This is a recipe I adapted to remove the meat and dairy in order to serve everyone an egg dish on Christmas morning that I could just put in the oven and forget.  It was good.


Easy Overnight Egg & Veg Breakfast Casserole- dairy free
½ tsp olive oil
1 bunch asparagus, chopped
1 pepper, chopped
1 C broccoli florets, chopped
2 C raw spinach, chopped
½ C green onions, chopped
8 oz sun dried tomatoes, chopped
24 eggs
2 ½ tsp dried basil
½ tsp dried oregano
½ tsp dried thyme
½ tsp dried rosemary
½ tsp salt
½ tsp black pepper

Use olive oil to grease a 9x13 pan.  Mix all veggies together in bottom of pan.  In a large bowl, whisk eggs with herbs, salt and pepper.  Pour over the veggies in the pan.  At this point, you can cover it and refrigerate overnight or cook it.  Cook at 350 for 1 hr (this may be a little too much depending on how many veggies).
