Title: Looking for an almond cupcake recipe

Yes, I realize this is probably not the best place to ask.

Planning to make mini cupcakes, filled with raspberry jam. I can't get proper almond flour but have a source for safe sliced almonds, which I can toast and hand-grind reasonably finely.

Personally, I would use my favorite vanilla/plain cake recipe or mix, and add almonds, and a bit of almond extract (if from scratch, sub almond extract for the vanilla, if a mix, just add a little almond extract).  I very rarely use the recipe or mix as is--I almost always add other flavors, and that is what I'd do (and I have had very few "failures" with my baking).

I believe I have an almond cupcake recipe in my vegan cookbooks -- I can go look if you want.  (too lazy to get out of the chair at the moment, but you say the word and I'll go look, lol)

I buy them at Trader Joe's--raw, whole and sliced. They read as safe before they changed labeling, and I've not had problems with them, but you may want to call just to be on the safe side.

Ended up going with a yellow cake mix and almond extract--didn't have time to get almonds. Came out okay, but next time, I'm going to try it with the almonds or almond paste as well as extract.

If you have safe almonds, they are wonderful ground up in shortbread-ish cookies.  I have a wonderful Linzer heart recipe, if you like that sort of thing.  Linzer is almond, right?  It has been so long I forget, but they were one of our fave cookies.  Filled with raspberry jam and dusted with powdered sugar.  Melt in your mouth texture.
