MaryM- don't know if these will work for you...but maybe. I freeze them individually so I can pull one out when I need something chocolatey while trying to avoid full sugar sweets. If you are not eating sugary things, then I think they are great. But compare them to a regular brownie and no so good.
Nonstick cooking spray 1 can (15 oz) chickpeas, drained and rinsed (can use cannellini beans,they make a smoother texture) 1/4 c butter, melted or extra virgin coconut oil, melted 2 large eggs 1/2 c maple syrup or raw honey 2 tsp vanilla extract 1/2 c unsweetened cocoa powder 1/2 tsp baking powder 1 pinch sea salt 1/4 c semi sweet or dark chocolate chips
Preheat oven to 350. Lind 9x9 pan with parchment paper, lightly coat with non stick spray. Place chickpeas, butter, eggs, maple syrup, vanilla, cocoa powder, baking powder, and salt in blender or food processor, blend until smooth. Add chocolate chips, mix by hand. Spread batter into pan. Bake for 25-28 minutes or toothpick comes out clean. Cut into 16 squares.
