Tonight - Grilled Chicken, grilled veggies (onions,peppers, portobellos, asparagus), garlic bread.
Monday - Grilled Salmon, rice, asparagus
Tuesday - Pasta w/turkey sausage, onions, peppers, mushrooms, tomatoes and garlic.   Salad.
Wednesday - Rosh Hashana dinner - brisket, noodle kugel, garlic green beans, gefilte fish, chicken soup w/matzoh balls, challah, apples & honey.  Chocolate honey cake for dessert.  Fruit salad.
Thursday & Friday - ???  We're going to be on the road.

Need to get better at planning...this week:

Sunday - dinner at mom's :)
Monday - pesto chicken with rice and broc
Tuesday - quesadillas, beans, salad or carrot sticks (baseball/guitar night)
Wednesday - veggie burger, homemade mac-n-cheese, salad
Thurs - breakfast for dinner - pumpkin pancakes, turkey bacon, eggs, fruit
Friday - homemade pizza
Saturday - chili/cornbread

oooh, someone mentioned chicken and dumplings........that sounds lovely.....

have to plan this as trying not to waste the food and make it all last etc. etc etc.

so, tomorrow is sunday.

roast beef, (no yorkshire pudding any more as we have gone back to being a eggless house. :'( 
roast potatos and  parsnips,  cabbage, peas , carrots, gravy, and horseraddish sauce.

apple  and pear crumble  and custard.

monday.
beef , mushroom pie. with green beans.
(trying to use leftovers up)

tuesday.
pork chops with sage and onion stuffing, mashed potatos, and a green veg of some sort.

wednesday.
chicken oven baked with oilive oil, basil, garlic, peppers etc served with pasta and green salad.

thursday.
baked potato, oven baked sausages , baked beans in tomato sauce.

friday.

minestrone soup with beef meatballs.

now , am not too happy with this menu, not very well balanced , no brown rice , heavy on the potatos so am not planning a huge range of carbs, and no fish, and  sausages which isnt a very healthy meat. so am not too impressed with this weeks food. must try harder next week, and plan chicken and dumplings.......

Sunday - Grilled chicken cutlets, grilled veggies, baked beans.

Tonight - Stuffed chicken breasts (mozzarella, spinach, sundried tomatoes), potatoes (was supposed to be Polenta, but damned "shared facility"  >:() and sauteed green beans.

Tues - Pasta with fresh mozzarella, tomatoes, basil, garlic; salad.

Wednesday - Whatever fish looks good, roasted squash, cauliflower and potatoes.

Thursday - Bean and veg burritos, guacamole.

Friday - Pizza!

Tonight - Pot Roast (sirloin tip, onions, carrots, potatoes--take some of the juice to make gravy for me)
Asparagus with garlic
leftover challah

Tuesday thru Thursday - leftover Pot Roast as long as I can, then Beef Barley Vegetable Soup, might throw in Chicken Fried Rice (have leftover rice from meals this past week) or leftover Pasta if there's a rebellion  :rant:
assorted breads as necessary

Does anyone else plan meals like I do?

yes. i do!

sunday was roast lamb, roast potatos, mint sauce, peas , carrots, greens, gravy.
apple pie and custard.

creamy leek and carrot soup, baked potato, and oven baked sausages. ( some like the soup, some hate it  so this sort of works)

sheperds pie, savoy cabbage , gravy.

roast chicken with garlic, ginger, wine, rock salt, paprika etc. ( if its in the larder i will throw it on sort of meal.) 

oven baked fish, veg rissioto.

beef curry and rice.

What I meant by plan is that I cook a large meal and think how many ways I can use it for other meals during the week...and how long I can get away with it before the complaints begin!  For example:
 
Sunday - Pot Roast with all the trimmings
Monday - Leftover Pot Roast with another vegetable, might add salad
Tuesday - Leftover Pasta from Saturday's dinner, salad, garlic bread
Wednesday - Soup made from the roast leftovers, salad, homemade biscuits
Thursday - Leftover Soup, different homemade bread, maybe a dessert to ward off the complaints of having leftovers again
Friday - Shabbat - must make nice dinner again, chicken "something"  :yes:
Saturday - give in to last week's request to make pizza
Sunday - what can I make that will have the potential to have leftovers?   ;D

Aaaack - my long reply was just lost in cyberspace!!!

I have to disguise my leftovers really well, as DH hates them and the boys aren't much better.  If I make something that freezes well like chili, beef stew, lasagna, brisket, etc., it's OK, but otherwise not so much.

Yesterday:  Corn flake crumb chicken that became Special K chicken because I ran out of corn flake crumbs, LOL.  Seasoned sweet potato rounds, salad.  Vegetable soup made from whatever I wanted to finish up and get rid of on Saturday.

Today:  Spinach lasagna, salad.

Tueseday:  Chicken/bean/cheese enchiladas made from  (shhhh) leftover corn flake crumb chicken.  Whatever veggies look good.

Wednesday:  Shrimp something.  Probably stir fry with veggies, rice.

Thursday:  Turkey chili.  Salad or  veggies.

Friday:  Our shabbat tradition - pizza!

Not going to be much help Liz, this is going to be one of those "fly by the seat of my pants" weeks.

Tonight - hot dogs on the grill, grilled veggie, baked beans.

Tomorrow - Pot luck at DS school (oh joy  ~)), so I'm bringing vegetarian lasagna and blondies.

Tuesday - Roast chicken, oven roasted autumn veggies, potatoes.

Wednesday - Fish something?

Thursday - Chili?  Salad?

Friday - Pizza!

Really struggling with this lately...

Tonite - Burgers on the grill, grilled veggies.  If I have time, cranberry break for dessert.

Tomorrow - Chicken cutlet something, parmagiano if I get home early enough.  Salad, pasta.
ETA:  Gorgeous, warm night, so grilled chick cutlets, maduros and salad.

Tuesday - Spinach tortellini, with sauteed tomatoes and mushrooms.  Salad.

Wedneesday - Shimp something?  Veggies of some sort.  Maybe stir fry.

Thursday - Bean burritos.  Some kind of veg.

Friday - Pizza!

Over the weekend, I made a big pot of sauce for pasta, chicken posole soup, and pizza to get me through the week.  My plans:

past Saturday (day I made the sauce) - pasta with sauce (meatballs for some), green beans
yesterday (Sunday) - pizza (made with the sauce  :yes:  )
today (Monday) - either Lemon Chicken (if I'm not too tired when I get home) with roasted potatoes or leftover pasta with sauce   ;D
Tuesday - Chicken Posole soup with biscuits
Wednesday - baked ziti made with the sauce or meatball subs on homemade rolls
Thursday - whatever is leftover, everyone will get something different, I think
Friday - must cook something new for Shabbat...thinking steak, potatoes

The leftover pizza has been designated for DS's lunch (his request) and a couple of slices for my breakfast.  I made 3 pizzas and DS ate a whole one last night!  So much for leftovers...

Must go to the store today/tomorrow--no salad ingredients on hand...will add salads to every meal as soon as there is lettuce in the house.

CookingMom - I just started a new job and my office is right AT Pike Place Market in Seattle.   It's an amazing array of just about any ingredient you can think of.  :)

Saturday - turkey tacos - thanks to Penzy's taco seasoning

Sunday - big pot of sauce with homemade turkey sausage (care of Penzy's spice blend),  - DH and I ate it with whole wheat pasta, zucinni and mushrooms in the sauce - and DS had it with Penne (DS takes the left overs for lunch so I dont mind making him a whole lb for himself) - and Apple Crisp (with Penzy's cinnamon - 4 kinds in the blend)

Monday - leftovers

Tuesday - scrambled eggs with jalepeno, chives and cheddar and more homemade (turkey) sausage - thanks to Penzy's

Wednesday - roast pork tenderlion, roasted yams, - some starch

thursday - I have a 1lb of ground beef - ???  maybe simple burgers?  or more taco's YUM

Stinky6...I know where I'd spend my paycheck...  :yes:

I buy a lot of spices from Penzy's but only once or twice a year--not that mileage-wise they're far from me, time-wise (traffic), they are.  So I go with a list but usually forget something!  One of my friends uses their seasoning to make turkey sausage and raves about it.  I may put that on my list for the next trip.

1 lb. ground beef?  Greek Skillet Dinner:  http://www.copykatchat.com/tried-true/51287.htm  Ummm...may add this to next week's dinner rotation.

I had planned on Lemon Chicken this week...that became Teriyaki Beef Stir-Fry which was a hit.  I never measure so stir-fries are a hit or miss with DS.  Other than that, the leftover routine is working well this week.   ;D

Sunday - Chipotle for the menfolk, dinner out with my Mommy & Me buddies for me (next month is our 21st anniversary! - we all met when our kids were 3 months old, LOL).
Yesterday - breaded chicken cutlets with the last of the Thanksgiving leftovers - squash, stuffing, mashed and sweet potatoes, plus some sauteed chard.
Today - Tortellini with sauteed tomatoes, broccoli and mushrooms, salad.
Tomorrow - Something fish, baked potatoes, salad.
Thursday - Bean/cheese burritos, salad.
Friday - Pizza!

Another fly by the seat of my pant week, with lots of obligations and mixed up schedules.

Tonight - Spinach Quiche and salad.
Tomorrow - Something chicken-y, potatoes, whatever green stuff looks fresh.
Tueseday - Spinach lasagna, salad.
Wednesday - ??? Fish of some type, most likely.
Thursday - Burritos.  I think.

Sunday - Baked chicken, noodle pudding, haricots verts.
Monday - Lobster rolls, salad.
Tuesday - Rotini w/sauteed tomatoes, mushrooms, fresh mozarella.  Salad.
Wedneseday - Chili, noodles, salad.
Today - Corn flake crumb chicken cutlets, baked potatoes, kale sauteed with shallots (OMG, just so simple and so delicious.)  Stinky's chocolate ice cream for dessert (made it with Hershey's Special Dark Cocoa - holey moley, that's good!)

Tonight was tortellini and sauce w/broccoli
Monday - black beans and rice (The beans soaked and cooked today - extra yummy tomorrow)
Tuesday -veggie burgers/potatoes/salad
Wednesday - chicken fajitas w/black beans and rice as sides
Thursday - left overs (who are we kidding - black beans and rice...)
Friday - whatever the h3!! they make themselves - I'm going out of town for the weekend ;D


Trying to make things that dh and I can take to lunch once or twice so we're not always doing sandwiches and fruit or canned soups

Tonight - filet mignon for the adults, ham steak for the kids (beef allergy), mashed potatos, broccoli or spinach, fried onions.
Monday - pork/turkey meatloaf, baked potatos & green beans
Tuesday - turkey or chicken tacos
Wednesday - chicken parm & daiya dairy free chicken parm
Thursday - baked chicken, rice, peas, gravy
Friday - scrounge & then vacation!!!!

turkey stir fry with wheat noodles, soy sauce, fresh ginger, garlic and honey.

pork chops,white wine and mustard sauce with mushrooms and onions, mashed potatos, green veg.

chicken legs , slow cooked with whole garlic cloves, olive oil with basil, pepper strips, black olives, cherry tomatos, with balsamic vinegar sea salt. ( just shove it all one a tray and bung in oven, simple!)  served with pasta /garlic bread, green salad.

thursday.

friday.
veggie curry rice.

Eragon, could you share your veggie curry rice recipe?  I do love a good curry!

Strange schedule this week, going to have to be flexible.

Tonight - Friends coming over and bringing deli (turkey, pastrami, etc.).  Not my fave, but I love the knishes, pickles and cole slaw, LOL.

Tomorrow - Baked chicken, chard, sweet potatoes.

Tuesday - Spinach lasagna, salad.

Wednesday - Chicken cutlet something.  Sides TBD.

Thursday - Bean/cheese/veg burritoes.

Friday - Pizza!

i sort of cheat with my veggie curry...
I pick good veg like potato, something starchy , and also use a tin of beans, like chick peas ( obviously allergic son doesnt eat this meal, he has homemade pizza) and other left over, slightly limp veg from the back of the fridge, but dont tell my family this.... :hiding:

I get the veg chopped first.
so,  oil in pan, heat, and pop in  the whole cumin seeds and cardamon seeds, once they are dancing in pan,  then throw in veg, add other spices, like tumeric, garram massala or madras curry paste.

my secret is ........shhhh......tinned tomato soup,..... ;)  and creamed coconut.......
then of course its friday night, and i cant help but open a glass of wine, and let it all simmer for while....if i remember to check it, all goes well. but its so easy to  forget...... 

anyway, I serve it with white rice if ,  and to be totally frank here,  our family bowels are working nicely. Or brown rice, which takes forever to cook, but has a nicer taste and does scrap the insides rather well... :misspeak:.

  if i can find the  dried raisins  from the back of the larder i throw them in the rice as well.   which often helps if i have overdone the strength of the curry....

must confess to be tempted to buy some gee from asda, but gosh, its  rather bad for the old ticker iyswim.

anyway, good luck with this recipe, your gonna need it!

monday:  beef  lasagne green salad

Tuesday:pasta with veggie sauce.

wednesday: honey roast chicken with mashed potatos (chicken has leeks and carrots underneath while cooking.)

Thursday:  cod poached  in milk,  in rissoto with lots of veg. (add some smoked salmon trimmings to the rice.)

friday: madras chicken curry , rice and naan bread.

penn pasta, roasted veg sauce, with beef and bazil meatballs, parmazan cheese shavings, green salad.

tuesday.

sweet potato mash, pork chops in mushroom and mustard sauce, cabbage.

wednesday.
roast chicken slow cooked with 2 bulbs of garlic, olive oil etc.
new potatos, asparagus.

thursday.
 sardines dipped in flour and oats , shallow fried in olive oil, served with sea salt, lemon wedges and hot crusty french bread.

friday.
lamb curry and basmati rice.

After a chaotic couple of weeks, time to get back on track.

Sunday - Burgers on the grill, grilled veggies, guacamole.

Tonight - Corn flake crumb chicken cutlets, kasha, haricot verts.  Salad.

Tuesday - Tortellini with fresh tomatoes, mozzarella.  Salad.

Wednesday - Something fishy; whatever looks fresh.  Rice, greens (again, whatever looks fresh).

Thursday - Bean/cheese/veggie burritos.

Friday - Pizza!

GN, You always make me feel so inadequate with your week so planned out and such complete and wonderful meals.  So, i assume your son(s) eat all these things?  Sigh.  Envious.

I made a great quinoa salad, with chopped armenian cucumbers, tomatoes, carrots, red onion, and red sweet peppers.  Dressing was lemon, olive oil, garlic and salt and pepper.  Tossed it before serving with kalamata olives and a little feta(and some leftover grilled chicken a couple fo times), and have had that for 2 lunches and 2 dinners this week, lol!  Dh has it sans the olives and feta. 

And I also had enough to give a generous serving to my friend today.  It was so yummy and good for the hot days, and economical and healthful. 

Gluten free for those who need that, egg and nut free, and dairy free if you skip the feta.  Soy and shellfish free too.  A good allergy friendly recipe wrt to most of the top 8.

OMG, that salad sounds heavenly.  Except tonight's salad made my mouth so itchy!  Gotta lay off the salads for awhile.

Keep in mind my "baby" is 18!  I assure you he didn't e at everything when he was younger.  Don't worry, your kiddoes will get there.   ;)

am finding it difficult to adjust as am used to sons allergies, but daughters problem with milk means old family favourites are not going to happen, like mac and cheese..... will get there in the end.

The past few weeks have been so chaotic, I haven't posted here at all.

Sunday - chicken parm, spaghetti, broccoli.  Homemade vanilla chocolate chip ice cream for dessert.

Monday  - matzoh ball soup, brisket, potatoes, baby carrots and creamed spinach.

Tonight - a wonderful neighbor gave me a ton of leftover Chinese food her family couldn't finish!  What a great surprise.

Wednesday - mushroom ravioli,salad.  Spinach soufflé.

Thursday - fish of some sort, salad rice

kinda making that up :)
Chopped up onion on bottom of crockpot
Frozen chicken breast into crockpot...pepper and garlic them.
2-3 cans of cream of ___ soup - one being broccoli cheese soup, another being cream of celery...depends on how much chicken put in there if I need a 3rd can.
Cook on low 6-8 hours.
serve with broccoli over noodles or brown rice.

Yesterday - Grilled steak, salad, challah bread.

Monday:  Chicken/spinach patties, wild rice, roasted squash, onions/garlic.

Tuesday:  Beef Chili/taco shells/fixins - shredded lettuce, guacamole, sour cream, cheddar cheese, scallions.  Salad.

Wedneseday:  Salmon prepared some way or another, salad, side dish TBD.

Thursday:  Refried bean enchiladas w/ fixins.

Friday:  Pizza!

Oh, I have every intention of posting in this thread, but this was not hte best week for it:

Monday (theatre rehearsal then band concert): DS ordered from Dominos to deliver at school--ordered a sandwich while his friends ordered the pizza. I had know idea the sandwich there was safe. Grrr.  DH and I thought we were picking him up for dinner but then didn't so went out to eat. The only safe thing for me was the gourmet-ish mac and cheese, which I sent back initially because of the chopped parsley topping it. Ick. (texture thing)

Tuesday (theatre reheasal then choreography rehearsal with a two hour break in between): Pizza from nearby pizza place--or he got the pizza at a nearby coffee shop (has been safe) while he did homework before walking back to school for choreography.

Wednesday (theatre rehearsal):  We were supposed to head to church for a weekly Wednesday potluck and youth group/ adult discussion group, but DS and I skipped out. He has too much homework.  So for dinner!!!!  Yes!!!! I cooked dinner!!!  Tortellini with a Lucini tomato and artichoke sauce.  I cooked spinach with the tortellini and sauteed onions, carrots and squash and stewed the in the sauce for a bit.  Yummy!

Thursday (theatre rehearsal, oboe lesson in the city, choreography rehearsal: It will be a sandwich.  He will eat in the car between oboe and choreography.  I'll make him a cheese slider (DH made some rye rolls this week) and will bring some mini yellow and red bell peppers stuffed with veggie cream cheese and spinach.

Friday (theatre rehearsal and two hours later at school meeting with his speech coach): Dinner out I guess.  Or a picnic in the car. 



Maybe in March we'll have dinner home again.  Maybe in March we'll get to play games again, too.  :)

been dieting since new year.

apart from the on going craving for booze, fat in any form, cheese, chocolate, potato crisps etc I have been fine. ~)
I walk a LOT, to stop eating and to stop the stress. but hey ho, lost a chin and bit of tummy.


friday was fish curry. ( I almost vomited at the taste, but strangely husband liked it. I had a diet microwave meal. which was bland, but nice. am NEVER eating fish curry again)

today, chicken breast cooked with veg, garlic , fresh basil and tomato. it was bland crap really. served with green salad, and sweet potato wedges.

sunday roast lamb ( just a thin slither, to give faint taste in our mouths) kids will be eating lots of this. diet roast potatos, veg, etc.

monday.
beef meat balls , tomato sauce and pasta. ( tomato sauce quite acidic, but daughter cooks this meal so cant complain)

tuesday.
paprika chicken and rice. we have had this a lot, so its getting boring.

wednesday. pork steaks, celeriac mash, green veg of some sort.

thursday.
salmon fillets for everyone but me, I cant eat any fish with the good oils unless I have a access to gaviscon through out the night and a bucket to vomit in. So i will have haddock or cod. oven baked. with some sort of carb, and veg.

friday.
chicken curry. made with fat free yog. kids have junk food.

no wine. no choc, but eventually some sort of decent waist size.

Momto, there is always a rotisserie chicken.  Are they ok with your allergens?  It can be had with bakes sweet potatoes or another grain(quinoa ok for the low carb?), salads, or veggies, and they can be turned into soups or casseroles.  My kids will not eat casseroles of any kind, but I can put some chicken into a chicken noodle soup.  I do ok carb wise if I scoop some off for myself and add extra veggies and a brown/wild rice mix before I put the noodles in everyone else's. 

We do a lot of tacos in the spring.  Fajitas...you get the idea.  Sandwich night?  Salads loaded with meats and cheeses to make it a meal?  Again, this is only for adventurous eaters, not my children, lol.  We also resort to too many prepared chicken patties and nuggets or pizza sometimes. 

Dd has spring track, soccer and will have a one night a week volleyball skills clinic, and 2 medical appointments each week, and ds had baseball and soccer.  I think the new rule is going to be one sport per child each season.  But while they are young, it is the time to find their favorites.  They only have a short few years to try things out to find that.  Dd wants to do everything!  Her HW suffered sorely last night.

We can do a rotisserie chicken or I can make one on the weekend and we can eat off of it all week..(chicken again???!!!!  - tha's what I'll hear, even when done differently ~)...but I am one of those people who can eat the same thing evey night, so ifthey don't like it they can step up :tongue:)

WOW was dinner good....salad, garlic bread and this dish:

    Salt and pepper
    1 pound penne rigate
    1/2 pound thin asparagus, trimmed and cut into 1 1/2-inch pieces (she used zucchini, instead)
    Ice water
    1 1/2 cups chicken or vegetable stock, divided
    1 cup fresh mint leaves
    1 cup fresh parsley leaves
    1/4 cup unsalted pistachios, toasted (used almonds)
    2-3 tablespoons extra virgin olive oil (EVOO)
    4 tablespoons butter
    2 shallots, finely chopped
    2 large cloves garlic, finely chopped
    2 tablespoons flour
    1/2 cup dry white wine or 1/2 cup additional stock
    2 tablespoons fresh lemon juice or white balsamic vinegar
    A handful of grated Pecorino Romano cheese, plus more to pass at table

Serves 4
Preparation

Bring a pot of water to a boil; salt it, add the asparagus and cook for 3 minutes. With a spider or slotted spoon, transfer the asparagus to a bowl of ice water to stop the cooking; drain and set aside. To the same water, still boiling, add the pasta and cook until al dente. Drain, reserving 1/2 cup of the starchy cooking water.

Using a food processor, puree 1/2 cup stock, the mint, parsley, pistachios and EVOO.

In a medium size skillet, melt the butter over medium heat. Add the shallots and garlic and cook, stirring, for 2 minutes; season with salt and pepper. Whisk in the flour. Stir in the wine and cook until reduced to 2 tablespoons. Add the remaining 1 cup stock and cook until thickened, about 5 minutes. Lower the heat to low. Stir in the lemon juice (or vinegar). Remove from the heat and stir in the pistachio puree.

Add the pasta, asparagus and a handful of cheese to the skillet; toss, stirring in the reserved cooking water to thin the consistency if desired. Season with salt and pepper. Pass more cheese at the table

Decided this thread needs reviving since I hate menu planning. I don't think I've seen it before. Not sure if anyone will notice since it's stickied. Here's my menu for the week.

Sunday--burgers, sweet potatoes (on the grill), some kind of rice
Monday--chicken marsala, orzo, salad
Tues--leftover burgers, roasted potatoes, fresh green beans
Wed--quesadillas, corn
Thur--quiche, broccoli
Fri--not sure. If there's enough leftover chicken and quiche, we'll have that. If not, we'll see.
Saturday--we always either eat out or order in.

With no kids at home, my cooking goes further and we can get more "cook once, eat twice" meals out of weekly meal prep.  But after vacation (10 days away!!!), I really have to get back to a more formal plan.  And I'll have to get a lot of stuff in my freezer for after my hand surgery in October.

Saturday--out for ds's birthday. He'll either come home or we'll go there.

Sunday--Korean grilled chicken
Monday--butternut squash/quinoa casserole
Tuesday--tacos
Wednesday--I'm going out with friends. DH and DD can have leftovers
Thursday--cajun chicken pasta
Friday--Hungarian stew
Saturday--out

^^ I didn't make the Hungarian stew because I remembered we would be having brisket Sunday for Rosh Hashana. We had leftovers again Friday. There was still enough food left.

I might rearrange. It's supposed to be pretty warm Tuesday, so not a great day for cassoulet, which is warm and hearty and soup-like. I also set aside some brisket and froze it to use next week in a rigatoni recipe I have.

Last night was Holiday Pig Out, not sure what the rest of the week is going to be.  Normally I'd be making use of leftovers, but need food in the freezer for post-surgery helplessness, which will be in 2 weeks, so I froze nearly everything except for vegetables.  Will have to figure this out today.

    1 tablespoon olive oil
    1 pound skinless, boneless chicken breast halves, cubed
    1 pinch monosodium glutamate (such as Ac'cent®), or to taste
    6 tablespoons soy sauce
    6 tablespoons brown sugar
    1/2 teaspoon red pepper flakes, or more to taste
    1 lime, juiced and zested

Heat olive oil in a large skillet over medium heat; cook and stir chicken breast cubes in the hot oil until the juices run clear and chicken is no longer pink inside, 5 to 6 minutes. Sprinkle chicken with monosodium glutamate as it cooks. Remove chicken from skillet.
Mix soy sauce, brown sugar, red pepper flakes, lime juice, and lime zest in a bowl, stirring to dissolve sugar. Pour sauce into hot skillet, bring to a boil, and reduce heat to low. Simmer, stirring occasionally, until sauce begins to reduce slightly, 3 to 4 minutes. Mix cooked chicken into sauce and cook until sauce forms a glaze on chicken pieces, about 2 to 3 more minutes, stirring often.

I serve it over rice. I don't make the couscous, so I didn't copy/paste that part.  I don't use MSG. There's no chili powder in it, so I'm not sure why it's called chili lime, but I love it.

I think I forgot to put my menu up last week. Not sure I can keep this up. Maybe I should do a spreadsheet or something. I"m not sure everyone here needs to know my weekly menu, lol. But here's this week:

Sunday--ginger and garlic chicken (recipe DH found)
Monday--cauliflower fried rice
Tuesday--"scramblaya" (a jambalaya recipe from the six-o'clock scramble website)
Wednesday--leftovers
Thursday--eggs renellos
Friday--not sure. Lately we've been having a lot of leftovers, so I haven't been planning Fridays
Saturday--eat out/order in
