chocolate chip cookie recipe
« on: May 01, 2012, 03:46:01 PM »
We had a chocolate chip cookie recipe that was milk, egg, and peanut free, posted on the old board.  I have searched here and at the old board.  Nothing.

Can I just add:  the search function on this board really s*cks.

Anyone know where I can find it?

I'm pretty sure I posted in that thread the recipe my DS named Chippy Chocs when he was little.  I'll search with that and see what I can find...

Hmm - didn't find my recipe, but here's your old thread

And the recipe I think you used:

Chocolate Chip Cookies

1 cup non-dairy margarine, softened
3/4 cup sugar
3/4 cup brown sugar
1 teaspoon vanilla
2 tablespoons cornstarch mixed with
2 tablespoons water instead of eggs
2 1/4 cups flour
1 teaspoon salt
1 teaspoon baking soda
2 cups chocolate chips

Preheat oven to 375*F. Cream the margarine, sugars, vanilla, & “eggs” until fluffy. Add the flour, salt & baking soda, & carefully stir till combined. Fold in the chocolate chips. Place balls of dough (about 1 1/2 tablespoons worth) 2 inches apart on a cookie sheet & bake 8-11 minutes, or until golden on the edges & still soft in the center. They’ll firm up as they cool.

And a note by you:

hk, I just finished making your recipe for CC cookies.

oh.my.goodness.

They are absolutely divine!
I just had one warm from the oven --- sooooo good!!!

These actually look and taste like regular CC cookies with egg like I used to make as a kid.

Thank you!

ETA: No cornstarch at the moment, so I used the oil/water/baking powder mixture for two eggs. Seemed to work fine. I haven't heard of using cornstarch in place of eggs. Is this an even better way of replacing eggs in cookies?

Found it!  Here's my recipe:

These are our favorite cookies - even the extended family without any FAs loves these... I make them egg, corn, soy, pn and tn free - could probably get them milk free by switching the butter for marg.

Oatmeal Chocolate Chip Cookies

1 cup butter
3/4 cup packed brown sugar
1/4 cup sugar
1 teaspoon vanilla
1 1/2 cups flour
1/2 teaspoon salt
1 teaspoon baking soda
1/4 cup boiling water
2 cups quick cooking oats
2 cups safe chocolate chips

Beat butter, sugars and vanilla
Add flour and salt; mix well
Dissolve baking soda in boiling water; add to flour mixture
Stir in oats and chocolate chips
Drop by spoonfuls onto ungreased cookie sheet
Bake at 350 for 10-12 minutes - don't overcook or they won't be chewy!

Yes!  That's it!   :happydance:  The one posted by hk.  I made a different recipe from one of my vegan cookbooks and it just wasn't the same.

Thanks so much, rebekah!!

I have the one that used maple syrup from the old board at home. It was the best egg dairy free one that I have tried. Will post it tonight. (But late)

Dairy & Egg Free Chocolate Chip Cookies

Makes about 12 large or 25 normal-sized cookies

2/3 cup olive oil
3/4 cup sugar
1/4 cup maple syrup
2 tablespoons unsweetened applesauce
1 teaspoon vanilla extract

2 1/2 cups flour
1 teaspoon baking soda
1/4 teaspoon salt

3/4 cup chocolate chips

Preheat oven to 375°F.

Stir together the oil, sugar, syrup, applesauce and vanilla in a medium-sizedbowl. Stir in chocolate chips into the wet ingrediants.

Add in flour, baking soda, and salt.  If the dough is a little dry, gradually add a small amount of soy milk, maybe a couple teaspoons, until it holds together.

Drop by large spoonfuls, 3-4 tablespoons each, onto a cookie sheet and slightlyflatten. Bake for about 10 minutes or until the edges are golden brown.

Mine always are a bit pale in colour.
