Quinoa Confetti Salad

1 cup quinoa
1/2 teaspoon cumin
1/2 tsp chili powder
2 cups water
1 1/2 cups corn - fresh, frozen, or cannned
1 1/2 cups cherry tomatoes - halved
1- 15 oz. can black beans, drained, rinsed
1/4 cup chopped cilantro
2 jalapenos, seeded and chopped
juice of 1 lime (at least 2 T)
1/2 tsp salt

In a fine strainer, rinse the quinoa and drain well. Toast the quinoa in
a dry skillet over medium heat, stirring often until the quinoa releases
a nutty fragrance and begins to pop and crackle, about 5 minutes. Remove
from heat.

Bring water to a boil. Add the grain, cumin and chili powder. Lower the
heat, cover and simmer for 10 minutes, or until water is mostly
absorbed. Add corn and simmer for another 5 minutes. Remove from heat
and let stand until cooled.

Om a large bowl, combine the grain and remaining ingredients. Taste for
seasoning. Serve warm or cold.

Oh, we make stuffed peppers with Quinoa, too!


Cook 1 c quinoa in 2 c chicken (or veggie) low-sodium stock with ~1 tsp cider or Balsamic vinegar-- season as desired with herbs, etc. Just like rice-- only quinoa cooks in only 15 min or so. For this, I like to keep it just a BIT underdone.

Brown ~ 1/4 lb ground meat (pork and poultry seem to work especially well for this) and 1/c c mixed MINCED veggies... zucchini, mushrooms, carrots, etc etc-- food processor is great for this-- and blend with quinoa. Can add finely chopped kalamata olives for taste punch, if desired.

Stuff sweet bell peppers with mixture and top either with cheese (Feta and/or low-fat Mozarella) or with bread/cracker crumbs.

Bake in an uncovered baking dish in a 370F oven until peppers are cooked through.



I also add quinoa to risotto to amp up the protein content (just add it during the second half of the cooking time).


Quinoa-Cranberry Pilaf:

1 c quinoa, 2 c stock, 1 tsp orange peel/zest, 1 tsp orange juice concentrate, 1 tbs craisins, ginger to taste (if desired) and ~1/4 c assorted finely minced veggies, 1 tsp olive oil. Cover and simmer until cooked through, about fifteen minutes. Fluff with a fork before serving. (This is very pretty and goes well with pork and especially with poultry.)



Mushroom- Quinoa Risotto:

1/2 c brown rice, 2 tsp olive oil
~3 c stock
1/2 c quinoa
1 c fresh mushrooms (criminis) minced
season with garlic, salt, thyme (if desired)

-- saute dry rice in med-hot olive oil, then begin adding stock in small amounts as it is absorbed, stirring continuously (this is the basic "risotto" technique.. it relies on the rice cooking in liquid that is continuously boiling and STIRRED to encourage the release of starch)... continue for ~20 minutes.

add quinoa, stir, and continue cooking (adding liquid as necessary) for another ~10-15 min, or until rice is just 'chewy' (not completely 'mushy' like steamed rice, though)... stir in mushrooms and season to taste.


This is actually high enough in protein to serve as a vegetarian entree-- and it is creamy and very satisfying in terms of 'mouth feel.' Very reminiscent of mac and cheese in some ways.

Whatever recipe you have for stuffed peppers --- USE QUINOA! I just did a stuffed poblano w/ red enchilada sauce, quinoa, diced roast chicken, corn, black beans, sauteed onion, cilantro, and some oaxaca cheese.

Sounds delish Adrienne.  I wish DH and DS liked quinoa.  I love how light, yet satisfying it is.  They hate the texture.

My quick hot lunch is frequently a couple cups of quinoa (cooked with sautéed onions and garlic), butter (well, soy-free margarine now), curry powder, and peas and/or arugula and/or spinach.

A guy at church makes this. It's fabulous.
Quinoa Salad with Mangoes and Curry Dressing
from Vegetarian Cooking for Everyone by Deborah Madison

1 1/3 cups quinoa
2 large mangoes
1 jalapeno, seeded and diced (I have made it with and without depending on whether you like the heat)
3 scallions
1/3 cups almonds toasted
Curry Vinaigrette
Bring 3 cups water to a boil, add 1/2 teaspoon salt and the quinoa. Lower the heat, cover and simmer until quinoa is tender, 12-15 minutes. Drain and cool.
Remove skin and dice the mangoes.
Toss the quinoa with the mangoes, chile, scallions and dressing. Chop the almonds and add them just before serving so they'll stay crisp.

Curry Vinaigrette
1 clove garlic
2 tablespoons yogurt, mayo or sour cream
2 teaspoons curry powder
1 1/2 tablespoons lemon juice
5 tablespoons olive or other light oil
2 tablespoons chopped cilantro
Mince garlic and whisk with other ingredients. Adjust for tartness and salt if needed.

Our family had it and raved. And raved. And raved. It's soooo good. 

Quinoa and Sweet Potato Chili

Ingredients:

One 29 oz. can of black beans, rinsed and drained
One 6 oz. can tomato paste
32 oz. vegetable stock
1 onion, chopped
5 cloves garlic, minced
1 tbsp chili powder
1 tbsp cumin
1 tsp oregano
1 tbsp olive oil
1 sweet potato, peeled and cut into bite-sized chunks
1 cup dry quinoa
Salt and pepper to taste
Avocado and cilantro for garnish (optional)
Instructions:

Heat oil in a large soup pot over medium low heat.
Add onions and cook until they are soft and brown (approximately 10 minutes).
Add garlic and cook for 2 minutes.
Add tomato paste, chili powder, cumin and oregano. Cook for 2 minutes while stirring constantly.
Add beans, stock and potatoes and season with salt and pepper.
Cook for 5 minutes then add quinoa.
Cook for 15 to 30 more minutes, stirring frequently, until quinoa and potatoes are cooked and the chili has thickened. Tip: add water if chili is too thick for you.
Top with avocado and cilantro and serve!

Have I ever linked the blog, Cooking with quinoa?  She is trying to sell e-cookbooks, but has a broad selection of free recipes for quinoa salads, and many other things.  Alot is vegan and/or gluten free, I believe.  But that part does not matter to me, so not 100% on that.  I have made a couple of her recipes, and they are very good.

Saw this today as I was looking for some guidance on making that fab sweet potato and black bean dish in a slow cooker (and oh wow--it's smelling soooooo good).

Obviously, many here will need to omit the almonds. And some will need to omit the feta.

Crockpot Quinoa Casserole

--1 1/2 cups quinoa
--3 cups broth (chicken or vegetable; I used chicken)
--1 T olive oil
--1/2 t salt
--1/2 t cinnamon
--1/4 sliced or chopped almonds
--1/3 cup dried unsweetened cranberries

--handful of baby spinach
--1 cup baby tomatoes, halved or quartered depending on size
--1/2 block feta cheese, crumbled

The Directions.

You are supposed to rinse quinoa. I didn't know this until I made the disastrous overnight brown rice and quinoa pudding, and read all of the comments. I still don't rinse the quinoa that comes in the orange box from Trader Joe's. If you have a different brand, or are using quinoa from bulk, rinse it in a fine mesh strainer until the water runs clear.

Dump it into the crockpot. I used my 6qt Smart Pot for this dish.
Add 1 tablespoon of olive oil and mix it around. Add chicken or vegetable broth, the salt, and cinnamon. Stir in almonds and cranberries.

Cover and cook on low for 4-6 hours, or on high for 2-4. The quinoa is done when you can fluff it with a fork and it is tender. The liquid should be pretty well absorbed, similar to how you know rice is done.

Fluff the quinoa with a fork, and add the baby tomatoes and feta cheese. Stir gingerly to mix. Add a large handful of baby spinach to the top of the crockpot, and close the lid. Cook on high for about 20 minutes, or until the spinach has wilted. Stir again to distribute the spinach.

Serve.

This is a wonderful meal--especially if you are looking or a substitute for calorie/fat-heavy broccoli cheese soup. It provides that same satisfaction. And it's easy and fast!


Read the reviews. You will likely want to add more liquid. I accidentally used regular evaporated milk.



Easy Broccoli Quinoa Soup


6 Servings, Prep Time: 10 Minutes, Cook Time: 20 Minutes

Description
This kid-friendly soup is a tad sweet and, perhaps best of all, easy for little hands to spoon up without making a big mess.

Ingredients
1 tablespoon extra-virgin olive oil
1/2 onion, diced
2 cloves garlic, minced
2 cups broccoli florets
2 cups water
1 cup quinoa
2 cubes chicken bouillon (we used No-Chikn boullion)
1 (12 fluid ounce) can fat-free evaporated milk
1 tablespoon all-purpose flour
salt and ground black pepper to taste

Directions
Heat olive oil in a skillet over medium heat. Cook and stir onion and garlic in hot oil until tender, about 5 minutes. Add broccoli, water, quinoa, and chicken bouillon cubes to the onion mixture; bring to a boil stirring to dissolve the bouillon cubes. Place a cover on the skillet, reduce heat to low, and simmer until quinoa is fluffy, 10 to 15 minutes.
Stir evaporated milk and flour into the quinoa. Increase heat and bring the mixture to a boil; cook and stir until the mixture thickens, about 5 minutes. Season with salt and pepper to serve.

This popped up on my FB feed.  it was shared by the Cooking with Quinoa blogger, but it is someone else's blog.  They look yummy.  I need to count the carbs, however for myself.  But they look good.  Cheesey Quinoa bites.  They do have egg, and a bit of flour, but the flours can be subbed with gf flours.  People have commented wrt that.

Ingredients

For the salad:
1 cup quinoa
2 cups water or vegetable broth
2 apples, diced (you can use your favorite variety)
1/2 cup toasted pecans, roughly chopped
1/2 cup dried cranberries
2 cups fresh baby spinach, roughly chopped
6 oz crumbled goat cheese
For the dressing:
1/4 cup olive oil
2 tbsp apple cider vinegar
1-2 tbsp maple syrup
1 tsp dijon mustard
1/4 tsp ground cinnamon
salt, to taste
Instructions

Bring water or vegetable broth to a boil in a small pot. Add quinoa, lower to a simmer and cover. Cook for 15-20 minutes, checking periodically, until all water/broth is absorbed and quinoa has cooked.
While quinoa is cooking, prepare the other ingredients.
Chop the apples, pecans, and spinach.
Make the dressing by combining all ingredients in a mason jar with a lid and shaking to combine or in a bowl and whisking to mix.
Once quinoa is finished cooking, combine quinoa with apples, pecans, cranberries, and spinach.
Toss with dressing.
Top with goat cheese and serve.
Enjoy!

Another one from my favorite quinoa blog:  Might be too carby for me, unless I had it as a side to a proetien dish, but then it is a lot of work for a side dish.  Maybe for a party as an app?  They look yummy to me!  Have not tried them.  Was thinking McC and her family, or Mookie would like them, as they are meatless and look pretty hearty.

becca, for the first eleven to twelve years DH and I were together, I was vegetarian.  We were living or cooking together for most of those years and always made vegetarian main dishes.  When he needed more protein, he had meat on the side.  A burger or chicken breast is easy to make ahead.  Or meatballs.  Or broiled fish.  Whatever he wanted--but it wasn't the main dish.

So make the quinoa patties!  They look great.  They fit *our* complex carb requirements very well (we don't do refined grains or simple starches), but we'd probably have steamed or baked chicken or even chicken poached with coconut milk on the side.  Something super simple. 

Or bacon.  Bacon's always a winner.

Let the protein be your side.

I don't think she can for medical reasons. The ADA (diabetes association) Q&A addresses quinoa as a slightly more glycemic friendly carb but still to treat it ultimately as a carb. For that reason I have to limit my father's steam quinoa intake even organic whole steamed quinoa. I know sweet potato is a little friendlier but I bet the carb count would be dicey without a well calculated portion control.

Maybe if she swapped out some of the quinoa and sweet potato for a legume. That would also perform some binding effect and add more fiber to lower net carbs.

Krasota and TT, I strive for under 50 carbs a day these days, for the management of type 2 diabetes.  I cannot have carbs be a main course, unless they are a big plate of salad greens and I often do that, topped with protein, and feta, etc...  I use fat to bulk up calroies in a meal.  I cannot bulk it up even with complex carbs.   

So, think:  1/2 cup brown rice tops, as a splurge, 1/2 baked sweet potato at dinner, A sweetened Greek yogurt is 20 carbs.  Those things have me at 50% of my daily carb intake. 

My preference is to choose foods that give me bulk and quantity, since I get hungry!  Broccoli, cabbage, Kale, spring greens, raw veggies, and a bit of starchy veggies like spaghetti squash, other squashes, veggies soups with some sasuage and a few beans, etc...  I use a lot of higher protein, lower carb dairly like cheese and greek yogurt. 

I do cheat, but to maintain my A1C in thr 5's, I have to eat like this most of the time.  I can do that with a diet of up to 100 carbs a day, as long as I spread them out at each meal and for my snacks.  But for weight loss I need to go down to 50.

Aye.  Two of these would be DH's carb serving, but he has 45g per meal. He'd make me skip the chutney, though, because it's all sugar (and mango is off limits here).   And he'd make an exception for the corn meal, which he generally won't eat because it's too simple.  Then he'd have some meat and all the non-carby veggies he wanted. 

He's hypoglycemic, not diabetic.  So he has a balance of 40-30-30 carbs-fat-protein and must consume close to 2000 calories a day to stay stable and functioning.  Higher metabolism and a twitchy pancreas that we want to coddle so that it doesn't give out.

I couldn't eat more than two of them--even as a main course.  Too dense.  Perhaps we have different ideas of portion size for a main course.  I'd probably just eat one if there were other foods served.

Back to topic: 
He's eating quinoa for lunch today.  With apple, fennel, roast chicken, onion, and sweet pepper.  :)

Oh that sounds good together.  How do you dress that krasota? 

I do use quinoa, largely in salads, which is why I share some of the recipes I get from that blog.  I basically dice a large quantity of veggies, and mix it with either a balsamic or lemony dressing.  Toss in some feta or add a protein, or have a salmon burger or such on the side.

Oh fennel--yum. We use that instead of celery, as DS is allergic to it (has had contact reactions for years--thought it was OAS, then one Easter got hives from obvious cross contamination on our veggie tray--then had an immunocap done--really allergic but fine with it cooked). Anyway I don't like celery and find fennel a great sub.

I have no idea how he seasons it.  His lunch these days is quinoa/millet/lentils/beans (choose one or more), which is already cooked.  To his plate, he adds bits of the veggies.  He carves some slices off a fennel bulb, adds quarter to half an apple in bits, slices up some sweet pepper(s), and adds a little bit of chopped onion (he likes red ones).  I don't know if he adds water or seasons it beyond good olive oil and smoked salt.  Then he nukes it, probably with a plate cover.  He works from home, so he just pulls it together in between writing snippets of code.

His histamine sensitivity has reared its ugly head bigtime these last several months, so he is trying to eat pretty low histamine and mind the glycemic index.  His diet is currently more limited than mine, which is saying something.

The chicken was roasted with salt, pepper (I think), and garlic.  Just pieces in a pan.  High temp to set skin, then low temp.  This reminds me--he threw away the drippings before I could eat them all.   :tongue:

If it were MY plate, I'd shake up tarragon and white balsamic and prepared mustard and drizzle it over the top.  But he can't do the vinegar or mustard right now.

LOL, he cooks like me.  Just throw it together.  Hard when someone asks for a recipe. 

I have *never*, that I recall, purchased or used fennel!  I have had it raw in a salad, and roasted in veggies eslewhere and thought, "I should try that!"  Maybe I will get some this week.  The flavor sounds appealing with apples.  I had imagined he was having a raw salad with those ingredients(aside from the chicken).

Cooking a pack of chicken tenders today/tonight.

I made the curried sweet potato quinoa patties tonight, along with a salad of tomatoes, greens, spinach and avocado, and some crusty bread.  Was a hit!  The yogurt sauce was good.  The patties reminded me of felafel.  I subbed mango salsa for the chutney, figured it was close enough.

I really will hav eto make those in a tiny size as a party app sometime.  They seem well suited to that with the sauce. 

I have had a quinoa/egg/kale breakfast scramble the last 2 days.  Yesterday had a bit of turkey sausage, and today, bacon.  a bit of sweet red pepper, onion and cheese too.  Friend gave me the idea.  it was yummy.  No recipe, just threw it together.

I generally don't like fish.  I sometimes make fish tacos and have quinoa & beans as a complementary filling/side dish.

I imagine one could do a foil covered dish in the oven with fish, quinoa, water, and seasoning. (I'm thinking of a friend who would pair catfish fillets with yellow rice packets in the oven.)  Quinoa cooks in 15 minutes, but doesn't get mushy unless you really overcook it for a loooong time.  So it holds up well.

TT, I like to think of Quinoa as my rice.  I use it in moderation as the rice to other dishes.  Mind you, even if I have brown rice with a meal, I have only 1/2 cup. amd more of the stir fry (or Thai take out). 

So, use it as you might rice, with your usual cuisine. 

Otherwise, I like it in salads.  I dice any veggies, and make a dressing, and use 1/2 to 1 cup cooked quinoa in the salad.  That may give me 6 servings.  a couple of sides for dinner, and a whole meal for lunch for 2 days. 

I tend not to do recipes. 

So, with a piece of fish, I might have salmon, a veg, and a quinoa salad that goes with it, meaning the quinoa is mixed with loads of veggies and a dressing. 

But I am pretty low carb vs most folks.

This looks yummy.  Have not made it.  Typically, with these, I increase the veggies and decrease the quinoa to lower the carbs.  So, I might use baby spinach or baby Kale, chopped, in a larger quantity than the 2 leves of Kale.

This looks yummy.  Have not made it.  Typically, with these, I increase the veggies and decrease the quinoa to lower the carbs.  So, I might use baby spinach or baby Kale, chopped, in a larger quantity than the 2 leves of Kale.

Oh, I did not notice that.  I would just improvise with dried cranberries.  Dried cherries plump up very nicely in a salad as well.  I made a cous cous salad once with dried cherries.  It had a balsamic dressing and they got soft and juicy in it as it sat.  it was very good.

what was your recipe?

This one was easy and I think it'll be a base for many things. After making it, I don't think I needed to add broth 1/2 cup at a time and sit and stir. I was using a 4" deep non-stick large skillet --- next time - I'll add 2 cups of broth and let it simmer and not keep a constant stir. Then do the last 1/2 cups separately to keep control of how liquidy it gets.

I also used the new Swanson ZERO SALT chicken stock. It's a pretty good flavor/base.

Looks yummy. If you do those in poblanos they won't be too hot for most, would be larger (so one for a meal), and would be called rellenos (rather than poppers).

It seems to me sweet potato would be good with that combination--either inside or as a side.

That looks really good like a quinoa falafel. The sauce is an easy enough fix I can leave the dairy out. I'd have to figure out a different binder than egg more for making it vegan than for allergies.

This. Is. Phenom. Menal. 

I added in toasted sweet corn and mixed some hot tomatillo/green chile salsa into the quinoa. Ate it by scooping up in those multigrain Tostidos scoops. SO FILLING!  I only used 1 can of black beans though as I didn't have enough, but they weren't missed. 

This is really like a quinoa dip...

I'm also logging this to stuff red peppers with in the summer.

Freezes well --- I make a big 9x13 pan and then after it's cooled in the fridge will make single servings scooped into freezer bags or containers to bring to work (thaws quickly, nuke it, stir, bring extra cheese and sour cream!)

Yeah - for me the black beans are about the flavor...what I did last night --- sauteed the onion and jalepeno for about 15 minutes (got it a bit toasty at the end), then added in a tsp of roasted garlic (from a jar), added a can of black beans, some salt, and then some vegetable broth (but not a lot). It was liquidy, but not 'swimming'...more like 'wading'. Covered that and let it simmer for about an hour. Then I brought it up to a boil with the lid off to get some liquid out...then smashed a bit (some whole beans still left). I ended up mixing that with the quinoa and salsa. Kind of a dip I guess?

FLAVOR IS SO GOOD!

Yum!  I would put a blob onto a bed of salad greens with some guac and/or sour cream! 

I have a salad in the fridge right now, made it yesterday:  Similar ingredients, but cold.  black beans, sweet corn, diced tomatoes, and quinoa.  Has lime, EVOO, garlic, salt, and green onions for flavor.  I forgot to buy cilantro.  I added a bit of roasted cumin, and red pepper.  Am also out of chili powder.  It was still good.  I did not use a recipe.  But about 1/2 bag of corn, 1 can of beans, 3 green onions, 1 container of grape tomatoes, diced, about a cup or so of cooked quinoa(I had been eating it for a few days in various things, and that was what I had left).

Okay this was really good nameless. DS and DH loved it. However I made these changes:

•used poblano (and I only had two)
•did use my canned refried  lime black beans because i had run out of canned black beans, which never happens
•used canned jalapeños becaue I didn't have any fresh ones ir serranos (again--never the case)
•used NoChicken stock (also in quinoa).

I think the step of putting the cooked quinoa in the dry pan was unnecessary. 

I wish I had waited a week to make this, because it's simiLar in many ways to my Mexican lasagne, which I made last week and have been meaning to post pictures of. In fact, when he walked in the house last night, DS said, "Is this Mexican lasagne?" It's a lot like it but with quinoa instead of corn tortillas, without salsa inside and with fewer veggies.


I'll add that when DH put some Pace lime garlic salsa verde and sour cream on top it was also so YUM.   


We do a lot of variations on these ingredients. Like a lot. These ingredients in tostadas. In enchiladas.  In quesadillas. In tacos. With chips. The quinoa was a nice addition. And as DH notes, it's very filling!  It's really good.

We will make it again, and I may take it to a church potluck. This is much easier to serve than Mexican lasagne.

totally filling, much more so than you'd think! I too added salsa and sour cream dabbled on top after I put some of the quinoa on a chip.

...I never toasted the quinoa...mine always comes out a bit liquidy so this wasn't dry at all to me. I just added the spices to the quinoa (and also some nice green chile tomatillo salsa).

This is a keeper for me...FABULOUS lunch.

Has anyone tried sort of a sushi or onigiri type of deal with quinoa?  I'm thinking swap out 50% of the rice so some stickiness remains. A homemade kim chi and spam quinoa musubi sounds good for the road trips.

YUM!  That looks like my kind of salad!  You can "massage" kale raw, with some lemon and/or olive oil.  It will soften and break down a bit. A sprinkle of salt helps too.  Saves a dirty pan.  Just do it first in the big bow you use for the salad.

Okay--making this right now and I can't believe I didn't see this when reading the recipe, but this is basically a dish I make at least every 2-3 weeks. When he was little, I told him it was my specialty, to that's the name of this dish:  Specialty. I've never made it with quinoa though.

We have it over rice, in a tortilla (sometimes with rice) with cheese and other burrito fixings, on a toastada--even by itself sometimes.  I use black beans or refried beans or refried black beans.  I also use Rotel.

I do an Italian version sometimes with black beans or cannellini, Hunts diced tomatoes with Italian seasoning, and feta.

Anyway, this is smelling great. But DS thinks he's getting a new dish, lol. And he isn't. I think I will use both avocados I bought to help differentiate it. :).

Made this for a BBQ this weekend.  Way too salty so cut the sea salt down to 1 tsp and then you can add salt if needed.  I ended up adding more lime juice, cilantro, a whole cucumber and another cup of cooked quinoa to make up for the saltiness.

YUM!  I changed a few things, just a bit.  Added a splash of red wine vinegar to the lemon juice and dijon, and a couple T of EVOO.  And a clove of crushed garlic.  Cut back on the red onion.  I chopped 1/2 a red onion, and it was a LOT of onion for a salad, so I only used that, and actually tossed a little of it away.  Otherwise I stayed pretty true.  I use 3 color quinoa from Trader Joes.  I am leaving the feta on the side, because someone else is bringing a orzo pesto salad, with feta.  Did not want to overdo the feta theme.  But I got a crumbled garlic and herb feta and folks can add it on top if they choose.  I may have some for dinner, and use that for myself.  ;)

We use Lundberg quinoa.  It was made in a top-8-free facility last I called, but it's been over a year.  I don't know if wheat cross contact in the fields is an issue like it is for oats -- that I would be curious to know.

I make something like this, with, or without a grain, and love it.  I don’t follow a recipe, but dice cucumbers, tomatoes, red onion, maybe sweet red peppers, and do a lemon/red vino/EVOO dressing.  From there, I might add chick peas, or use it to top salad greens.

I made this tonight and everyone liked it. Dd (who loves mango) said she didn't really think it needed the mango, or that it didn't go, but I loved every bite I got with mango. I think it's a key ingredient. I would use less cilantro next time. Cilantro just has such a strong flavor, so I don't think it needs as much.

I'm working on finding more meatless meals. With this, since I wasn't sure how it would be, I made some chicken sausage with it. DH ate 2 sausages, I ate half of one and dd didn't eat any. I think next time I can just make the quinioa, but I may need to double it or at least 1.5 it. Most of my meatless meals are either bean-based, heartier meals for winter (chili, lentils and brown rice) or heavy pasta meals which I also prefer in winter. It's nice to have something for summer.

Didn’t work for me - I got some “error” message.  I dumped it out of the Instant Pot and am simmering it on the stove top.  The quinoa was cooked through, and the sweet potatoes still hard.  I think the tomatoes should have gone in at the end.
