Just made this:

YUM!  I changed a few things, just a bit.  Added a splash of red wine vinegar to the lemon juice and dijon, and a couple T of EVOO.  And a clove of crushed garlic.  Cut back on the red onion.  I chopped 1/2 a red onion, and it was a LOT of onion for a salad, so I only used that, and actually tossed a little of it away.  Otherwise I stayed pretty true.  I use 3 color quinoa from Trader Joes.  I am leaving the feta on the side, because someone else is bringing a orzo pesto salad, with feta.  Did not want to overdo the feta theme.  But I got a crumbled garlic and herb feta and folks can add it on top if they choose.  I may have some for dinner, and use that for myself.  ;)

I might add some black beans to make it more filling.

Here's the quinoa stuffing recipe we use, we just skip the pine nuts...

Oh my goodness... As soon as I go to Costco next week to get more quinoa I am making this.  It looks amazing! Minus the pine nuts here too.

I have never cooked quinoa. Decided I'm going to try.

Do I need to be concerned about cross contamination? Are there some brands considered safe/not safe?

I understand there are different colours. Should I care which I buy?

BensMom

I have a bag of Simply Balanced organic quinoa. It has a "may contain wheat" warning.

SilverLining

Metro only had their store brand, Selection. It has a sesame seed warning.

When I google Simply Balanced, it looks like it's Target? They are not here any more.

We use Lundberg quinoa.  It was made in a top-8-free facility last I called, but it's been over a year.  I don't know if wheat cross contact in the fields is an issue like it is for oats -- that I would be curious to know.

What store do you buy it in Space?
We find it at Superstore/Loblaws, in the 'health/specialty food' aisles.  Close to the Camino chocolate chips...  :happydance:
