At ours today:
Pillsbury crescent rolls with Nutella inside. I used the 4 pack of rolls, or else I would have done some with cheese inside to have some savory ones.
DH will put jam inside. I wonder what that would be like with a little cream cheese--probably better than jam alone. Jam gets very messy very quickly. A little dab'll do ya.

Today: breakfast burrito Italian style (we only had 6-cheese Italian shredded cheese in hand). I did a two-egg burrito, since I had the 8" flour tortillas on hand (with the smaller ones I do one egg).
It's wrapped and ready yk grab on the way out the door, which is how breakfast happens on school mornings and why I am looking for more ideas).

I use the "light" whole grain eng.muffins, we put on cholula hot sauce, cheese and mine get spinach or avocoado. DS gets a banana or apple on the side with a glass of milk
We also do a lot tortilla/egg burritos (Cholula, potatoes, salsa, sausage, bacon, cheese...whatever we have...), with fruit on the side.
DS#1 eats an egg sandwich/burrito, bowl (i.e. trough ~)) of cereal and a fruit - he's 15 and on the track team - bottomless pit!
Sometimes ds#2 wants 2 fried eggs, toast and fruit.
This morning I had an egg, and 1/2 avocado on a piece of toast.
3+ times/week I try to do a green smoothie (16oz)and I eat a handful of almonds or cashews later in the morning - the boys will drink an 8 oz serving if I make them
leftover crepes/pancakes/waffles - when I make these on weekends I make extra for school mornings :)
I have a POT of tea b/4 I get to work :hiding:
Typical here is cereal. My kids don't eat eggs, dd will eat bacon with her cereal if I make it. Sometimes I make crepes or french toast.
For me, I often have 1-2 scrambled eggs or egg beaters, I ma or may not add a little cheese, or do an omelette with onions and spinach or Kale. Other days, I may do 3 turkey breakfast sausage links and something else, maybe one egg, or egg beaters, or some piece of toast or a light English muffin. Always decaf coffee with half and half. If I am avoiding gluten, which i float in and out of, I may add quinoa to my scramble for some carbs.
I should get back into smoothies. I like one with Greek yogurt, spinach, blueberries, ground flax and a packet of truvia. I add some ice and water to it as needed.
I'm a boring creature of habit. I eat the sme thing pretty much every day. One boiled egg and a bowl of oatmeal with flaxseed. Decaf tea with milk.
What I'd prefer is another story altogether. ;D
Add a couple of drops of sesame oil and some sauteed veg to the oatmeal and that's my breakfast. One day maybe we can get eggs back in the house. Fried tofu is good in it, too. And just a touch of bacon crumble. And some slivered green onion. Maybe some home made pickled cabbage.
Today was quick and easy: blueberry bagel with cream cheese.
I don't really eat breakfast. I do like having a hard boiled egg. I often eat a piece of cheese, but I tend not to think of breakfast for myself until aftr getting back from taking ds to school. I do have coffee with 1%.
His breakfast I have at the table with his coffee in a recyclable to go cup (lately--because he loses travel mugs) and his meds. He grabs/takes on his way out the door. It will be a rude awake img for him when I go back to work, lol. Last week after I bought a can of whipped cream for the Easter picnic, I used some of that in his coffee. Otherwise, he gets the 1%, too.
However, I didn't go to the store yesterday before DS needed my car, so I used the last of our milk in our coffee this morning. I just drank my last sip. If I want another cup, I have to go to the store. I may do a quick CVS trip for that, because I'm not ready for the grocery store. And I get a .25 rebate on milk there with iBotta. :thumbsup:
I was up early today to go to a doctor's appointment, so I did croque madame for DH and DSD. I had never made it before we had tons of Easter leftovers, and it is now one of DH's favorite meals, breakfast, lunch, or dinner.
I used to love to east a croque monsieur when we lived in Switzerland (first had them in France). I was excited to see them in the US later but very disappointed. la Madekeine has most closely approximated them.
I like the girly version, too. :)

Last Friday I made DS an egg and cheese McBagle. M
One day he got a plain bagel.
Another day it was a spinach and feta (and egg) breakfast taco.
Today: two hard boiled eggs and a piece of Texas sheet cake leftover from DH's birthday.
That's a lot of egg lately. I need to branch out.

I bet you could find a baked French Toast recipe to make in muffin cups, in the paper liners. grab and go. I slice it into sticks and ds dips it in maple syrup. But that is a bit messy. or, do a plain French toast, no cinnamon or vanilla, and put a slice of cheese and tomato in it for a sandwich.

My breakfast today. Scrambled Egg beaters with Mexican cheese blend, topped with Newman's black bean salsa. I discovered that salsa this week and have pretty much had a whole jar by myself! It is yummy and only 20 calories for 2T.
Oooooh Becca, that is right up my alley. I do love a good hearty breakfast, as you well know, LOL.
It looks so huge in the photo, but it is a sandwich plate. I like a high protein breakfast. Holds my hunger off well for the morning.
I always do some sort of baked oatmeal...since it's just me I'll do up a 8x8 pan and then cut up into 6 pieces and freeze. I'll have 3-5 different varieties in the freezer at any given time. Or I'll do them in muffin tins. Blueberry/maple, strawberry, chocolate chip (just a few minis!), banana coconut, pumpkin, apple.
Easy breezy - take out the night before and put in a container and grab on the way out the door for work. Nuke at work. Sometimes I'll add a little milk, but usually it's "as is" and very moist, high fiber, low fat, yumminess.
A few Banquet turkey breakfast sausages and a leftover slice of cheese pizza we had in the freezer. And, had it late, so more if my brunch.
Huevos pockets (two crescent roll triangles mushed together filled with huevos rancheros).
Sigh...last day of state testing, so, I had to feed ds once again. Blueberry pancakes.
Dd had plain pancakes.
I am embarrassed to say what I had. Okay, okay. I had a hot dog on a soft, white bread bun. I had a craving, lol.
I have already roasted a head of cauliflower, which I plan to make into some sort of casserole to eat later.

Ds will not even try eggs straight up. French toast is the closest I get with him, and did can eat it too. Both were back to breakfast cereal this am.
I did better for me today. 3 turkey breakfast links and 1/2 banana. I would have had the whole banana, but it was big and my tummy is a bit blah today. Not so hungry. Think I overdid the cauliflower casserole yesterday!
We do a lot of straight up eggs. So my posts in this thread are not very useful for people dealing with egg allergy.

Does that cook on a fry pan, McC? It is sitting on one, is why I ask, or does it go in the microwave? I just fry an egg with a spritz of pam or oil. I break the yolk, or I use egg beaters.
It's in a little skillet (this one has a metal bar for the handle). It just makes a nice form for the muffins. And bagels. I make MacBagels sometimes. If I wanted to make a pancake sandwich and have uniform pancakes, I bet this could work. Santa put it in DH's stocking, but like other kitchen gadgets (DH does not like gadgets), it is really for me. :)
Today--needed something super fast. I did a Nutella/banana roll up (with tortilla).
It is exhausting reading this thread. I am clearly not a morning person. I will clean and cut up fruit and that goes with cereal and juice. I can't imagine planning breakfast. For me it's 2 Fibercon and a lactose free yogurt.

My kids make their own breakfast. DD eats bagels with cream cheese, fruit and OJ or she will eat Nature's Path blueberry waffles (no syrup) with fruit and OJ. DS is currently eating vanilla greek yogurt, fruit and OJ. He used to mix in Enjoy Life flax balls, but he doesn't seem to want those.
Well, I don't plan breakfast. Hardly ever.
But it's a huge luxury for me to not be getting ready to leave for work (has been when I worked FT remotely from home and now while I'm looking for a job), and it's so cool to be able to do this. I went for a couple of years when I did not even see DS until the evening because I had to leave the house before he got up--by 6:10 am for my hour long commute--didn't get home until 6:30 or 7:00 pm every night.
Soon I will no doubt have to leave before DS goes to school for a commute to an office, and I'll be spending my time after getting up on me--getting ready and out the door.
Being home in the mornings now--wow--it's an amazing thing and something I do not take for granted. It's really wonderful to be able to make breakfast for DS. And he's not going to sit ate the table and eat cereal. It's just not going to happen. I can totally relate--he got that from me. Nothing bothers me more in the morning than to stop the momentum of getting out the door with sitting down to eat breakfast. I hated that as a kid and I hate it as an adult.
So I make him breakfast on the go. He eats it in the car as I take him. It's a fun thing for me most mornings, but I don't think it will last very long. Then he'll need to do his own breakfasts in the mornings, but I will freeze some breakfast sandwiches, burritos and tacos for him to nuke. Otherwise I know he'll just grab a nutrigrain bar.

That did not end well.
So it was like a banana-y, lumpy crepe. But I am not the crepe maker in our house. I had to put the umburned ones in an English muffin for holding.

The only thing is that I worry about ds arriving at school with egg protein on his hands. If he has anything with egg or nuts I try to remember a wipe so that he can get those proteins off.

I generally just eat dinner leftovers for breakfast, but do make a lot of egg mcmuffin sandwiches for DH and DSD. I wrap them in foil and stick them in the fridge, then they throw them in the oven at 350 when they get up and they are ready to go in 20 minutes to a half hour.
I cook my eggs for them in a muffin top/whoopie pie pan - just spray with non stick, crack the eggs in, season, and bake in the oven until done. I usually puncture the yolk with a knife so that they will spread just a bit so that the resulting egg patty is more flat.
I mix them up and make non-traditional ones depending upon what is on hand. Last week we had seared steak, caramelized onions and provolone cheese on the egg mcmuffins. This week is leftover corned beef and swiss. Next week is either going to be pizza, with pepperoni, sauce, and mozzarella, or chicken and spinach with pesto and parm/mozzarella.

This is not a real recipe, but we really like the pumpkin muffins that are made with spice cake mix and canned pumpkin.
That is all that is in it. Mix a box of safe spice cake mix with a can of pumpkin puree. I use the stand mixer - it is very thick and sticky. I cook as mini muffins - 15 minutes at 350. Spray the pan with non-stick well.

Pancake Muffins
2 cups any Pancake Mix (I use Bisquick Heart Healthy)
2/3 cup of milk or any milk substitute (I've used coconut and almond milk)
2 eggs
½ cup maple syrup
mix ins
• Preheat oven 350 degrees
• Mix ingredients & fill cupcake liners 2/3 full
• Top with about 1 tbs mix ins & pat lightly
• Bake 14 – 15 min, until toothpick comes out clean
I no longer do this topping method.
I divide the batter in bowls and actually mix the ingredients in. Fruits and nut ingredients, I will toss with flour so they don't sink to the bottom. Apples I coated in cinnamon sugar instead.
Mix in ideas

Giving these a go right now! I topped with some Gerbs granola on 4, light brown sugr on 4, and bacon crumbles with light brown sugar on 4. The granola and brown sugar ones also got a sprinkle of cinnamon. Well see if the kids like them. Ds will not like the granola, not sure if either will like bacon on a muffin, but we shall see...Huxley will love those. :rofl:
I think it is unfair to talk about bacon unless you have enough to share with everyone.... especially since I woke up today thinking about bacon.
I'm going to write down that recipe right now....

I got exactly a dozen. Dd said they were good, but neither kid was into the bacon. I'll have to help with those. ;)
So, new favorite breakfast sandwich at our house, at least among those that can eat eggs. I think that this would be hard to do without dairy, but you might be able to if you had a good substitute cheese that would melt well and help hold things together. Could be made vegetarian as long as you are ok with dairy and eggs.
Ingredients:
Safe bagel (I use everything bagels)
Butter/butter spread (I use Earth Balance soy free just because it is easier to spread out of the fridge)
Two eggs
Slice of cheese of your choice (I use pepper jack, colby jack or cheddar)
Breakfast meat of your choice, cooked through (I have used deli ham and bacon. Canadian bacon or a sausage patty should work as well.)
Toast the bagel and spread with butter.
Spray a large pan with non-stick spray and heat for 30-45 seconds over medium heat. Crack two eggs into the pan, keeping them as separate as possible. Salt and pepper the eggs. Add a bit of water to the pan for steam and cover until the whites are cooked. Uncover. Poke a small hole in the side of the yolk just to let it flatten a bit - I keep most of the yolk liquid. Place the breakfast meat (if desired) on top of one of the eggs, and then top with sliced cheese. Add a little bit more water to the pan for steam and cover just until the cheese is melted. Flip the plain egg over on top of the egg with the meat and cheese, yolks towards the inside. Place the eggs on the bottom half of the bagel and top with the other half.
My family (DH, DSD, my Mom and brother) prefer this cooked with the yolk still mostly liquid. If DH is eating in the car or while working from home I will cook the eggs more for less potential mess, and you could definitely cook to your personal preference. Everyone I have made it for likes it well enough that I can serve it for an easy quick dinner as well.
This is a pretty heavy, bulky sandwich. DSD is a lighter eater, and prefers it with a less dense brand of bagel so she can finish it.
We do that without the meat. We call it a McBagel. :)

DS is really, really into little breakfast and lunch boxes right now. This is beneficial because I can make them the night before and be lazy in the morning. A lot of times I will use a muffin tin, but he took the last muffin tin meal in the car when he had to leave with DH and I haven't found it yet.
