I finished it on the stove and we'll have it tonight. A little too much cumin - which is probably diluted more when cooked in the pot. I also didn't use chicken, because I don't have any.

That's strange GN. I followed it exactly except for leaving out the chicken. I have a smaller instant pot--just 5 quarts I think--but that shouldn't matter.

Didn't work for me - I got some "error" message.  I dumped it out of the Instant Pot and am simmering it on the stove top.  The quinoa was cooked through, and the sweet potatoes still hard.  I think the tomatoes should have gone in at the end.

A really light meal is a spaghetti squash dish I make with chopped tomatoes, feta, kalamata olives, and I'll have to think what else.

Also: baked rellenos. Yum. We make them twice a month at least.

Frittata and salad.

I'm working on finding more meatless meals. With this, since I wasn't sure how it would be, I made some chicken sausage with it. DH ate 2 sausages, I ate half of one and dd didn't eat any. I think next time I can just make the quinioa, but I may need to double it or at least 1.5 it. Most of my meatless meals are either bean-based, heartier meals for winter (chili, lentils and brown rice) or heavy pasta meals which I also prefer in winter. It's nice to have something for summer.

I made this tonight and everyone liked it. Dd (who loves mango) said she didn't really think it needed the mango, or that it didn't go, but I loved every bite I got with mango. I think it's a key ingredient. I would use less cilantro next time. Cilantro just has such a strong flavor, so I don't think it needs as much.

I make something like this, with, or without a grain, and love it.  I don't follow a recipe, but dice cucumbers, tomatoes, red onion, maybe sweet red peppers, and do a lemon/red vino/EVOO dressing.  From there, I might add chick peas, or use it to top salad greens.

Made the Greek salad tonight.

I only put in half of the basil....and it was to much. Otherwise, we both enjoyed it.

Recipe on package of Quinoa I have. I think I'm going to try it, but will leave out mint as DH really doesn't like it. I wonder if Italian dressing would taste OK. I'm not to fond of olive oil.

Greek Quinoa Salad
Servings 4

Ingredients:
1 cup quinoa, cooked
1/2 cup diced cucumber
1/2 cup diced tomatoes
2 tsp basil
1 tbs fresh mint, minced
1 tbs lemon juice
2 tbs olive oil
Salt & pepper
1/2 cup feta cheese
