I don't know if you're interested but there's a couple of kind, inventive souls out there who kept tinkering with gf potsticker wrapper recipes until they got close enough. Tapioca, rice and sweet potato flour have always been part of the base of some versions of dumplings so it lends itself well to gf adaptations.

Since friend is Celiac and not IgE she could look into something called "yuba" to make deep-fried crispy rolls instead of wheat wrappers for super thin replacement of traditional lumpia style wrappers.
