Maybe not cooked long enough?  I've done a porky butt for 90 minutes.

it shredded fine - was about 3 lbs and cut into pieces - just too fatty - well maybe it didn't cook enough?  huh.   either way - I'm over it for a while and so is DS

Is the liquid smoke essential for the chili lime chicken?  I don't have an Instant Pot but was thinking I could probably make it in my crockpot. I have all the other ingredients...thoughts?  My brother got an Instant Pot and LOVES it.  I really need to get one...

DH doesn't remember the taste being that smokey so he doesn't think you will miss it.   Watch Amazon prices, last year the price came down in July.

Mary, I did not use liquid smoke.  I do have a McCormick Southwest seasoning blend that is a little smokey, or you can get smoked paprika and it's a subtle addition.  I've never used liquid smoke.

Thanks for the replies.  I just threw some in the crock pot!

Mary, I've never used Liquid Smoke either. I substitute Smoked Paprika.

I'm thinking IP Mac and cheese is a low fiber food...but perhaps too fatty...maybe if I go easy on the butter and lighter on the cheese, and, I use 1% milk...and have a small portion as a side to some protein...

Cooked a whole chicken the other night.  Not as good as roasted in the oven, but I seriously didn't have time for that.  This cut the cooking time by half.  And, it freed up my oven for other things.

We are planning a trip to Hawaii this autumn.  Instead of paying DOUBLE for a room with a full kitchen I figure I can get a new Instant Pot with two liners delivered to the hotel for under $200, ship it back home or to a friend/relative afterwards, and save us two thousand dollars USD on vacation.  Bingo!

Now, to experiment more with IP recipes.  Chilli is on the menu this week. I may try Spanish rice too.  Or mushroom risotto!  My brain just clicked on to realize we can use the IP in so many ways.

Now, a question - brown rice.  Has anyone figured this out? I have tried cooking brown long grain rice three different ways and it never really works out.  It is always either too watery or crunchy.

Same here SC.  I've been underwhelmed with brown rice as well.
