Wow, I just saw this has no replies, and I have since found TWO great waffle recipes.  Someone in my local group was asking for them, so I figure I'd post therm here as well, for reference.

"Regular" Waffles
I was able to make an 'all-purpose' flour mix that seems to work well in place of the Enjoy Life mix:
1 cup brown rice flour
1 cup millet flour
½ cup cornstarch (or tapioca starch)
½ cup chickpea flour

The the rest of the recipe goes:
1 tablespoon baking powder
½ teaspoon salt
2 ¼ cups milk of choice (light tinned coconut milk for us)
⅓ cup canola oil
3 tablespoons maple syrup
½ cup mini chocolate chips (optional, but a fun treat)

Mix the dry together.  Mix the wet together.  Add the wet to the dry.
Spray the waffle iron each time.

Note: If you can have wheat, you can use 2 ½ cups of unbleached all purpose flour instead of the gluten-free mix above.

Oat Waffles
3 tablespoons ground flaxseed
6 tablespoons water
   Let sit until it gels
3 cups oat flour (we use Only Oats brand)
4 teaspoons baking powder
1-2 teaspoons cinnamon (if you wish)
1 teaspoon salt
1 ½ cups coconut milk (we use one tin of light coconut milk)
1 tablespoon apple cider vinegar
¼ cup maple syrup (optional, though we sometimes use 2 tbsp)
¼ cup canola or melted coconut oil

Mix the dry together.  Mix the wet together.  Add the wet to the dry.
Spray the waffle iron each time.

As Namaste waffle mix is $10 per box where I live, as is Enjoy Life all-purpose flour, it isn't a sustainable option for our weekend waffle tradition.  I am looking for a new recipe that actually works, as the few I have tried from online searches have all been duds.

I am looking for a recipe free from:
Wheat
Potato
Tree nuts
Peanuts
Dairy
Egg
Sorghum

I plan to try the Elvis Waffle recipe in the most recent Allergic Living when we have a reliable all-purpose flour mix recipe... Since the prepackaged stuff is so expensive.
