bowl, too. Set aside.

6. Add dried cranberries to the simmering grains.

6.5 Now go have a drink, set the table, check email.  Really, you've got nothing but time now.

7. Once grain is done and the squash is tender, drain the grains and apples, and toss both in the mixing bowl with the butter, shallots, maple syrup, and orange zest. Check seasonings to taste.

8. Divide pilaf evenly into squash sections and put back in oven for ten minutes while you sauté some fresh chopped spinach, chard or kale with a little salt, pepper, butter and tarragon. Add 1/2 c. cream if you want to make a sauce for the greens. Serve squash and greens with a good fall wine like a big, fruity Zinfandel.


(Editor's note: This is DH's recipe, but I have no idea who possessed my husband to write the last sentence. We did not have a Zin last night, nor have we bought one in years. But it does sound like a good pairing!

Tonight's acorn squash as a side dish - fantastic.

Preheat oven to 400.

Cut acorn squash in half lengthwise.  Scoop out gooey stuff, and brush with an olive oil/butter mixture.  Sprinkle a little salt and pepper in the cavity as well.

Chop up an apple and some onion, toss with brown sugar and a little more salt.  Fill cavity of squash.

Place in baking dish filled with a little water so bottom of squash doesn't burn.  Bake for 1 hr - 1 hr and 15 minutes.


We're having this with mushroom Agnolotti in a tomato/zucchini/mushroom sauce.  (YEs, it was time to clean out the veg bin.  Could you tell?)

Tonight's leftover improv:

Acorn squash, cut in half length-wise
Left over baked chicken (1 piece) shredded
Garlic
Onions
Tomatoes
Canned chilis, drained
Canned black beans, drained
Salt, pepper, cumin, hot sauce
Shredded sharp cheddar cheese

I baked the squash in the oven after scooping out the innards, and rubbed it with olive oil, salt and pepper.  Put it in the oven @ 400 for 45 minutes.

Meanwhile, I cleaned and boiled the seeds, then toasted them.

Then I sauteed some onion, garlic and tomatoes.  Added the canned chilis, black beans and chicken, then seasoned the mixture with salt, cumin and hot sauce.

After 45 minutes of roasting the squash, I added the above mixture, sprinkled some cheese on it, and put it back in the oven for 15 minutes.

DH will probably scoop it all out and eat it in a whole wheat tortilla; I'm not a big fan and don't need the extra carbs so I'll eat it as is.

And we'll have some leftover broccoli rabe with it as well.  Lots of Vitamin A tonight, LOL.

That sounds delicious :)

Tonight was boring acorn squash - cut in half, generous helping of butter, bake while I figure out the rest of dinner.  Add brown sugar at the table.

I got a steal on squash last week at Aldi's.  Tomorrow is roasted butternut squash.  Sunday was butternut squash, apple and chicken soup.

We are operating on Operation Veggie this week, aka operation cleanse.

OooOoOooOoohhhh - I have a new recipe.

Wash and clean well the outside of a delicata squash. Cut in half, scoop out seeds. Cut into 3/4" cubes. Cut up some shallots into thick slices, or use vidalias and slice into thin wedges. Have some cooked bacon handy. Fresh parmesan or romano cheese too (but not needed).

Get some extra virgin olive oil heated over medium heat in a deep skillet. Saute/brown up the squash and onion/shallot. Sea salt/pepper to taste. Microplane some cheese over it before serving.

Very simple dish. Yummeh.

GN we'll have to try a vegetarian version of that. I often use butternut squash (with spinach and onions) in my layered enchilada casserole (or enchiladas if i take the time) I find squash and sweet potatoes work very well for that kind of thing and often use both.

Okay--when I need a quick dinner I'll use frozen cubed butternut squash and frozen cubed sweet potatoes. They just work so well with black beans and spinach. I'll use the Frontera tomatillo salsa and/or their guajillo salsa (using both works well).

Don't toss those pumpkin seeds! Toast or roast pumpkin seeds in your microwave in no time at all. They can can be salted or spiced to suit your palate. The shells are edible and are a good source of fiber. Use this method with other seeds such as acorn squash and butternut squash. Pumpkin seeds are also known as pepitas. Microwave temperatures vary, so keep an eye on them and stir often.
Prep Time: 10 minutes

Cook Time: 8 minutes

Total Time: 18 minutes

Ingredients:

1 cup pumpkin seeds
1 Tbsp olive oil or butter
Optional: Salt, garlic powder, onion powder, seasoned salt, or other seasoning of choice
Preparation:

Rinse pumpkin seeds. Use your fingers to remove all the pulp. Drain pumpkin seeds and discard pulp. Spread out on a cookie sheet to dry overnight.

Place butter or olive oil in a microwave-safe, rectangular baking dish. Heat in microwave on high for 30 seconds. Add pumpkin seeds and toss to coat. Spread seeds out evenly in the bottom of the dish.

Microwave on high about 7 to 8 minutes or until seeds are toasted a light golden color. Be sure to stir every 2 minutes as they are cooking. (Microwave temperatures vary, so keep an eye on them and stir often.)

When done, sprinkle with salt, garlic powder, onion powder, seasoned salt, cayenne pepper, or your choice of seasonings. Toss to coat.

Cool pumpkin seeds before eating or storing. Store in an airtight container at room temperature up to 3 months or refrigerate up to 1 year.

If you like your toasted pumpkin seeds extra-salty, soak overnight in a solution of 1/4 cup salt to 2 cups of water. Dry an additional day, then proceed as above.

Last night I roasted the seeds from a butternut squash. I did them in microwave (always did pumpkin in oven).  They turned out good. Slightly different flavour then pumpkin.

Initially I was like where do you find this precubed squash because the best I can do locally is a little tray of mashed and masticated squash or on the lucky occasion, I can find precut in the produce section.

But I ran into the bagged cubed frozen squash on Monday.  Yup, I may have to move to NJ just for that reason alone.  My hands are starting to react so badly to chopping squash that I have to wear dish gloves (that are used only for food prep).

It's one of the things I keep in the freezer all the time pretty much. It makes it very easy to do layered enchiladas, which I'll do every few weeks. Squash goes so well with spinach and I'll pair then in enchiladas (typically fresh spinach but this week used frozen).

SL have you found an easy way to remove pumpkin bits from the seeds?  I haven't done pepitas in a number of years because it's such a pain to get the pumpkin off.

I just keep rinsing the seeds and really getting in there with my hands.  Another friend swears by letting them soak in warm salt water for an hour.  I have never found it to be that difficult though :/

The first time I made this particular recipe, I followed this closely (we do real enchiladas several times a year--with veggies).  Except I added either Guajillo Salsa or a Salsa Verde.  I really like using butternut squash (will use frozen cubed), sweet potato (will use frozen cubed), and spinach (prefer fresh but will use frozen if need be--thawed and drained/squeezed).

I do keep those salsas on hand so I can make this--it's so fast. Though when I made it this week, I just used cans of Rotel--one can per layer.

This week I put some picante sauce on the bottom, then a layer of corn tortillas (baked a bit first), then a mixture of squash, shallots (sauteed). Rotel layer. Cheese. Layer of tortillas then a black bean (drained and rinsed)/spinach layer. Rotel, cheese, tortillas, cheese.

Butternut squash chai soup

I made this one up, no real recipe, but it is good, and easy.  And vegan if that is something you are looking for.

Cut butternut squash into large chunks, put in large pot.  Add just enough sweetened chai tea (just tea and sugar or other sweetener, no milk) to cover.  Simmer until squash is tender.  Use an immersion blender until desired consistency (you can make it really smooth or leave some small bits in it).  Add salt, pepper to taste.  You can serve with a garnish, like pepitas, or creme fraiche (creme fraiche would mean it is no longer vegan).

I ate some fabulous roasted pumpkin on arugula at Whole Foods the other day.  It had a fruity, perhaps balsamic dressing.  There were walnuts and Gorgonzola.  I did not know I could eat the rind!  It was fabulous.t

And I forgot to go back to look at the tag to write down all the ingredients so I could try to make my own version at home (sans walnuts).

Hoping they have it again next week when I'm back down that way . . . gonna take notes.

Anyone ever eat / make something like this?

Yes. DH makes something like that. We use feta, as I cannot do blue cheeses of any kind (DS and DH love them). And we use pecans. :) But I think (safe) walnuts would be better with that combo--but are so very hard to find.

I wonder if safe sunflower seeds would work nicely.

this thread reminded me of my delicata squash recipe - had it for lunch...this time added in sauteed spinach and used a shredded gouda type argentinian cheese.

Cut delicata into half rounds and saute in olive oil over ML heat. It takes a while for it to cook and you don't want it to brown too early. You do want it browned, so if it's cooked through and not quite brown/crispy edged yet...crank the heat and brown it up.

Meanwhile, saute sliced shallots or sweet onion in olive oil in a separate pan on medium heat to brown up.

When the squash is almost done, saute up some fresh spinach in olive oil on med-high heat. I re-used the shallot pan.

Cut up squash into bite size pieces then toss everything together. Salt as needed. Lay out on plate and top with finely shredded cheese (I used my microplane).

Could probably add in some heated up/drained black beans for protein and might even be nice all tossed up into some cooked quinoa that was made with a good veg broth or chx broth.

Actually yes --- I will make that for lunch this week with quinoa and black beans!

I have never had delicata sqush.  I had to google it!  Heard of it but not had it.  Do you peel it for the above?  It looks like it would be a bear to peel.

Nope - you don't peel delicata squash. It's a thin skin and cooks up nice. You should try delicata --- if you have a farmers' market around you - it's the season and they are SO GOOD fresh from the farm!

I am in the mood for some low carb, but stick to your ribs sort of food.  Squash typically fits into that sort of craving nicely.

Fall really brings out the "stick to your rib" cravings.  I'm trying to chill on the carbs too, because I feel so shaky and icky when I eat too many of them, but have a hard time feeling satisfied without them.

Just made lunch for the first part of the week: "Killdeer Salad" - roasted carnival squash, crispy pancetta, spinach, slow-roasted shallots, sweet corn, micro-planed asiago all tossed with quinoa, sea salt, and a wee more olive oil. All produce fresh today from Killdeer farm!

I roasted the carnival squash in halves --- thinking I'd be stuffing it with the quinoa mix...however...it was just plain easier to scoop out the flesh, roughly break up, and toss into the quinoa salad.

INGREDIENTS
2 pounds yellow summer squash
7 tablespoons butter
1 large onion, chopped
1 large clove garlic, chopped
½ red bell pepper, chopped
½ green bell pepper, chopped
1 jalapeño pepper, seeded and chopped (optional)
4 slices plain white bread, toasted
24 Ritz crackers, crumbed in food processor
½ pound sharp cheddar cheese, grated
4 large eggs, beaten
½ cup heavy whipping cream
1 teaspoon sugar
1 teaspoon salt
¼ teaspoon cayenne pepper

PREPARATION
Heat the oven to 350 degrees. Butter a 2½ -quart baking dish. Cut the squash into ½ -inch-thick slices. Cook in boiling, salted water until tender, about 10 minutes. Drain. Purée in a food processor.

Melt 6 tablespoons of the butter over medium heat. Add the onion, garlic and peppers and cook until just tender. Meanwhile, crumb the toast in a food processor, melt remaining butter and toss together.

Mix the squash purée, onions, peppers, garlic, cracker crumbs and cheese. Stir in the eggs, cream, sugar and seasonings. Blend well. Pour into the baking dish. Top with bread crumbs and bake until browned, about 40 minutes.

So last night I made "zoodles"...take a vegetable peeler to a zucchini and make ribbon like noodles.  Then steam them for a couple minutes.  I put a homemade spaghetti sauce on them with leftover grilled chicken.  I didn't love them, DH did.  I need to borrow my sister's spiralizer and see if I like them better that way...otherwise, I prefer spaghetti squash...yet these take no time to cook.

I think I prefer spaghetti squash.  I have a spiral cutter.  Zucchini leaves a funny taste or feel in my mouth.  Hard to explain.  Hubby loves zucchini.  I like spag squash for making a lasagna sort of dish.  I just layer the typical lasagna items with the squash(cooked).  Bake like a casserole.

Have you tried a julienne peeler for zucchini?  It is just like a regular peeler, but has little sharp lines on the blade.  It makes thin little ribbons, but with the same motion as peeling.  And straight, not spiral.  I love mine.

Yesterday I was standing in Bed Bath and Beyond looking at the hand held spiral cutter and it's more expensive counter model with a crank handle and thought - since I love spaghetti squash I might like this.  And then I thought, that's a lot of work.  Spaghetti squash, cut in half, scoop seeds, and bake.  That does not take me long and I don't have to babysit it while it bakes.  So I didn't buy it.

I pierce my spaghetti squash with a knife in a few spots and nuke it whole.  But I don't have an exact time.  Maybe 6 minutes or so.  When it begins to feel soft, I let it rest and then cut it and pull the stings when I can handle it.

The spiral cutter is fun, but definitely a limited gadget.  I also do potatoes for the kids and they LOVE them.  Spirals and tossed with a touch of EVOO and seasoned salt, and in the oven until browned and crispy.  I toss a time or two during the baking.  Maybe did a carrot or two before, but they need to be very large.  Could do large beets on it too.

Have been enjoying fried zucchini the past couple weeks.

IN case no recipe  / cooking instructions for this previously in this thread:

Buy LARGE zucchini (3" diameter or larger -- might have to get at farmer's market if don't grow yourself)

Cut slices about 3/4" thick.

In one pan:
A large scoop of plain bread crumbs (maybe 3/4 c)
a couple tbsp of cornmeal
a tbsp grated parmesan
parsley, other herbs as you like,
s&p

In other pan:
2 eggs, beaten
a little water to thin
s&p

Heat nonstick skillet to med-high.  Add some oil and 1/2 Tbsp butter . . . don't burn the butter.

Dip the squash in egg mix and then into the crumb mix, coating both sides.

Fry until golden on 1 side, flip, fry until golden on other.  Should be crisp tender . . .


Eat while hot.  Yum!

Baking it always makes it drier and less wet (which I prefer)

Today I cooked the second acorn squash that I had (they were on special at the discount grocery for 40 cents - each, not per pound) as a side with an orange juice, brown sugar and cinnamon glaze.

DH and DSD like it.  DS used his fingers to scrape off just the top layer with the glaze and eat that.
