The family really, really liked these, DSD and DS prefer them over ground meat tacos.  I did not taste them, allergic to lentils.  These are vegan if made following the recipe.

Things I did differently:
Used chicken broth instead of vegetable because that's what I had.  Obviously, this makes it not vegetarian.
Added minced garlic
Used soy sauce instead of coconut aminos because I don't have coconut aminos
Used lime juice instead of apple cider vinegar
Left out the parsley
Added more spices, whatever I had out that looked good

Served with cubed avocado, chopped red onion, chopped fresh cilantro, sliced green onion, tomato salsa, and shredded pepper jack cheese.  We used flour tortillas.

My slow cooker took really, really long to cook the lentils through, they didn't finish in time for dinner, so we had them the second day.  However, I had it in my older slow cooker (1980s-ish) which cooks at a lower temperature than modern slow cookers - would probably cook up in time in one of those.
