I have a sausage stuffer. Anyone ever make sausages?

The instructions say: “If using natural casings....”

Where would I buy them? Butcher? Grocery store butcher?

What other kind is there? And where would I buy them?

I googled and found instructions to make breakfast sausages with no casings.

I may like my new grinder.

Ive only made breakfast sausage patties from ground turkey. Never stuffed it into casings.

I have a great spice mix recipe for making sausages
I do the ground turkey patties
it's probably posted here somewhere but I will post it if you want it
it's very good  - and can be taken in dif directions flavor profile-wise - but I like it just as is
