Wish us luck tomorrow. DD is having another baked egg challenge. DD's egg RAST was down to 3.65 when she was tested for inclusion in a clinical trial. Her number was too low to include her in the study, but the upside was an earlier date for her baked egg challenge, which had been scheduled for November 2015.
I really think I'll need the luck more for getting DD to adhere to the daily dosing after the challenge.
Good luck!
Good luck. Break a egg!
(Sorry. That was awful, I know.)
How exciting and stressful! Lots of luck!

Good luck Maeve! I'll be peeking on my phone at work. :)
Oh, goodness, tomorrow. Yes, yes. :luck:
Good luck!!!
ooooh, good luck!!! :crossed:
:crossed: again this morning across the miles
DD is four doses in and everything is going well. She's had the equivalent of 1/16 of an egg. We've created a monster. She loves the taste of the cupcakes.
I am so, so happy it's going well. And that she loves them!! That will make staying with the daily dose much easier.
We're up to an 1/8, which is where we'll stop, and there are no problems.
:happydance:
 Poker rules. Lock in the gains.
Congrats to DD.
We have been discharged. Our starting dose is 1/8 of an egg. DD had no problems, and she loved the cupcakes. She's eager to do the baked dosing.
Great news!
Great news! Congratulations!!!!
Eggcellent!
Congratulations!

So Maeve how did yesterday and today go for dosing? Does it end up being one whole cupcake?
DD decided not to dose yesterday. She'll dose today but we'll wait until after school. She needs to get a minimum of three doses in each week. We're looking at muffin recipes, etc. to mix things up a bit.
Right now, the dose is about 3/4 of a cupcake from the batch I made for the challenge. How much depends on how many eggs in the recipe and the yield. I was able to make 20 cupcakes from the batter the other day. Of course, that leads to math challenges for me. We were told by the nurse that it needs to be 1/8ish for the dose. So the 3/4 of a cupcake will be in the ballpark. I'm thinking sheet cakes might be the easier way to dose.
Oooh---Texas Sheet Cake (obviously without the pecans) could be lovely for that. It is soooooo good.
For my DD it was brownies.....she was happy dosing with those.

We can't do brownies yet per Johns Hopkins' protocol. They are not cooked enough to change the egg protein. Once we get to a higher dose, we'll be able to introduce brownies, casseroles, pancakes, waffles.
Wondering how things are going.
Things are going well--much better than a few years ago. So far DD has been dosing every other day. We baked devil's food cake cupcakes over the weekend. She doesn't seem to care for them but her complaint is that they're not chocolatey enough. So I'm going to research some not from mix recipes and maybe add some chocolate chips to a recipe. A 1/8 of dose is such a pain to figure out in terms of how much is in each cupcake in a batch of 20 (when the recipe includes 3 eggs). It's just slightly more than 3/4 of a cupcake. We give her 3/4 of a cupcake but there's half a cupcake left after portioning the doses. I'm going to see if I can make the batter in 8 x 8 pans which will make it easier to portion.
There have been no complaints of any stomach aches, which is what she complained of when we tried this previously. This all makes me very hopeful especially because her egg RAST had declined so much in the past year on its own.
I'm glad things are going well! Here are some Texas sheet cake recipes (w/o pecans of course). I believe these all have two eggs, which should make the math simpler anyway.

This actually uses cocoa, not Betty Crocker mix:

You know meave, there are also mini cupcake tins. I have no idea how that would be different. I would have to do the math what you've been dosing in excel. Thinking about it makes my head hurt. But in case two of the smaller cupcakes would equal the dose, I just thought I'd throw that out.
Okay--I found this:
The volume measurements listed here are total capacities, not necessarily recommended fill capacities.
Rectangular pans ~
11" x 7" x 2" rectangular pan ~ 6 cups
13" x 9" x 2" rectangular pan ~ 15 cups
Loaf pans ~
9" x 5" x 3" loaf pan ~ 8 cups
5-1/2" x 3" x 2-1/2" mini loaf pan ~ 2 cups
Muffin pans ~
1-3/4" x 3/4" mini muffin cups ~ 2 tbsp
2-3/4" x 1-1/4" muffin cup ~ 1/4 cup

This is a handy dandy converter:

So 4 tbs are in 1/4 cup. So two mini muffins equal a muffin. Hmmm. That's not very helpful. I guess that would be about 1.5 mini cupcakes, so less for you to have to eat. :)
