Title: SOY, WHEAT, CORN ALLERGY - WHAT TO EAT!)
Post by: nerdyfeather on June 12, 2012, 11:41:26 AM
Hi all!

I am 26 years old and have been dealing with allergies my whole life.  I just went for allergy testing yesterday and am allergic to Soy, Wheat, and also Corn.  I have no clue to even begin on what to eat.  They gave me three lists but those are so overwhelming.  I go to one and then have to go to another and then the other.   :hiding: I recently tried to start transferring to a Vegan Diet.  Even with that I felt not a lot of relief.  My allergies have been horrid for so many years.  Is there anyone with the same issues/allergy that can help me move in the direction of what to eat?  Especially with Vegan Diets, a lot of soy surrounds that diet regimen.  I'm so glad there's a place to go at least for support.

Thanks so much you guys!!!!

I don't have your allergies, but do have celiac disease so I can't eat wheat, barley, and rye.  I also have hypothyroidism, so I avoid soy.  My diet is closest to what is considered the paleo diet.  Basically only real food, meaning no processed food, and meat, fish, fruits, veggies, seeds and nuts.  If you fel the need for more traditional carbs you could include rice and quinoa

Jennifer is absolutely correct-- with that particular list of things being avoided, any and all processed food is likely to be off the table, so to speak.

Soy and corn are ubiquitous in processed foods, and their derivatives are not always well-labeled (lecithins, starches, etc).

I'm just curious here, but why did your doc test for those allergens in particular?  Had you noticed definite allergy symptoms when eating those things?  Or was this because you were generally unwell?  Depending on the severity of your symptoms, you might need to be carrying emergency medications to treat a life-threatening reaction; that's why I ask.  It doesn't sound as though you have epinephrine.  Is that true?

I'm assuming that you saw a board-certified allergist... but I'll ask because you mention "lists" and switching diets, indicating maybe... a rotation diet?  That's not really the treatment for food allergy, though it can be helpful with some intolerances.  Please tell me that you were NOT diagnosed:
a) with testing alone, and/or
b) by a naturopathic practitioner,
c) via IgG/muscle resistance, etc.

The reason is that those are not a way to determine whether or not you have an allergy to any foods.  As you've discovered, avoiding any one of the things on your list is difficult, to say the least (we have a soy allergy at my house, too, fwiw, and have avoided wheat as well when my DD was allergic as a toddler and preschooler).  It can easily compromise your health to avoid a lot of foods without really great nutritional guidance!  (That wouldn't be good either, and it's really hard work and a lot of stress.  Nobody needs that unless they truly have to do this.)

If you're not feeling any better after a few weeks of elimination, I'd look beyond the current diagnosis and push for better answers from your doc.

Is there any chance that you might be a candidate for celiac testing?  If so, avoiding wheat is probably the worst thing you can do right now, since you'll have to be eating gluten regularly for a reliable diagnosis.

In any event, we have several members who can definitely help with avoidance of all three of those foods.     I hope that you feel a LOT better soon.

Thanks for the replies!  I appreciate you all!  I was tested at my ENT office for ongoing years of horrible allergies.  They testing the regular but then did my whole left arm of the main food allergies to see what I was allergic to.  I feel so terrible when I eat, and although I eat healthy, the things I'm eating are what I am allergic to so... I feel bad!  I heard if you follow a gluten free diet you'll be best to eliminate the wheat... corn is hard but soy is easy.

Welcome!  What happens when you eat?   Can you be more specific about what symptoms you think food has caused you?  Testing is highly inaccurate and has a very high false positive rate.  At best test results are only 50% accurate for positive results but may be less than 20% accurate meaning over 80% of people who test positive to having a food allergy are not allergic to those foods.  So, if you were diagnosed based on testing alone then those might be false positives.  I would want to see an allergist who specializes in food allergies and talk about this and probably do some food challenges to confirm the possible allergies.

If you were allergic to food you would see symptoms within minutes to up to 2 hours after eating allergens and almost always within 30 or 45 minutes if not pretty immediately.  Typical symptoms (which can vary) are things like hives, swelling, itchiness, throat constriction, breathing difficulty, stomach issues (but GI issues can be a sign of other things), etc.  Have you had symptoms such as those?

If you have seasonal allergies then that is something separate.  many people have those and do not have food allergies (such as me).

Do you have epi pens and a written emergency plan of when to use them in case you do have a serious food allergic reaction?  Generally speaking an ENT is not specialized enough to treat food allergies and may lack enough info (such as that testing can't diagnose a food allergy).

Hi, my daughter cannot eat wheat, corn dairy or artificial additives.
She is intolerant rather than allergies. They make her cry, scream, fatigued etc.
She can have spelt. I cook everything with spelt. We have found a bread in Australia called bodhi's dinkelbrot. It has no yeast either.
Make spelt pancakes. We use nuttalex dairy free spread as it is additive free.

I feel hopeful that you can eat spelt.  Wheat is like a poison to daughter but spelt although contains gluten is fine. It cooks like wheat and tastes great.  Corn makes her spz out crazy angry.

A recommendation is to get hold of some iodine that contains iodide and selenium. It needs to contain all thereto work.  This is helping my daughter. I am third generation hashimotos with hypothyroid so now my whole family takes iodine.  We have taken for a few months. It tAkes 3 weeks to see any improvement.  Also get some vitamin D.  My daughter can now tolerate small amounts of dairy. We are moving forward in addressing the cause rather than adjust living without foods forever.

Of course I have no medical advice other than living with a food intolerant daughter for 7 years and can now see what causes here problems.

Kind regards
Kylie

Food intolerances and true food ALLERGIES are quite different in both presentation and management.

I would caution anyone who may have a true food ALLERGY to seek an accurate diagnosis and medical treatment recommendations from a board certified allergist and follow strict avoidance of their allergens.

I would 2nd that !
I have four kids , two with food problems, one has been recently diagnosed by a immunologist as being intolerent to soya and milk. (anything that comes from a udder etc) Soya is in many processed foods and is very difficult to avoid in comparasion to milk imo.
She also has  some ige environmental allergies.
symptoms, tingly throat, feeling sick, ezcema.

Son is under the care of a immunologist , and has ige allergies to egg/beans/peanut/ brazil nut/kiwi/ yeast extract. Is also allergic to all environmental allergies.

what are you currently eating?
how are your cooking skills?
what sort of meals would you like to have?
perhaps this way we be of more practical help by suggesting substitutes or recipes.

I have corn allergies but was still reacting to something.   It turns out it is to sesame oil.   You might see if this is a problem for you too as many American allergists don't test for it and it seems to be in a lot of food.   Good luck.

Since the OP's post is almost a year old, you probably know about soy derivatives already but just in case:

Link removed by admin.  Please read our Terms of Service and Commercial Links rules.
Also, you can follow my Pinterest board @Mayashappyplace

I post TONS of soy-free nut-free recipes so there's tons of stuff you can eat! You'll just have to learn to cook.  :misspeak:

Also an FYI, Cheesecake Factory is awesome for people with allergies (they check a list in the back...for soy, I'd bring a card with all the allergens in a list), although they don't know so much about derivatives so be careful if you are highly sensitive to 'natural flavors' or 'guar gum' like me (guar gum is not soy, but very similar).

I hope something here helps you!!  :happydance:

I have had many seasonal/indoor outdoor and mushroom allergy all my life, like you i went and had my usual check up with the ENT, GI, Endocrinologist, PCP and Allergist whose care i am all routinely under. In 2005 they all agreed since i had such problems that were not getting better for YEARS that i should have another panel of tests run.
They found MORE COMMON and FOOD allergies :'(  CORN, WHEAT, SOY, CODFISH, CLAMS, and the usual MUSHROOMS. THEY ARE NOT SENSITIVITIES and still I HAVE TROUBLE controlling them.

I just recently discover that Xanthum is made from these products so I too am still learning. The past 6 months they have gotten so bad i cant eat ANYTHING Salad, Plain chicken etc...

What are some of the foods you eat, I am literally starving (lost 23lbs in 7 weeks) and cant wait to see the allergist next month. Which is why i was looking up some reference points and came across your post.

Also ask your regular Dr to routinely check your thyroid levels TSH T3 and T4 often people with these allergies have the reactions due to the Auto-Immune thyroid AKA Hashimoto's Thyroiditis  disorder and many Drs dont think to put those together the body will attack the thyroid gland it has been linked to these specific allergens. This is Actually one of my conditions and why i see the Endo.

Good Luck to you and I hope you are in better control by now. Feel free to email me and chat its hard to find someone who understands how hard it is to actually eliminate these things.

Have you challenged any of those in the doctor's office?  I ask because just testing positive alone is not worthy of removing from diet, no matter how much you trust your team.

Just got results from AL--T  testing( allergy blood test). It shows I am allergice to Wheat, rye, corn, wild rice, pork, egg yolks, and about 25 other ingredients.  I had been following a GF diet -- was helping but not 100%, so now what?  Corn was my "go-to" grain!  And Eggs were my main protein .  Help!
Also, I've been told to also research "food family groups" and stay away from all foods within the families, i.e. allergy to coconut = stay away from all foods within the Palm (which are dates, heart of palm ).
I am overwhelmed!
thanks for advice and help.

Has your doctor challenged any of those in the office?  Are you seeing a board certified allergist (not naturopath) who specializes in food allergies?  I ask because unless you have been having true allergic symptoms, you cannot be declared allergic to foods by blood test alone.  And those multi-panel tests are notorious for being wrong.

Judging by your list, you saw a naturopath.  And they just wasted your time (and probably a fair amount of money as well).  Been there, done that.

FWIW - Corn comes up on many people's profiles if they are tested for it, they are rarely allergic to it.  And if you were, you would know.  It is a hidden ingredient in multiple sources - canned food and processed food especially.

If you are experiencing reactions to foods (true allergic symptoms), then you need to narrow it down to which foods are causing it.  Your best bet would be to do a food diary.  Cook simple foods and note how you feel after them.

If you have experienced anaphylaxsis before - make sure you do this with your allergist's consent.  If you are working with a naturopath, please run screaming.

It Is My Understanding That An IgE Testing Is Not Super Accurate As Far As Looking For Food Allergies.

The Gut Reaction Is More Of An IgA/ IgM Reaction.  The Best Way To Check Is Elimination.

I Have Had Undiagnosed Celiac Disease For The Majority Of My Life Which Lead To Chemical Sensitivities And Multiple Allergies/Intolerances  To Additional Foods.

Known Triggers/ Allergies And Intolerances/ Sensitivities For Me Are Gluten/ Grains/ Corn/ Soy/ Additives/ Preservatives/ Latex Fruit Syndrome/ Spinach  & Quinoa..  And A List Of Other Randomness.

It Took A Lot Of Food Journaling, Eliminations. Rotations And Adding.. Subtracting..Trial And Error .. Etc..  It IS A Process.

I Cook Everything From Scratch.  I Try New Things All The Time.  I Use Most All Coconut Products.

The gold standard is reaction history, but IgE is the closest medical test. In general, allergy testing has FAR higher rates of false positives than negatives, SPT even more than IgE blood tests--I don't have the stats on hand, but I'm sure someone here does--and non-IgE blood tests aren't reliable as allergy tests, period.

If you think you have allergies, please see a board-certified allergist--and if someone suggests panel testing without measures like food diaries and elimination diets, it's probably time to find a new doctor.

I have just found out that I am allergic to soy and corn. Could you please help me in finding the foods without these ingredients. It's so hard because they are in a lot of foods.

Look forward to hearing from you

Hi Donna, I'm sorry to hear you're having reactions to soy and corn.  Honestly, there is really no way to avoid both those ingredients and eat anything that comes in a package - especially corn since it does not have to be listed on the ingredient label.  Your best bet is to make everything from scratch and from whole ingredients.  Everything should be as minimally processed as possible.  Even regular table salt has corn in it.

How were you diagnosed with your soy and corn allergies?  Was it based on testing alone or also reaction history?  If it was based just on testing, that's good news because there are many false positives.  I'm really hoping you don't need to avoid both corn and soy because it is so very difficult to do so.  Thankfully, when my DS was little and was reacting to both those I didn't have to work outside the home - keeping him fed safely was practically a full time job.

Hello! I have multiple food allergies, one of which is wheat. I am also a vegetarian. The bulk of my diet is fruit and vegetables because they are safe. I make a LOT of soups from scratch. Most of the soups I make are actually vegan. I also use rice noodles that you can find in the Asian section of the supermarket. And I eat quite a bit of nuts and nut butters for protein. I have found that Pinterest is a God-send when you are trying to cook with food allergies. Great source to look for recipes.

I have recently been tested for food allergies because eating most anything was making me sick.  I had a naturopath do muscle testing, the first time I've gotten good information.  So many foods showed up that I have totally changed my diet and it is working.  I can not have wheat, corn, dairy, soy, sugar, nightshades, many fruits, esp. tropical, white potatoes/rice, eggs, legumes, nuts, mushrooms, yeast products, including Udi bread. Has been hard to wean off of breads and sugar but I was tired of being sick.

Have found a great plain coconut yogurt called SO delicious for snacking, have a protein shake with unsweetened aloe vera juice for breakfast.  My diet is mostly grass fed beef, hormone free chicken, turkey, fish, brown rice products and all vegetables.  Take several supplements, vitamins and have cleaned out my digestive system with coffee colonics (at clinic) and enemas (at home) I use stevia for sweetener.

My daughter has some of the same allergies, my son less, mostly wheat and nightshades for him.  Is a genetic component.  Eating foods causing allergic reactions for me created weight gain, inflammation, extreme fatigue and cramping/bloating in the gut.

Now I am working on getting the candida out of my body.  It has been a journey and took me almost my entire adult life to solve the mystery of my horrible, painful reactions to food.  I am in my 60's, too long to not know about food allergies and how to get my life back.  Many doctors seen for this problem and none of them correctly diagnosed the problem.  Was very maddening.  Alternative health clinic has saved my life.  Highly recommend that avenue for all who suffer with food.

naturopath do muscle testing

Well, firstly-- naturopaths are not equipped in any way, shape, or form to diagnose or treat IgE-mediated, true food allergy.

They also have a rather sketchy relationship more generally with food intolerance diagnosis/treatment.  http://www.sciencebasedmedicine.org/igg-food-intolerance-tests-what-does-the-science-say/

Interestingly, most practitioners who diagnose such allergies also recommend supplements that they can provide to patients.

Quote
Diagnostic tests can be as pseudoscientific as treatments. To evaluate, we ask the following:

Analytic validity: How reliable is the testing? This includes within-laboratory and between-laboratory precision.
Clinical validity: How consistently and accurately does the test detect an objectively-measured clinical status? The test should be both sensitive (few  false negatives) and specific (few false positives). Patients in the same circumstances should consistently have the same test results.
Clinical utility: What is the natural history of the disorder? Will the use of the test make any difference in the outcome? Interventions taken should be evaluated and compared against no testing.
Ethical, legal, or social implications : What are the potential patient consequences of the use of the test, and its results? What if the results are erroneous?

It all boils down to a single question that must be satisfactorily answered before we proceed with testing: How has this test been validated?

I don't mean to be harsh toward those who have found that they feel better after following the advice of a holistic or alternative practitioner, by any means.  But whatever the issue, it's probably NOT a food allergy in the technical sense, and calling it so diminishes the seriousness of the term in public perception due to misuse/overuse of the medical terminology.

Quote
Food allergies are reaction to food proteins. They may be categorized as immunoglobulin E (IgE)–mediated (immediate) reactions, non–IgE-mediated (delayed) hypersensitivity reactions, and mixed reactions. IgE-mediated reactions are the ones we worry about when we hear about a “food allergy”: flushing, itchy skin, wheezing, vomiting, throat swelling, and even anaphylaxis. These reactions can occur immediately following exposure, and are the consequence of the interaction of allergens with IgE located on mast cells. The interaction causes the release of inflammatory chemicals like histamine and leucotriene, triggering the the allergic response which is typically skin related (itchiness, swelling and rash)  but may be anaphylactic as well.

Not all reactions follow this cascade. Non-IgE-mediated allergic reactions can cause localized (e.g., contact dermatitis) or generalized reactions, which are usually gastrointestinal or dermatological in nature. Celiac disease is a non-IgE related allergic reaction. Finally, some allergic disorders are both IgE and non-IgE mediated, such as atopic dermatitis (eczema).

Beyond the IgE mediated reactions, there are a number of possible reactions to food, which may be termed “food intolerances”. Not immune-system based, they’re more common than allergies. They include conditions like lactose intolerance, gastroesophageal reflux (GERD), enzyme deficiencies, metabolic conditions, infections and other processes. It’s a catch-all term by definition.

Finally, know this:

Quote
And from the the American Academy of Allergy, Asthma and Immunology (AAAAI) Practice Paper, Current approach to the diagnosis and management of adverse reactions to foods:

Some tests are considered unproven in regard to the diagnosis of specific food allergies. Those for which there is no evidence of validity include provocation-neutralization, cytotoxic tests, muscle response testing (applied kinesiology), electrodermal testing, the “reaginic” pulse test, and chemical analysis of body tissues. Measurement of specific IgG antibodies to foods is also unproven as a diagnostic tool.

Question: I was diagnosed with food allergy by a naturopath/homeopath. Should I see an allergist before I start avoiding foods?

Answer: So there's really two answers to that question. It gets back to an earlier question we reviewed it which is, "How do you accurately diagnose food allergy?" And at this time the only meaningful modalities for diagnosing food allergy are the skin test or the IgE RAST test.

Other methods that may be used by naturopaths or homeopaths have not been validated.

Heidi - were you diagnosed only by blood and not by reactions?  Blood tests sans reactions are notoriously unreliable.  If you are reacting and cannot pinpoint your reactions, you may need to start an elimination diet with the help of your allergist.  Preferably a board certified allergist who specializes in foods, not an enviromental allergist who dabbles in foods.

There is no one set diet that will help over another.  Sesame, corn and strawberries are not required to be labeled within products.  Corn can be found in meats (solution used to preserve them and it doesn't have to be listed).

Hi Ashley and welcome!

What kind of doctor did you take your daughter to?  You need to see a good, board certified allergist who is very familiar with the diagnosis and treatment of food allergies.  Allergy testing is not accurate, so you'll need a good doc to help you figure out what (if any) foods your child is really allergic to.

I'd suggest reading the posts in this thread by our active members - those with 1000s of posts - because they contain good information.  I'd also suggest you check out this Other foods/MFA/EE section of the board for posts about multiple food allergies (MFA) and corn.  Soy and wheat also have their own sections.

Like I said earlier in this thread, you will not find a packaged food that is free from corn, soy and wheat - it's just about impossible.  If she's really allergic to all three, you'll probably need to feed her whole, minimally processed foods like fresh produce, rice, fresh meat, etc. - basically anything that just has one ingredient. Beware, most seasonings will have corn in them, even table salt.  Here's a link that might help you avoid corn ingredients http://go.livecornfree.com/list

Right now, pollen is really bad in many areas of the U.S., so it could be that your daughter is simply having reactions to that or it's making her system hyper aware so she reacts to things she would normally tolerate.  Do you have her on a daily non-drowsy antihistamine?

Testing has a very high false positive rate meaning people test as allergic but are not allergic quite often.  Because of this, testing can't diagnose a food allergy.  if your child has been eating those foods and not having immediate reactions (within 2 hours of eating the food), then those are likely false positives.  Has your child had reactions to those foods?  Allergy testing has to be combined with reaction history to make a diagnosis.

I would think that mushrooms would be great....portobellos are delicious on the grill or in a soup (you can buy dried mushrooms and blend them into a powder to make the stock and it works extremely well).  I would say go fresh.....soy is a main ingredient in a lot of PACKAGED foods, but they can't put soy in a fresh salad or squash  :)  Try doing spaghetti squash with a nice garlic tomato sauce.  Roast potatoes, try a bean salad.  Once you get going, I think you'll realize that there is a lot open to you.

I'm not vegan myself, but have a friend who has shared a lot of delicious recipes with me.

Jennifer is right. In my opinion, you can take rice as staple. You can also take oat meal sometime if you like. And paleo diet would go just fine with you. Also drink plenty of water to keep your body hydrated. Dehydrated body often causes enhanced production of histamine. Consult an immunologist for better guidance on what you should eat and what not.

I'm not vegan myself, but have a friend who has shared a lot of delicious recipes with me.

You have to have protein.  I'm a veggie and now have to be vegan but I make sure to have protein.  If you avoid soy you have to have some other protein.

Hey there!

I have also been diagnosed with all three of these allergies. Fear not, it is possible! I went through my whole life not knowing about these allergies, but found out about 4 years ago, I'm 27. Concentrate on the corn free list first, most all of the foods you'll be looking at, if they have wheat or soy, they very likely have corn derivatives in it as well. I've found my diet is very rich in flavor now, so look forward to that! I get my carbs/starches from sweet potatoes and peas/beans. That should help with some of the bread cravings you'll get as you rid your body of the things it's been used to for a long time (takes about 3 months). If you're starting this diet for the first time, beware that you may feel ill for those first three months, then get really sick for about a week, but then you'll feel the best you've ever felt thereafter! There are a ton of recipes for people with our allergies and they are all awesome, but some take some perfecting (just run a Google search for what you want to make and list the allergies, the brownies are to die for)! Count your eating out days goodbye, though. Restaurants are very tricky to navigate; many won't cater to these allergies together, none of them will lower the price of your meal even though your allergies take away 60% of the typical serving, but you can get an occasional free meal when they cause a hive reaction!

Oh, and if you like salads, make your own dressing! I use 50/50 100% grapeseed oil and white wine vinegar and add dill weed, onion powder, and whatever other spices you like, makes a great vinaigrette and you can take it to restaurants and feel confident you can avoid your allergies with a sale, although, avoid chicken in restaurants at all costs, every one I've been in that serves chicken marinates it an oil (typically olive), which for restaurants, means they use an oil that is mixed with vegetable oil (corn).

It's hard to do this come turkey, so if you can stand your reactions, I recommend weening yourself off slowly.

Good luck!

This is extremely dangerous advice.  If you are allergic to a food you must cut it from your diet completely and immediately to avoid life-threatening reactions.  Past reactions cannot predict future reactions when it comes to true food allergies: having the sniffles one time could lead to hives or throat swelling next time.  If you are diagnosed with any food allergy (by a certified allergist!), get yourself two EpiPens (or other epinephrine autoinjectors), keep them on your person at all times, and avoid your allergens and traces of your allergens at all times.
