milk free baking ingredients

HI, I'm thinking ahead to holiday baking.  I have found good, dairy free alternatives for most of my baking, however a few ingredients still allude me.  I wondered if anyone had found milk free versions/substitutions for the following:

butterscotch chips
peanut butter chips
unsweetened chocolate (I'm hit or miss on this one)
sweetened condensed milk

Any other great finds?

I'm pretty sure you'd have to make them yourself. I've never seen anything commercially available at my vegan grocer.  Here are a few recipes I looked up in Go Dairy Free by Alisa Marie Fleming. I hope it helps.

Sweetened Condensed Coconut Milk

2 14 cans regular coconut milk (not light)
1/2 c. granulated sugar
1/2 t vanilla extract
pinch salt

Add the coconut milk and sugar to a med. saucepan, and place it over medium heat. Cook while continuously stirring (approx. 40-50 minutes). Remove from heat and stir in salt & vanilla.

Peanut Butter Chips

2T. coconut oil
1/4 c unsalted creamy peanut butter
1/4 tsp vanilla extract
pinch salt
6 T confectioners sugar

Grease 6 muffin cups. In small saucepan over low heat melt the coconut oil with the pb, vanilla & salt. Remove from heat and sift in confectioner's sugar. Blend or vigorously whisk until everything is well combined. Pour into muffin cups and freeze 1 hr. or until solid. Break up into pieces for baking purposes.

Unsweetened Chocolate

1/4 c cocoa powder (I use Hershey's)
tiny amount of Stevia to taste
1/4 c coconut oil
1/4 tsp vanilla extract (alcohol free if possible)
pinch salt

Grease muffins cups. Sift cocoa powder into a small bowl and set aside. Melt the oil with vanilla extract and salt. Remove from heat and mix in cocoa powder and Stevia. Pop in freezer for one hour. Break into pieces.
